What kind of peanut butter? I often buy peanuts at a reduced price after the holidays and make my own peanut butter in the food processor. I also use powdered peanut butter and reconstitute it with water and add a little coconut oil to smooth out the texture. (Powdered peanut butter is a home food storage staple.) When Dillons (our Kroger associated grocery store) sends me a coupon for a free jar of Kroger peanut butter, I'll use that. The price of an 18-oz. jar of it has more than doubled over the last few years, so it MUST be good...... If I'm feeling wild and crazy I'll make sunflower seed butter and use that for something different. I'm not one of those "picky" people who choose Jif - because it normally doesn't fit my food budget. We regularly use 18-oz. of peanut butter per month without using it for cookies. This is our newest favorite peanut butter cookie recipe.... PEANUT BUTTER CRUNCH COOKIES Heat or microwave to liquefy: 1 stick of butter 3/4 c. peanut butter Add remaining ingredients: 1 t. baking soda pinch of salt 2 eggs 1 c. unsalted dry roasted peanuts 1/2 c. raw or roasted sunflower seeds 1/2 c. almond flour (or wheat flour) 1/2 c. palm sugar (or brown sugar) 1/2 c. mini semi-sweet chocolate chips 1/2 c. cacao nibs (optional) Use an electric mixer to blend. Use a #50 portion scoop to portion cookies and place on a parchment paper lined cookie sheet. Press dough down slightly. Bake in a preheated 375-degree F. oven for 12-minutes. -Grainlady

Coming out of lurkdom to tell you how to make your own thin mints and pb patties. Super easy.. Thin mints Take a block of almond bark melting chocolate (doesn't contain almonds, just the name). Melt in the top of a double boiler. You can add a tbs or so of shortening to thin it if you'd like. Add a few drops peppermint oil (not extract). Stir. Dip ritz crackers in one at a time and let dry on parchment paper (or wax, or quick release foil). Instant girl scout cookies. PB patties: (Easiest way): Put a bunch of smooth peanut butter into a heavy duty zip loc bag. Snip a corner of the bag. Put a splat between two ritz crackers. Refrigerate cookies for an hour or so. Melt almond bark (again, you can add shortening if needed). Stir til smooth. Dip sandwich cookies into it. Dry on parchment paper... These are MUCH better than the gs variety. My dh cannot be trusted when I make these. Enjoy. Jo

I have a girl scout. We still sell door to door. The girls are required to take a parent with them even when you are selling on your street and know the neighbors. For the last two years, we have been given cookies instead of taking orders. It is more difficult to pull a wagon around with a variety of cookies boxes. We don't always have time to go door to door when the weather is nice. We also do booths in front of stores. The stores have to give permission. I'm sure there have been some complaints because some of the stores have put restrictions on selling. Pammyfaye, my dad agreed with you about cookie sales. He would never take stuff like that to work to sell it. Dh does take cookies to work, but he just leaves them in the break rooom on the honor system or gives them away. I try not to pimp my kids for fundraisers. I know various organizations need money so usually I just donate money instead of doing the fundraiser. Girl Scout cookies are something people request so I let dd sell them. She will never be a high seller because I don't believe in going to extremes to sell.

jadeite- I'm not tricia, but will help you out with an answer. Two tablespoons of powdered peanut butter reconstitutes into 2 T. of peanut butter. A #10 can (44-ounces) = approximately 89 two-tablespoon servings. If you are interested in purchasing it in #10 cans, Emergency Essentials (beprepared.com) has it discounted several times a year and they also give a discount for purchasing multiple cans. A 44-oz. cans (89 - 2 T. servings) costs 38-cents per oz. Emergency Essentials also has a smaller, 12-oz., container. A nice size to give it a try. You might want to look for a powdered peanut butter product called PB2 to give it a try in a smaller amount (6.5 oz. jar). Check Amazon.com or Netrition.com, they often have PB2 discounted from these sources.
