Matzo Crack question

Can someone who's actually made this tell me when you're supposed to break up the chocolate-coated matzos into pieces? The recipe says to do it while they're still warm. Mine have been cooling on the counter for about 15 minutes, and the chocolate is still very gooey. I think it'd make a big mess if I break them up now. But I don't want to wait too long and then have the chocolate come off the matzos because it's too hard when I snap them.

What's the best time to crack the crack?

Hmmmm I wait until mine are mostly cooled. By then, half the batch has been eaten anyways.

Thanks, Jessy. I guess it'd be pointless to ask if you cool it the rest of the way in the freezer, which the recipe also says to do. I'm assuming yours don't make it that far. ;o)

Mine have to last till I can bring them to brunch tomorrow, so I probably have to stand guard overnight.

Well, I just finished cooking them, and I think that in the future (unless I am pressed for time) I will always refrigerate the dough overnight, or at least a lot longer than the half hour or so I've been doing. The dough was MUCH easier to handle, so the balls were nice and neat; very little "crumbs" in the water when I was done (and that was 60 matzo balls). I'm not going to freeze them; I imagine the quality would be slightly better, if at all, if I did, but I don't want to guess about frozen centers. This way I can take them out of the fridge and let them come to room temperature on Monday and then put them right into the bowls as we serve the soup. The soup won't get messy and the balls won't soak it up. (I don't need them to do that for flavor, because I made them with schmaltz.) They are in a glass bowl with a cover. I don't care if they lose some roundness. The only thing I'm a bit worried about is them sticking together so much that I will mess them up as I try to spoon them out of the bowl. What do you think about pouring hot or warm water over them shortly before serving?

Haha, ipink, i would eat that. My first was similar. I do make a savory version that has chives and spinach and a bit of feta, topped with avocado and salsa. (sometimes proscuitto) My kettle already has hot water for the coffee brew. Pour over the matzo in a colander,. my small cast iron ready... I always have matzo being a NewYorker. The salt and pepper, not the whole wheat. Doesn't work as well for most things. I use it for my cod cakes and a nut and dried fruit thing, then rolled in cocoa. Similar to a truffle. It has a name but it has been so long that i lost that. Might be moroccan because of some of the spices.... I always toast my matzo in the oven at 350 for 5-10 min, then oven off, door open to cool down. Gives a fresh crisp. Make matzo 'crack' every year. Smitten Kitchen has a good tutorial. I make an 'everything' crack. After the caramel has bubbled in the oven, the important step, i top with a prepped mix of toasted seeds and nuts and dried fruits with shaved dark chocolate. Back in the oven for a minute or two to melt. (never had much success trying to spread the chocolate chips over the hot caramel...a step i failed) ...I just let my 'everything' mix melt into the caramel on its own. A few minutes back in the oven solves that step.

I am a fabricator. If there is no evidence of heat damage the likely cause is a flaw in the material. It doesn't happen often and usually if there is one the piece will break during fabrication but I have had a few failures after install. In one instance a corner broke off on a small counter at a bank where there was no likelyhood of heat damage. The fabricator should replace the part.

You want more than just shine. You want to be able to stand back and bounce low-level light off the top. You shouldn't see any waves or dips in the top where they fixed the crack. If you do, they have to grind a larger swath and feather it in.

Yup LOL I'd stand guard. I made two batches on Tuesday, left them out on the counter all piled up, gone yesterday.

If it's the same recipe I make every year, you freeze it solid before breaking it up.

That's what I ended up doing, Gellchom. I don't even see how it's doable while they're still warm. Two desserts down, one more to go. Thanks for the help.

Ya. I freeze it too. I just put the whole cookie sheet into the freezer and break it up when it's frozen. And I store the finished product in the fridge. Otherwise the chocolate gets all melty and gooey. You know, I like it to "melt in your mouth, not in your hands".

I have always stored it in the freezer. It's nice to know it would work in the refrigerator, too -- could come in handy sometime. Thanks for the tip, May!

You know, that stuff is the kind of thing that tastes good out of the oven, at room temp, refrigerated, frozen, or any other temp you can come up with! Man, it's ADDICTIVE!

LOL!! I love this thread. I don't make that stuff at home!!!! I've done it for large group things and that was bad enough!!!!

I make a ton of this stuff every year, and I don't even like it. Too sweet for me -- or maybe it's that I know how much margarine and sugar went into it!

I left a little vase of flowers on my neighbor's doorstep tonight to thank her for letting us use some of her daffodils for centerpieces, and I included a bag of the leftover matzo candy. I'm just sick of seeing it in the freezer! She isn't Jewish, so maybe she'll think it's exotic. :-)

The pineapple-coconut truffles, on the other hand ... THAT I would eat all year. Mmmm!

So I'm not the only one who finds the crack less than addictive! I've never had it before or made it before, so this batch was my first taste. It's okay, but I don't see myself turning tricks down by the highway to finance my new matzo crack habit. ;o)

My friend, on the other hand, hadn't heard of it before yesterday, and she couldn't keep herself away from the bowl. Go figure. It's kind of nice that there's something made of chocolate that I can actually resist!
