Need help with 'glue' for oven fried chicken...

My granddaughters are coming to spend the night, so I thought it would be fun to make oven fried chicken legs for dinner. I've got plenty of crumby things, so that's not my dilemma. My question is about the "glue" that keeps the crumbs on the chicken.

When I normally make breaded and baked fish or chicken breasts,I smear a mixture of mayonnaise and flavoring on the meat before pressing on the crumb mixture. For tonight I'd like to bread the entire chicken leg. So what's the best "glue"? Beaten whole egg? Egg white? Milk or cream? Mayo?

I plan on baking the chicken legs on a jelly roll pan. I'm concerned that the bottoms would get greasy/mushy rather than crispy. So which "glue" would be best? Also, I could bake the legs either on non-stick foil or parchment paper. Which of these would work better?

A lot of recipes use buttermilk, and I'm wondering if that helps the crumbs adhere better.

Since you're baking them in the oven right from the start, I'd baking them on a baking rack over the cookie sheet.

I did this a couple of days ago and used a whole egg, beaten. I have also used cream, but I like the egg better.

Lizzy, I think that's an even better idea than chicken on the bone, and here chicken is removed from the bone, added to the gravy and spooned over the waffles, much like your version I'd guess, except the chicken is fried. Many times chicken "strips" or "fingers" are used. Renee, you're right about regional dishes even within a state. Elery moved to Michigan when he was 11, but he spent his childhood in Tennessee and had never heard of chicken and waffles, although I thought it was a "southern thing". He was astounded when I dragged out the sorghum molasses to put on my cornbread, and said that was a southern thing but I've been doing it all my life and I was born here in Michigan. Of course, he claims that Grandma had to be from the south because of the way she cooked, but she grew up in Ohio. A little searching revealed that Grandma's stepmother, who raised her from a very young age and taught her to cook, was from Kentucky. So some of her cooking "migrated" to Michigan with Grandma and my kids grew up eating what is considered by some to be "traditional southern cooking". I guess after a couple of generations, the way people move around, anything can become a regional specialty! As for the chicken and waffles with syrup, I know a lot of people who will cover their sausage with syrup when they have breakfast, so chicken with syrup is no stranger than that, I've just always seen it served with gravy and never for breakfast. Oh Robin you've made my mouth water and the memories of Sunday dinner at our house as a child come flooding back. My dad made the best fried chicken. It was and is a fairly simple recipe. Being health and weight conscience I only make it for special occassions. My kids still ask for Pop's fried chicken on their b-days. Coat and Season chicken, (can use boneless breasts or other parts after soaking in ice, salted water for about an hour) with flour and salt and pepper. Dip coated chicken in an egg and milk mixture, again with s&p. Then take a brown grocery bag. Put flour, (start with 2 or three cups (depending on how many pieces you are coating. More s&p) Place chicken pieces only one or two at a time in the bag and shake, shake, shake until pieces are nicely coated. After all pieces are coated, place chicken in frig while heating Crisco shortening in a cast iron skillet. When shortening is melted take a drop or two of water, when shortening sizzles the pan is ready for the chicken. Do only a few pieces at a time. Leave lots of room in the pan for chicken to fry. When golden brown remove chicken. Place on paper towels and remove excess fat. Season to taste while chicken is still hot! We never made a gravy for it, never saw the need! Enjoy. We've been eating SE Asian food for 40 years, at a variety of friends' homes and restaurants. The food - not just SE Asian, but Japanese, Korean, Chinese, and even Californian bistros - has become increasingly sugar-heavy. Using some sugar is traditional in much of Asian cooking, but I'd agree it's becoming overdone. It's not a trend we like. Yes, I'd feel free to reduce some, but not all, of the sugar. However, the author states up-front that her intent was to make a very intense sauce. A couple of times I've subbed honey or brown sugar in Asian recipes, the latter being actually closer to what Asians traditionally used. But you have to use a very neutral honey, if you choose that route. You also have to be careful - in a frying recipe, the food may brown too fast. My DH and I have found it very interesting how the Millennial foodies have much more liking for sweet hard-liquor cocktails, plus saltier and sweeter food, than we do as Boomers. That sounds right. :) I was in my 30's before I could name all the states of Australia and there aren't many. :) Before then, I knew New South Wales because I loved the double modifier and always wondered why North Wales was excluded, though I know there are cultural differences. :) I think I know all the provinces of Canada, but...okay, I just tried, but while I knew spaces I couldn't call to mind, I couldn't do it. Missed four. Blame sleep deprivation? But that's it for me. I know only a few of the states of Mexico and none of the Cantons of Switzerland, even though I've been there. Then again, the legend going around about the 1996 Olympics in Atlanta was that people called in to an advanced sales line from New Mexico to get tickets and were told that they only had tickets for people in the USA. I think pictures in media and air travel have made the map portion of geography instruction functionally obsolete (i.e., the people don't feel compelled to learn it).

flour first, then dip into beaten egg with a little milk or buttermilk added....then into the crumbs.
I did that this week, but used crushed seasoned corn flakes.
I used salt and pepper in the egg buttermilk mix and seasoned the crumbs with garlic powder, chili powder and dry parsley.
I just laid the chicken on the foil and baked at 375 for about 30 minutes.....they were HUGE chicken breasts...bone in.

To help breading adhere better to food let the coated food sit on a rack for 10-15 minutes before cooking it. If you use an egg batter, the rest will allow the egg to dry a bit, which will help it stick. I like to use a mayo/mustard mixture on well-dried skinless chicken breast, then roll in crushed (homemade) potato chips. ;-) -Grainlady

I usually use evaporated skim milk and then let the pieces set for about 15 minutes before puttting it into the oven.

I too do the 3 if your gonna bread do alot...I do flour,egg,with little buttermilk then dip in crushed rice crispies,I add paprika a little salt mmmmaking me hungry,I do sometimes soak chicken in buttermilk about an hour before or earlier in the day.

I usually do this on a roasting pan so excess grease can drip away. However, considering we like ranch dressing for the "glue" that may be pointless! Absolutely yummy, tho!

Thanks for all the ideas. I ended up using the flour, egg wash, & crumb technique. I ground up some egg & onion matzo crackers for the crumbs -- very low in sodium. I let the breaded drumsticks rest on a rack for about 20 minutes before placing them on a baking sheet. I used parchment paper so they wouldn't stick to the pan. I wish I had a rack that would fit inside my baking sheet. I think that would have kept the bottoms crisper. But all in all, it was a good meal with enough left over for lunch the next day. Thanks again.

Shambo, it sounds good and I'll bet they liked them anyway.

I do have a baking rack that fits perfectly into a half sheet baking pan with sides, and that helps keep the chicken up out of the grease.

My grandkids like the chicken when it's dipped into buttermilk and then rolled in crushed Ranch flavored Doritos. I'd prefer mine just baked with no coating at all but the kids like me to remove the skin and bake it with the coating.

I know I'm a week late, but I got a tip...I thought it was from Lindac here...to do it exactly as she just described above...but FIRST...dry off the meat with a paper towel.

If I've had the presence of mind, I usually soak the chicken (or pork) in milk (or buttermilk) and seasonings. When I'm ready to cook, I dump it all into a colander to drain. Then piece-by-piece, I pick one up, dry it off with a paper towel, then flour, egg dip, crumbs and set it on a greased rack over a cookie sheet for oven "frying." It's more labor intensive, but it keeps the coating on the chicken!! It works!

After my experiment, I decided I absolutely needed racks that fit into my baking pans. So I ordered some for next time.
