Smoked Sliders...ideas?

I have a notion in my head to make sliders ( the mini bun things )for May Two Four weekend which is the official start to summer on the lake.

I want to make them all from smoked meats smoked in my own smoker. I want to do pork, chicken and beef.

I'm thinking pulled pork, Carolina style sauce and slaw.

I'll shred the chicken but need some help with topping ideas. Chiplote sauce maybe and ???

I'm leaning to pastrami for the beef, so sauerkraut and swiss cheese came to mind as toppers but I may try brisket again...if so what would be good toppers for that? BBQ sauce and ?????

    Sounds wonderful!

    I'd start with browsing FoodTV's site looking at Bobby Flay's recipes. He's got some great & different approaches to slaws, sauces, etc. You can always tame the heat, if necessary. ;)

    I would use the smoked chicken with a fun sauce for tacos (maybe rolled?) or tostados & the pork/beef as sliders. A little diversity, ya know? :)

    What are you using for dry rubs & mops while smoking? That will help determine the final sauce.

    I'd do something entirely different than any sort of a BBQ sauce for the chicken...something sweet and fruity...maybe a chutney or chutney based sauce...
    For the beef....how about corned beef...it's not smoked but cured....and then you could do ruben type toppings.

    I love pulled Pork that way. Keeping with the sweet on the Chicken, what about a Mango / Apricot Habanero Type Jam / Sauce, sweet and heat to compliment the smokiness of the Chicken. For the Beef I think classic Texas Brisket would be great.

    What about a smoked salmon? My Little Gourmand LOVES smoked salmon sliders.
