Boneless/skinless chicken breast advise please

No, I am not looking for another recipe, but I do need some advise. BS chicken is not my favorite part but it has its place.

I would like to pre-cook some of these for those hot summer days when all you want is a salad because it is too hot to cook. In the past, I have grilled them, sliced and frozen in foodsaver bags, but they always seem a bit dry on the defrost. So I was thinking that I could:

-poach them, then add the grill marks and freeze in the broth

-marinate in buttermilk and then grill and freeze.

Any advise here? I would use them in basic mayo chicken salad and in Chicken Caesars.
