Now what to make any ideas? I was going to make Taco Soup but hubby says he don't think the beans would be a good idea for him right now LOL !!!

Meatloaf, ground beef and noodle casserole, meatballs and gravy, cabbage rolls, barbeque on a bun, soup with potatoes,carrots, celery, onions and NO BEANS. LOL

I am thinking of soup didn't really want to run to town for potatoes but I can! Used the last of them yesterday.....also could do the meatloaf but again no potatoes and Brian would think it terrible to have no mashed potatoes with it......would love cabbage rolls but the cabbage does what the beans do LOL!!!!!What Mamatoad is the ground beef and noodle casserole?

Laura, thanks for the info on curing. I'm not sure what would happen if you let it cure longer. I'd be willing to guess that moving it around on day one or two might have been more significant than only letting it cure for a week. It is interesting that it failed where the water was. If you're going to repeat this, I'd suggest doing several little ones, with each variation on a separate piece. Then you can compare your different variables to something. Of course, it's easy for me to suggest something for you to do :) I sure hope I don't have to put my projects through so much torture before I'm willing to put it in my yard. Then again, I can see myself being grilled in court, "you mean you didn't try the 180 lb man jump test?" Looks like a good material to try with my next big project.

I copied and pasted this from another gal who wrote a review on Amazon.com. She says exactly what Presto told me, too ! ................... Even though there is a dial gauge, you actually CAN use this canner as a weighted gauge canner! I contacted Presto about this, and the weight that comes with this canner is the same weight that is on their smaller pressure cookers, the 4- and 6-quart models, which cook at 15 PSI. Therefore, when the weight begins to gently rock, it is pressure canning at 15 PSI. However, people who live below 1,000 feet of elevation need to pressure can at 10 PSI, so you either need to make sure your gauge is accurate, or you can purchase a 3-piece pressure regulator from Presto (model #50332). The lady at Presto confirmed that by using this particular pressure regulator, it will then effectively be a weighted gauge canner with the dial there just for reference. Now that I have a way to pressure can using just a weighted gauge and not depending on accuracy of a dial, I love this canner. I do not have a way to have my gauge checked other than by sending it to Presto, and that takes weeks to have it checked. Also, I don't know how accurate the gauge would be after being in the mail getting jostled around. .............................. I wish I could find the other link I used for the part, it specifically said for CANNERS, and not just cookers. Plus, Presto makes a new canner, sold at Walmart, that is only a weighted gauge canner. There is also a link to one of the extension sites that says that on Presto, the weight should rock gently the whole time, not so many times a minute. You could make a strawberry rhubarb cake, with the amounts you have I'd make half a recipe and bake it in a square 8 inch pan. Strawberry Rhubarb Coffee Cake Filling: 3 c Sliced fresh or frozen rhubarb, 1 inch pieces 1 Qt. Fresh strawberries, mashed 2 tb Lemon juice 1 c Sugar 1/3 c Cornstarch Cake: 3 c All-purpose flour 1 c Sugar 1 ts Baking powder 1 ts Baking soda 1/2 ts Salt 1 c Butter or margarine, cut into pieces 1 1/2 c Buttermilk 2 Eggs 1 ts Vanilla extract Topping: 1/4 c Butter or margarine 3/4 c All-purpose flour 3/4 c Filling: In a large saucepan combine rhubarb, strawberries and lemon juice. Cover and cook over medium heat about 5 minutes. Combine sugar and cornstarch; stir into saucepan. Bring to a boil, stirring constantly until thickened; remove from heat and set aside. In a large bowl, combine flour, sugar, baking powder, baking soda and salt. Cut in butter until mixture resembles coarse crumbs. Beat buttermilk, eggs and vanilla; stir into crumb mixture. Spread half of the batter evenly into a greased 13" x 9" x 2" baking dish. Carefully spread filling on top. drop remaining batter by tablespoonfuls over filling. Topping: Melt butter in a saucepan over low heat. Remove from heat; stir in flour and sugar until mixture resembles coarse crumbs. Sprinkle over batter. Lay foil on lower rack to catch any juicy fruit spillovers. Bake at 350 degrees, for 40-45 minutes. Cool in pan. Cut into squares. Yield: 16-20 servings. Or use the fruit and make a topping for cheesecake, I did that a little while ago and everyone loved it, as long as everyone loves cheesecake. I'm at work, but I'll try to post the recipe tonight. Lou, I'd try to get the DH to get me the mixer now, but he just bought me a WII this week so will have to wait a while. I will be using your recipe again, when I run out of these meatballs, but I will definitely make sure I have all the proper ingredients. Do you work at the VA or are you a veteran who gets care there? My DH is 100% disabled Vietnam Army vet. I'm a Vietnam era Air Force vet. We both use the VA here. In fact, he's there all the time. Jessyf, my furkid was named Sigfried when I bought/rescued him at nine months old just before Christmas. I doubt the jerk I got him from had the intelligence to listen to opera. I'm pretty sure he gave him a German name and taught him commands in German only so he would look like an excellent breeder. Too bad it didn't work. Although I'm not really educated in it, I do love opera. Lindac, yep, he's a 105 lb. German Shepherd. My beloved 'Kota had to be put down a year ago last June and had the best breeding lines you could find. Sigfried doesn't have the best, but he looks a lot like 'Kota and is a wonderful furkid. I wouldn't trade him for anything. Oh yeah, within a day, he had learned English. And he likes Italian meatballs.

Have you ever made stuffed pepper soup? I made this version from Cooks.com but I cut it by more than half other than the beef. I used the recipe for guidance only and it is now a favorite.

STUFFED PEPPER SOUP
2 lbs ground beef (used 1#)
1 lg onion chopped
5 green peppers, chopped (used 2-3)
Brown the above ingredients and drain well. Now add:
6 cans of Tomato Soup and 5 soup cans of water (Used 1)
1 can of beef broth & 1 broth can of water
2 tsp of Brown Sugar (don't think I used it at all)
2 small cans of Tomato Sauce
3/4 cup of uncooked white rice (Used a handful)

Simmer on low until the rice is cooked. You may eventually want to add about another cup or so of water, if the soup gets too thick.

(I've doubled this recipe and frozen a portion of it. When I go to use the frozen batch, I added a can of beef broth and another can of tomato soup. It just seemed that after it was frozen it was really thick!)

I had ground beef out as well. I just made meatballs for spaghetti sauce. It's simmering right now.

Here's a concoction I made one day when I had ground beef and wanted something different. It's a big hit and we continue to eat it.

INGREDIENTS:
- Ground beef or turkey
- Package of beef stew mix (the small packets of seasoning)
- Frozen package (or fresh) of mixed colored peppers w/ onions
- wheat egg noodles

HOW TO MAKE:
- cook beef, drain
- add stew seasoning mixed with water
- add peppers/onions
- add little more water if needed (I do)
- optional: add kitchen bouquet seasoning for rich gravy color
- cook noodles separately

When onions/peps cook down and are soft (approx 30-35 mins), mix noodles in to finish the casserole. Eat up.

Delicious. You can really embellish this dish with chick peas, broccolli, mushrooms, or whatever you like. Easy clean up too.

Enchilada casserole, or taco salad with chips. You can make up the meat with either taco or spaghetti sauce and freeze it because it is cooked. I do it all the time.

I add a pound of hamburger to this:
Baked Ziti
Serves: 8
Ingredients

1/2 pound ziti
1 (15-ounce) container ricotta cheese
3 cups (12 ounces) shredded mozzarella cheese, divided
3 cups spaghetti sauce, divided
1/2 cup grated Parmesan cheese

Instructions

Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking pan with cooking spray.

In a large pot of boiling, salted water, cook ziti until just barely tender; drain and place in a large bowl.

Mix ricotta cheese and half the mozzarella cheese with the ziti. Cover bottom of prepared pan with half the spaghetti sauce. Spoon ziti mixture into pan; cover with remaining spaghetti sauce. Sprinkle with Parmesan cheese and top with remaining mozzarella cheese.

Bake 20 to 30 minutes, or until cheese melts and is light golden.

i like to make meatloaf burgers...2 lbs would make at least 8 quarter pounders, and either leftovers or freeze for a quick dinner night...
