Got a good Fried Chicken recipe?

I usually oven-fry my chicken, but I've got a hankering to make "real" fried chicken, on the stove top, in a cast iron skillet. Isn't there a way to make gravy from the pan drippings? I know it'd be "heart attack on a plate" but I'm hankering for some good old-fashioned comfort food.

Cut a chicken into 8 or 10 pieces.

Season flour with with garlic powder, salt, pepper, cayenne pepper and thyme. Beat together eggs with a bit of milk. Dip the chicken pieces into the egg mixture then into the seasoned flour. Repeat this process so that the chicken is dipped into the egg and the flour mixture twice.

Heat oil about an inch deep in skillet and fry chicken, turning once, until golden brown.

Serve with a cream gravy with mashed potatoes.

Sounds great, but any approx. amounts for the seasonings? I won't be doing this often so I want to make sure it isn't bland or overly salty.

What kind of oil is preferred, and how hot should it be? I do have a candy thermometer.

Also, what is "cream gravy"? Is it pan drippings, milk/cream and flour?

Any more fried chicken recipes?
