BHG White Chile Recipe

Hi Everyone,

Does anyone have the January 2008 edition of Better Homes and Garden? There is a White Chili recipe in there that I would like to try. Would some kind soul post it. I tried searching for it without any luck at BHG site. Thank you.

Thank you Heidi. I'm not sure if that's it or not because I didn't have the magazine. It sure looks good so I will give it a try.

What edition is it? Publishing date? The cover didn't change for more than 25 years. As a very general guideline, no, cookbooks aren't a reliable source for canning recipes. Especially when the recipes are for canning low acid foods. On the other hand BH&G is getting heavily into the canning market and have new books out that are current to the guidelines. This is fcture from the 1st edition Betty Crocker Picture Cook Book Mix together thoroughly 1 cup soft shortening 1 1/2 cups sugar 2 eggs Sift together and stir in 2 3/4 cups sifted Gold Medal Flour 2 tsp. cream of tartar 1 tsp. soda 1/2 tsp. salt Chill dough. Roll into balls the size of small walnuts. Roll in mixture of 2 tbsp. sugar and 2 tsp. cinnamon. Place about 2 inches apart on ungreased baking sheet. Bake until lightly browned, but still soft. (These cookies puff up at first, then flatten out with crinkled tops.) Temperature: 400 Time: baker 8 to 10 min. Amount: About 5 doz 2 inch cookies.

I haven't seen the frozen C of S soup for years either. I first came across the canned type about five years ago in a cut rate food store that I think got them from freight damaged shipments. (These were not dented or damaged in any way but perhaps part of the case was.) I bought all they had. Then about a year ago I found them in a very large supermarket in a larger town. Now they're available in medium sized town supermarkets but not yet in my small 3,000 Pop. town. I've got my stash and replenish it whenever I get low and hit a larger town. LOL Of course, without the recipe, I came up with some "interesting" variations. Thanks again for the real thing Teresa.

We had one very small one open up 15 years or so ago. I loved it. The name was Oaxaca ????. It had a fish dish to die for. A white fish fillet, grilled with a spicy green sauce with cilantro? rice? The salsa was fantastic. We also had for a time one called Tia's that was from Texas, that was pretty good. We have one called Rosie's that used to be good, but they have dumbed down their food to match the other ones. We have excellent German, Vietnamese, Thai, etc, because of Redstone Arsenal, but no Mexican or even Tex-Mex that I like.

I did a search for the January 2008 BHG nagazine archives, and the recipe that sapphires posted was in that issue. So that is probably the one you are looking for. Looks yummy!

I got this recipe here and I've made it and thoroughly enjoyed it... it's spicy and sassy and I hate that I didn't log who gave it to me! So take credit if you see it benefactor...

SOUTHWESTERN WHITE CHILI
1 pound boneless skinless chopped chicken breasts
2 tablespoons olive oil
1 large onion, chopped
1 cup chicken broth
4 ounces green chiles, chopped
1 large can white kidney beans (cannellini), undrained *Use navy beans
1 teaspoon garlic powder
1 tablespoon cumin seeds, ground
1/2 teaspoon oregano
1/2 teaspoon cilantro
1/8 teaspoon ground red pepper
Heat oil and saute chicken and onion 4 to 5 minutes.
remove from pan
Stir in chiles, spices and broth and simmer on low heat for 30 minutes.
Stir in cooked chicken and beans.
Simmer until tender. Serve garnished with Monterey Jack cheese.
We also like to top with a dollop of sour cream

Here's white chili with my rendition:
1 can chicken broth
1Tbl olive oil
2 boneless chicken breast, chopped ****Use WalMarts, and use breast only shredded.
1/4 cup or more chopped onion
1 4 oz can green chiles, chopped ***I puree mine with my hand blender WITH juice
1 19 oz can navy beans, undrained
1 tsp garlic powder
1/2 tsp cilantro ***I use instead 2 tsp chili powder
1/2 tsp oregano
1/8 tsp red pepper
Sauce chicken and onions 4-5 minutes in olive oil **If using Wal Marts cooked, saute onions only till translucent
Stir in spices, broth, simmer about 15 minutes, then add beans and shredded chicken and simmer 5 more minutes, to get the flavors blended.
We love it topped with fritos, shredded cheese, and a dollop of sour cream
