Question~Holding a chowder in a Crock Pot

I want to make Salmon Corn Chowder next week for the Teacher's Appreciation Soup Lunch.

However, I'm a bit concerned about it curdling some and seperating being held in the crock pot for a few hours, and being opened and closed for in those hours while the different levels take their lunches.

Would it be best to make it mostly with stock/broth and then add some heavy cream to "cream" it up? I want it to stay as lovely as possible from first dip to last.
