Mariah, here is my recipe for an oil-based pie crust. It is not "flaky" like a crust made with shortening, but it is very good and tasty. You roll it out between wax paper. I think you could add some natural sweetener to the dough for a sweeter pie. I also use it for quiche. I'm including my lowfat quiche recipe too, you and your hubby might like it. It's an easy, relatively painless way to add tofu to your diet. The crust sounds like it might go well with apple pie too! Pie Crust Mix together: 2 cups whole wheat PASTRY flour 2 tsp. salt (or a little less, depending on how strict your diet is) Here's where you could add a TBLSP of natural sugar Put 4 TBLSP COLD water into 1/2 cup of canola oil. Stir until bubbles are uniformly distributed. Pour liquid into flour mixture and stir. Separate into 2 piles and roll out between wax paper. Will hang together once it's rolled out. Low Calorie Quiche (from "Vegetarian Times" magazine) Crust: 1/2 cup rolled oats, ground into flour in a food processor (or oat bran) 1/2 cup whole wheat flour 1/2 cup unbleached white flour 1/4 tsp. salt 1/8 tsp. baking powder 1/4-1/3 cup canola oil 2 TBLSP lemon juice 1 1/2 tsp. honey 2-3 TBLSP cold water 1-2 tsp. sesame seeds Mix dry ing. together. Drizzle in oil until mixture looks like coarse sand. Add lemon, honey and 2 TBLSP water until the dough forms a ball. Add more water if necessary. Roll out between wax paper. Can sprinkle the pan first with sesame seeds. Prick crust on sides and bottom. Prebake for 10 minutes at 375 degrees. Note: sesame seeds are undigestible whole. Toast them LIGHTLY in the oven, then grind in the blender or food processor, but not too much or you'll end up with tahini, lol! Store in the fridge and use as a topping for rice dishes, etc. Quiche Filling ing. 1 tsp. water or olive oil 1 cup minced onion 1 tsp. minced garlic (or less!) 3 cups small broccoli florets 1-2 TBLSP water 2 large egg whites 10 oz package soft, silken tofu (Mori Nu brand comes in a cardboard box and you can keep it on the shelf, so you can stock up when you hit a big city with a comprehensive grocery or health food store, but there are other brands out there which might be at your local store too) 1 TBLSP prepared dijon mustard 1 tsp. dried basil or rosemary 1/4 tsp. ground nutmeg 1/4 tsp. salt 1/4 tsp. white pepper 1-2 TBLSP grated parmesean cheese (you can substitute nutritional yeast for the parmesean. Nutritional yeast is NOT brewer's yeast, which is a nutritional supplement. Nutritional yeast is a yellow, flaky powder, is a great cheese substitute for sprinkling. You'll find it in the refrigerator section of a health food store. Store it in your fridge at home.) Heat the oil or water in a skillet over med. heat. Add onion and sautee 3-5 minutes until translucent. Add garlic and broccoli and 1-2 TBLSP water. Steam until broccoli is bright green, about 2 min. Drain veggies if watery. Place in the pre-baked crust. Whip egg whites until frothy. Add tofu, spices and parmesean. Blend until smooth. Pour into pie crust. Can garnish with red pepper strips if desired, but not necessary. Bake at 350 degrees for 40 min. Watch the crust edges!

Well, sugar. And I don't mean sugar. I had no idea. But I think you're right, Linda. What's strange is that no one in the comments section mentioned this as a problem, so it must be partly luck. I Googled for solutions, and the only thing I could find was the suggestion to add more liquid, but I tried that and it doesn't seem to be working. So either I'll do some crazy experiment with more cornstarch and recooking it, or I'll just throw it in the ice cream maker and see what happens. If the cornstarch is only there as a stabilizer, then eating the whole batch in one sitting should solve the problem. Thanks for the quick answer. I feel really dumb.

Lou, I do like cinnamon rolls. But (here I go again with my pickiness) not with gobs of frosting/icing. I actually prefer to top mine with crumbs like the ones used in crumb cakes. Annie, you really made me laugh. The thought of bananas & chocolate syrup makes me think of banana splits. Again, my own pickiness... I've never understood how people could actually like that combo. Bananas, chocolate syrup, fruit toppings, and ice cream. Neither one of those items appeals to me much, so I can't see them put together. Yet I know most normal people think that's a combo made in heaven. But stick some french fried onion rings in front of me... That's where I would go nuts. Or sauteed onions, or caramelized onions, or stuffed onions, or grilled onions. I've been watching this show on the Food Network called "Chopped." Four chefs are judged by three super famous & prestigious chefs. One of the chef judges always complains whenever a contestant uses any amount of raw onion in a dish or salad. I can't understand him. I love raw onion on all kinds of things. He must be some kind of taste wimp.

Here is the recipe that I have many, many times. It's not overly sweet. CREAM CHEESE COOKIES Here's my long time favorite cut out cookie dough. If I remember correctly it was originally in a BH+G magazine in the late 70's. I usually double it in my KA mixer and usually make at least three bowls of the dough. I have a very large tree shape cookie cutter (about 9") and love to make and decorate special cookies for those that love cutouts. This dough is one that you can roll thick, if you like a softer cutout, yet still holds up. 1 1/2 C sugar 1 C unsalted butter 1 8oz pkg cream cheese 1 egg 1 tsp vanilla 1/2 tsp almond extract 3 1/2 C flour (I like unbleached) 1 tsp baking powder In a mixing bowl cream sugar, butter and cream cheese until fluffy. Add egg and flavorings, beat smooth' Stir together the flour and baking powder, add to creamed mixture and mix thoroughly. FOR CUT-OUT COOKIES Chill dough. Roll out on surface dusted with a mixture of 1/2 powered sugar and 1/2 flour, 1/4 to 1/2 inch thick depending on your preference. Cut into desired shapes. Place on ungreased cookie sheet ( I line with parchment paper) and bake in a 375� oven 8-10 minutes. Watch for the edges to just barely begin to brown if you like a moist cookie. Cool and frost. COOKIE PRESS COOKIES Divide dough into portions and add desired colors. Force through cookie press onto ungreased cookie sheets. Bake in a 375� oven 8-10 minutes. Remove from cookie sheet and cool on wire rack. Before baking brush with slightly beaten egg white and sprinkle with colored sprinkles if desired. Note...I have added about 4 oz of almond paste to the dough when making the cookie press cookies.....yum! FAVORITE ICING FOR CUTOUT COOKIES 2 c powered sugar, sifted 2 Tbsp softened butter 1/4 tsp vanilla 1/4 tsp almond extract 1 egg white 1/4 C milk or cream Combine egg white and milk, set aside. Beat together powered sugar, butter and flavorings. Add small amounts of the milk mixture until icing is spreading consistency. Tint with desired colors. Using the egg white will give you a nice finish on the icing, the butter will keep it soft on the inside. Nancy
