Grainlady & Agave....recipes wanted

Grainlady, I'm here to beg if necessary.

A couple of weeks ago after reading about you using agave I bought a small bottle at our local "honey" place, Glorybee (check their site linked below for all sorts of cool stuff, both cooking and non cooking related..no affiliation...just a big fan and it's LOCAL!...like 2 blocks from DH's work).

Anyway.......I was wondering if you have a great T & T Banana Nut muffin recipe using agave?

And.........what if you wanted to roll cookies (or muffins in this case) in "sugar"? Do you use a granulated or powdered form of agave as well? Just skip it?

Any other baking type recipes would be greatly appreciated too. I only bought a 12 oz bottle, but know where to get more! LOL

- Substitute agave nectar for sugar - 1 c. sugar = 1/2-3/4 c. agave nectar. I can sometimes use only 1/3 c. agave nectar to replace 1-cup sugar - it depends on other ingredients and your "sweet buds". Use it in equal amounts in recipes that use honey as the sweetener. You may need to add a little flour to make up for the added liquid when substituting agave nectar for sugar.

- I've never seen a dry form of agave nectar, always liquid, and I wouldn't use the liquid agave nectar in place of powdered sugar for dusting or rolling cookies in.

I don't have a Banana Nut Muffin recipe, but I have this recipe you might be able to bake into muffins. Most quick bread recipes adapt easily to muffins. I was working on a Peanut Butter Banana Muffin recipe a couple weeks ago, but I need to make some more changes or else I'd share it.

BANANA-POPPY SEED BREAD

1 c. mashed bananas
1/4 c. agave nectar
1/2 c. kefir - (or milk)
3 T. coconut oil (or vegetable oil)
1 egg, lightly beaten
1 c. all-purpose flour (I use freshly-milled spelt)
1 c. whole wheat flour (I use freshly-milled white wheat)
2 t. baking powder
2 T. poppy seeds (I also use whole amaranth instead of PS)
1/2 t. baking soda
1/2 t. salt
1/2 t. cinnamon
(you can add nuts if you like)
vegetable cooking spray

Combine the bananas and agave nectar in a bowl; stir well. Let stand 10 minutes, stirring occasionally. Stir in kefir (or milk), oil, and egg; set the mixture aside. Combine flours and the next 6 ingredients in a large bowl and stir well. Make a well in the center of the dry mixture; add banana mixture to dry ingredients, stirring (by hand) until moistened. Spoon into an 8-1/2x4-1/2x3-inch loaf pan coated with cooking spray. Bake in a 350F oven for 1 hour or until a pick inserted in center comes out clean. Cool in pan 5-10 minutes. Remove from pan and finish cooling it on a rack.

PROTEIN PEANUT BUTTER BALLS

1/2 c. whey powder (vanilla flavor)
1/2 c. peanut butter
2 T. Agave Nectar
1 t. vanilla or almond flavoring

Mix thoroughly, using a fork. If desired, add 1/2 - 3/4 c. crisp whole-grain rice cereal (or Rice Krispies) to the dough. Form into 3/4-1-inch balls.
Toppings:
- Melt 1 c. chocolate chips and drizzle over the top.
- Dip the balls in a little Agave Nectar and then dip into chopped, blanched, roasted almonds or toasted unsweetened coconut.

COCONUT ALMOND CANDY

Melt:
2 T. butter in a frying pan
Add:
1/2 c. long-shred UNsweetened coconut
1/2 c. chopped almonds

Over medium heat, cook until the ingredients begin to brown.
CAUTION: this will burn easily.
Remove from heat.

Add:
2-3 T. Agave Nectar
1 t. almond flavoring

Stir well. Place in small paper candy cups/papers (like tiny cupcake papers). Cool in a refrigerator at least 1/2 hour to set.

Yield: approximately 20 pieces

VANILLA ICE CREAM

4 oz. Liquid Pasturized Egg Substitute (DO NOT use raw eggs!)
1/4 c. Light Agave Nectar
1 c. Half and half (or milk)
2 c. Heavy cream
1-1/2 t. Vanilla

1. In a 4-cup measuring cup or equal-sized bowl, combine egg substitute, Agave Nectar, and vanilla in a bowl and stir to mix.
2. Add cream and half and half (or milk).
3. Chill thoroughly.
4. Process in a Deni Scoop Factory Compact Automatic Ice Cream & Frozen Dessert Maker or ice cream maker of choice.

Yield: 1 quart

AGAVE NECTAR CHOCOLATE SYRUP

1/2 c. HersheyÂs Cocoa Powder
1 c. Light Agave Nectar
1 c. Cold water
1/2 t. Vanilla
1/2 t. Guar gum (optional)
1/8 t. Sea Salt

1. In a large saucepan, combine cocoa, Agave Nectar and salt. Stir in water. Bring to a simmer over medium heat, stirring constantly with a wire whisk, until smooth - about 5 minutes.
2. Add 1/2 t. guar gum for a thickener.
3. Place the pan in a sink of cold water and stir with the whisk until cool. Stir in vanilla. Pour into a covered container and refrigerate.
4. Shake before using.
(Note: I usually make 1/2 a recipe. You can add this chocolate syrup to milk.)

Grainlady, thank you for sharing these other recipes!

I've almost used up all my Agave from TJ's..I love it..on oatmeal, over fresh berries that need a bit of extra sweet and I've also used it to sweet up some BBQ sauce..

Is the guar gum a "thickener" in this case? Could I use xantham or just omit?

It is my understanding the cooked and cooled potatoes should NOT be reheated in order to maintain the resistant starch. The resistant starch "escapes" or "resists" digestion in the small intestine and is digested in the large intestine where it is treated more like fiber than a starch. It's not a chemical reaction, it's a starch reaction, which affects the blood glucose. There are pasta products being made with resistant starch and the product is resistant to any changes from heat, and can be consumed hot. Adding potato starch to mashed potatoes offers the same benefits. Perhaps adding hi-maize resistant starch or potato starch to hash browns would do the same thing (just speculating). However, this doesn't help with the nightshade issue, but the glucose issue associated with potatoes. I'd suggest looking at recipes using cauliflower as a potato substitute. You can make cauliflower hash browns, mashed cauliflower, and cauliflower "potato" salad. You can also make sweet potato hash browns since sweet potatoes are not a nightshade plant. If you want a new twist to potato salad, try Martha Stewart's recipe for Chilled Sweet Potato Salad (linked below.) Low-carb cooks have made cauliflower a great substitute for potatoes, if you've never given cauliflower a try. Ilana, this is the recipe I use from the Ball Blue Book. If you store them in the refrigerator and eat them cold, they are crisper, and Pickle Crisp also helps. Bread and Butter Pickles (Ball Blue Book of Preserving) 2 pounds 4 to 6 inch cucumbers, cut into 1/4 inch slices 1 pound onions, thinly sliced 1/4 cup canning salt 1 cup sugar 1 tablespoon mustard seeds 1 teaspoon tumeric 1 teaspoon celery seed 1/2 teaspoon ginger 1/2 teaspoon peppercorns 1 1/2 cups vinegar 1. Combine cucumber and onion slices in a large bowl, layering with salt. 2. Cover with ice cubes and let stand 1 1/2 hours. 3. Drain, rinse, drain again. 4. Combine remaining ingredients in a large saucepot. Bring to a boil. 5. Add drained cucumbers and onions and return to a boil. 6. Pack hot pickles and liquid into hot jars, leaving 1/4 inch headspace. 7. Remove air bubbles. Put on 2-piece lids. 8. Process for 10 minutes in a boiling-water canner. 9. Allow 4 to 6 weeks for flavors to develop * Makes about 4 pints I like the ginger, but you can leave it out, and you can double this recipe for a canner full. I think the onions are the best part, but I've subbed jalapeno slices for some of the onion and Elery loved them, sweet and hot. Annie

Carol- You can make naturally-fermented bread with kefir - no sourdough starter necessary (you'll find a recipe at the link below. Maybe use half kefir and half warm water. It will help tenderize the crumb. Check the recipes for using kefir at the link below for more choices for you. I just finished fermenting a quart of kefir today and one yesterday so I was looking at these recipes for some inspiration. shambo- Morning Moo's is LOW-lactose, but isn't lactose-free. All of my lactose-intolerant family members can use Morning Moo's, but that may not be true of everyone. As I understand it, nearly everyone has lactose intolerance - it's just a matter of degrees of intolerance based on amount consumed and frequency of consumption. The higher the fat content of dairy, the less lactose there is in it. That's why some people who have lactose intolerance can eat butter, whipping (or heavy) cream, half-and-half, or even whole milk, but not low-fat or fat-free milk. So you may find you can use Nestle's NIDO (available in the Latino section at Wal-Mart) because it includes milk fat (I would store mixes including NIDO in the refrigerator). I bet you could also substitute non-dairy creamer for powdered milk. It might be worth trying a quarter or half recipe of Magic Mix to see. There are a couple brands of whey-based milk substitutes that ARE lactose-free - if they are even available anymore. The original one we used was Meadow Fresh (developed by Roy Borg), which is now Meadow Fresh Milk-Lite. Phil Augason of Morning Moo's fame worked with Borg. Another lactose-free brand I've used was "1st and Best Whey Milk" (www.wheymilkusa.com). I haven't used any since 2007. It's more expensive, not as tasty as Moo's out of the glass, and doesn't come hermetically-sealed in #10 cans for long-term storage. It worked well for mixes, cooking and baking and the chocolate version is VERY tasty. We used it to make homemade chocolate ice milk and ice cream. Vance's Dari-Free powdered milk substitute is made from potato starch, and may be an option. Goat milk has lactose, in fact it can have more than cow's milk. "Cow's milk ranges from a low of 4.66 to 5.15, depending on breed, with the common Holstein having 4.93 on average. Goats, on the other hand, again depending on breed, range from 4.54 to 6.4, with Saanens about on par with Holsteins, although some Holsteins have tested for much lower levels at 3.51. Goats, as you can see, can easily have more lactose than cows, or at best the same amount." The guar gum is a thickener and you can just leave it out. I haven't tried it with xanthan gum. I might have to try it the next time. -Grainlady

jessyf - We purchased our Sharp in 2002, so they may have different models by now, but it's a real workhorse around here. I use it very little as a microwave, but do a lot of baking in it and use the convection oven alot.

Everything you wanted to know about Mexican Agave Nectar ( plus a forum ) and more..... Including a free recipe CD... Although when you click on the link that says you get the CD free when you buy a three pack of Agave it says you get a free bottle of it if you buy the CD... lol

Be warned, if you have dial up, a video of Dr. Oz and Oprah starts playing on quite a few pages....
