recipe failure - try again or toss

I bought one of those Mini cheesecake pans a while ago and decided to try it tonight as I'm having company tomorrow.

What a sad, sad story. Followed directions that came with the pan to fill pans almost to the top. Bake at 350 (convection) for 15 minutes. Cheesecakes puffed up over the tops, tops cracked, insides weren't cooked, cold cakes were greasy. Yuck! Yuck! Yuck! So I smooshed them all up, added a Heath Bar and scooped them into balls on a cookie tray. Right now the smooshed up cakes are in the freezer. Tomorrow I will try and rescue my ingredients - or waste more - by dipping the balls in chocolate.

So when you have a new piece of equipment, do you try, try and try again till you get it right, or toss it. I used the Mini cheesecake recipe on allrecipes.com that has 4 1/2 stars and 420+ reviews so if the majority of those people are doing it right, what did I do wrong?
