Is anybody interested in having a Dessert Party, with the only recipes allowed are in the Dessert Chapter for Thibeault's Table?

I've been reviewing the many yummy recipes and having a hard time picking which to try first. I did finally decide on one for tomorrow.

I'll wait for some response before setting a date but I'm thinking sometime within the next couple of weeks.

I was trying to ignore it too! LOL

You folks know I don't bake but I can melt, whip, and chill LOL

I think it's a great idea. Depending on the date, I could make something and take it to work. If I'm working I think I'll give my goodies to the residents instead of the staff. They love homemade things.

Now do I make something new or something I've made before that I love.

Julier - Here's what I believe is the original recipe. It includes the missing steps. It appears that Ann uses the pastry but makes different filling. Maple Crisp Pie Anna Olson / foodtv.ca Yield: 6 I like this dough so much because it can be rolled and re-rolled without toughening up or shrinking once baked. Ingredients: Dough 2 cups all purpose flour 2 tbsp oats 1/2 tsp baking powder 1/2 tsp salt 1 cup unsalted butter, cut into pieces and chilled 2 tbsp sour cream 2 tbsp maple syrup Filling 5 Mutsu (Crispin) or Granny Smith apples 4 tbsp maple syrup 1/2 tsp cinnamon 1 tbsp butter 1 egg, mixed with 2 tbsp cold water, for brushing Directions: Dough 1. Preheat oven to 350 F. 2. Combine flour, oats, baking powder and salt in a bowl. Cut in butter the texture of coarse meal. Stir sour cream and maple syrup and add to dough, mixing until it just comes together. Chill dough for 15 minutes. Filling 1. Peel and slice apples. Toss with maple syrup and cinnamon. 2. On a lightly floured surface, roll out dough to 1/4-inch thick. Slide dough onto a parchment-lined baking sheet. Place apples and all the syrup into the center of the pastry. Dot with butter. To Assemble Fold crust over apples in 5 folds, leaving some of the filling visible. Brush with egg wash and bake for 30-40 minutes, until crust is brown and filling is bubbling.

I picked this date so that those who work can have the weekend to make something and because I don't want to run in to Passover. I'll start a new thread on Saturday for early birds to post on. If we max out the original thread to post on that I start on Saturday, we can start a new one. I 'm just trying to keep the posts organized. I know I'll want to save the whole thread... Here's the rules: I hate rules, but this is a little bit different than anything we've done before. #1 The recipe you make and post about must be from AnnT's Dessert Chapter. #2 Just for fun....Don't post about which recipe you are making....it will be way more fun to see what everyone picked after the fact. If you have a question, ask it in a general way in a new thread, without the recipe name. #3 I realize not everyone can post a picture, but if you can, please do, and don't worry about it looking (or not looking) like one of Ann's. #4 Please share your experience with the recipe that you made. Comments can be helpful to others who might make it in the future. #5 Have fun, I know I will! I already made a recipe over this past weekend that turned out to be way better than I thought it would. There's a flag at our front door that says "Lucky To Be IRISH", and we have hosted some really fine St. Patrick's Day Hoolies (parties) over the years. Lots of great food to prepare over a couple weeks of marathon baking... The first two recipes are desserts I made from a class I took years ago on Irish Cookery: BROONIE (Irish Gingerbread) 2 c. flour 1-1/2 t. baking soda 1 t. cinnamon 1 t. ground ginger 3/4 t. salt 1/2 c. butter, softened 1/2 c. sugar 1 egg 2 egg yolks 1 c. molasses 1/2 c. quick-cooking oatmeal 1 c. hot water Measure flour, baking soda, cinnamon, ginger and salt. Sift together onto waxed paper. In mixing bowl, combine butter with sugar until well blended. Add the egg plus the two additional egg yolks. Beat mixture until fluffy. Stir in molasses. Add sifted dry ingredients, oatmeal and hot water (1/4 at a time) to egg and molasses mixture, stirring after each addition. Pour mixture into a greased 9x13" baking pan. Bake in a 350°F. oven 20-25-minutes, or until a toothpick comes out clean when tested. Cut into squares and serve warm. Kerry Apple Cake 1-1/2 c. flour 1/2 c. sugar 1 t. baking powder 1/2 t. cinnamon 1/4 t. ground cloves 1/4 t. salt 1/2 c. butter 1 egg, slightly beaten 1/3 c. milk 3 medium size apples, peeled and thinly sliced, (about 2-1/2 cups) 1/4 c. brown sugar Sift together flour, sugar, baking powder and spices. Cut in butter with a pastry blender until mixture is coarse crumbs. Add egg and milk and blend well to a stiff batter. Mix in apple slices and spread in a greased 9" square baking pan. Sprinkle top with brown sugar, bake in a 375°F oven 25-minutes. Serve warm, with whipped cream if desired. ----------------------------------- A traditional Irish cake from "Classic Irish Recipes": IRISH WHISKEY CAKE 1-3/4 c. golden raisins Grated rind of 1 lemon 1/2 c. whiskey (Irish Mist) 12 T. (1-1/2 sticks) butter, softened 3/4 c. firmly packed brown sugar 3 eggs 1-1/2 c. all-purpose flour pinch of salt pinch of ground cloves 1 t. baking powder Icing: Juice of 1 lemon 1-3/4 c. confectioners' sugar a little warm water crystallized lemon slices to garnish (optional) Put the raisins and grated lemon rind into a bowl with the whiskey and let soak overnight. Grease a 7-inch deep cake pan and line the bottom with wax paper. Preheat a moderate oven to 350°F. Cream the butter and sugar until light and fluffy. Separate the eggs. Sift the flour, salt, cloves and baking powder together into a bowl. Beat the yolks into the butter and sugar one at a time, including a spoonful of flour and beating well after each addition. Gradually add the raisins and whiskey mixture, alternating with the remaining flour. Do not overbeat at this stage. Finally, whisk the egg whites until stiff and fold them into the mixture with a metal spoon Turn into the prepared pan and bake in the preheated oven for about 1-1/2-hours, or until well risen and springy to the touch - test with a skewer, which should come out clean, if you are uncertain. Turn out and cool on a wire rack. Meanwhile, make the icing by mixing the lemon juice with sifted confectioners' sugar and just enough warm water so that you can pour the icing. Put a dinner plate under the cake rack to catch the icing. [Grainlady Note: I baked this recipe in a fluted Bundt pan. Check the cake for doneness after 30-minutes.] ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Last, the least traditional, and the most popular.... KILLARNEY CHERRY CAKE (I've posted this recipe so many times on the Internet over the years that you can now Google it and find the recipe. I found this recipe in a cookbook that was compiled by Home Ec. Teachers in the "Foreign Section". How authentic to Ireland it is somewhat doubtful - although cherries are an Irish favorite - but this cake is always a hit and easy to make.) 1-lb. 2 1/2 oz. pkg. chocolate fudge cake mix 1/4 c. plus 3 T. creme de menth or 1 1/2 t. peppermint flavoring 1/2 c. chopped red or green Maraschino cherries 1 1/2 c. heavy cream 2 T. confectioners sugar (powdered sugar) 1/4 c. whole green (or red) Maraschino cherries* Chocolate curls (take a potato peeler to a cold or frozen Hershey Chocolate Candy Bar) Prepare cake according to package directions, substituting 1/4 c.creme de menthe for 1/4 c. water or adding 1 t. peppermint flavoring and using the same amount of water as called for on the box (Grainlady note: I prefer the peppermint flavoring to the creme de menthe - creme de menthe tends to burn the cake). Stir in chopped cherries; pour into two greased 9-inch layer pans. Bake as directed on cake mix package. Cool. Whip the cream with remaining creme de menthe or 1/2 t. peppermint flavoring and confectioners sugar. Spread one-third of the whipped cream between cake layers. Heap remaining whipped cream on top. Arrange whole cherries on the top of the cake (Grainlady note: *drain and blot the cherries on paper towels first to prevent cherry juice dripping on the whipped cream), add chocolate curls over whipped cream. Note: If you want to save time and money, frost the cake with a tub of Cool Whip (regular or Extra Creamy, the Low-fat stuff doesn't hold up well) with either creme de menthe or peppermint flavoring in it instead of whipping the cream. Make sure this cake is refrigerated until time to serve.

Yes. I have participated in the cooking forum, a lot. I do find them friendly and very, super-duper knowledgeable. That said, if you want really good recipes that have actually been made (not only recipes that are posted on the internet that look really pretty), with tips and hints, that is the place to go. There are experts in every corner of the culinary world. I still haven't tried a foray into bread, but I know Annie would help. Immediately. Sure, others would jump in, but she'd be first. For instance. She's also good at canning. But say, I wanted to make a very large meal and needed good round numbers to get started, well then, it'd be LindaC. You get the picture. I know I could never cook as well as many of the posters, but I do know they're kinder than kind and incredibly patient. _______________________ I won't mention some of the past tiffs over there, but in retrospect they could be pretty comical. I innocuously started the great garlic tiff. I was asking about an Asian dipping sauce and asked if using powdered would work as well as fresh in the one instance. Some said no, and ONE (Lou!) said absolutely. Fireworks! It was more than comical to me. I really, truly, wasn't trying to upset anyone.

You know I jumped on the opportunity to receive more of Ann's wonderful recipes, and now I have a good excuse to make one. So, we don't say what we choose to make until after we've made it and post about it? Hmmm, it'll be interesting to see what everyone picks, and if there's any repeats. This sounds like fun. I'm in!

This sounds like fun but if it falls during Passover, I'm not sure if I'll be able to participate. It would depend on finding a dessert that works for Pesach. So far, the Carmel Hazelnut Torte looks possible except I don't think I can get Kosher L'Pesach white chocolate here. There are a couple of others that are close but one ingredient will be a problem.

Thanks for saying that, CS, as I just realized that the weekend of the 26th is Orthodox Easter, too, so it would be the only weekend I can't do. I'm sure Passover affects more of us though...

I'm working on a fundraising event for the next 4 weeks + Passover, but if I can fit it in, I will! I'm definitely going to try some of Ann's delectable goodies, but not sure quite when!

Nancy, I think that Passover actually spans the last two weekends in April, but I'll let someone more knowledgable than I speak up to what dates would be commonly observed. As for me, the in-laws' Easter is on Sunday the 27th, so that weekend is pretty much out of town for us.

I know I have a bit of a head start as I have made quite a few of Ann's over the last 2 yrs..but will only use new:)

Although I don't make too many desserts lately, this is a good reason to make something and join in the fun. Ann sent me the file earlier today and it's going to be darn hard to pick out one recipe from that list....they all sound and look wonderful!

DH pointed out something to me that I just didn't think of. There's no way our little camera or my skill level in photography can measure up to Ann's. This could get very embarrassing. (No, he wasn't insulting me, he was just pointing out the obvious.) The photos Ann took of her deserts are amazing and unsurpassable. Oh, well, it'll be fun trying, anyway.

Jessy, that looks good but my son and DIL are not coffee fans so the expresso flavored torte wouldn't work well for me. There are a number of other recipes in there that I think I could make work. I think the lemon custard cakes on page 114 would work with matzah cake meal substituted for the flour. Or the Mexican flan. The caramelized pears with tiramisu cream look really yummy except I have never seen Kosher L'Pesach rum and again I'd like to avoid coffee flavoring - I wonder how it would be with just vanilla or if there is some other flavor I could substitute.

(Cloud - I'm with you. My kids and I both prefer that a LOT of the coffee in that recipe be left out, maybe just a smidgen left to bring out the chocolate flavor. HA. Like that recipe needs it! AND I wish there was KFP Bourbon...wouldn't THAT be nice... also, be careful on your 'vanilla' since it is usually made with alcohol. I'm not THAT observant but some are!)

The beauty of these virtual parties is that they are flexible. I know when I've participated, I've done it on a Sunday, since I work Saturdays. Other's have had to postpone a week or done it early. If we do it the weekend after passover, I'll probably wait a week, since at least my DH will be out of town, and I may be joining him. Or, I'll do mine early and save the pics for later. It would be the most fun to do it several times, just to get it just right! :-)

Jessy, for Passover, I make homemade vanilla "extract" by putting a vanilla bean in a small jar of white wine and vanilla sugar by putting a vanilla bean or two in a small tub of sugar. I figure my vanilla extract isn't as potent as the real stuff so I use the vanilla sugar in place of some or all the sugar in the recipe plus the vanilla flavored wine for the vanilla extract.

Peppi: pffth of course anyone can make anything. Its a free melting pot country. OK lecture finished.

Alcohol IS permitted on Passover (THANK god or I'd never make it through) - the source is what counts. No wheat or grains. Grapes and potatoes are OK! Whats made with potatoes? Pass it over! yuk yuk yuk

What alcohol's made with potatoes Jessy? Vodka can be made that way but it is also made from fermenting grains or beets. There are a handful made with potatoes but most are made from grain. I usually stick to wine for Pesach.

Peppi, Sure you can make the torte.
There aren't many types of distilled alcohol that one can be sure aren't made from grain. There is some slivovitz (plum brandy) but it isn't to my taste.

Yeah cloud I don't drink much so I also skip most of the wine/alcohols. That being said, I do miss my bourbon sweet potatoes at Passover. Hmmmmm. Rum and Tequila.... basis sugar cane and the agave plant? Probably can't find it certified KFP, though.

Ann is ann_t. You can go to her member page to send her an email requesting the book. She will then send you a link to download the dessert chapter. You can also ask for her earlier recipe book: THIBEAULTÂS TABLE. The desserts chapter is an expanded dessert chapter for the book.
