Flatbread challenge

For a special treat three of my GF's took me to a local "tapas" place for lunch. All the food was extraordinary, some of the best food I've ever had. I mean that seriously, outstanding!

One of the stars was an amazing flat bread served with a selection of olives and an artichoke spread.

The chef visited our table and, when asked about the flat bread, was kind enough to share the "recipe".

Here it is.......

1 bottle of beer at room temp

1 oz yeast

1 oz honey

1/2 oz salt

550 grams unbleached flour

I asked about the process he used. He looked at me and said "you just make it"!

I did get out of him that he only lets it rise once, he rolls it like you would a pizza, sprinkles both sides with kosher salt and cooks quickly on a flat top. One flip only. ...but I swear there were grill marks on the bread so I'm not so sure about the flat top. The bread was very pale not too browned at all.

Any how I am dying to try this , it was outstanding! Warm, soft, salty, sweet ...I want more!

Any of you bread mavens have some advice to offer ? Do the proportions look right? It was just so d@mn good!
