Freezing cheese??

I was gifted with LOADS of various cheeses for Christmas, and wonder if I can freeze some of it. I googled my question and got such varying answers. I would be using the Foodsaver to pack it. Someone said to wrap it in clingwrap before sealing it, so I thought that might help.

I freeze cheese ALL the time!!!!! Nothing "helps" It crumbles when you unfreeze it. That's the ONLY drawback.

You can freeze the cheese but as Nicole says, the texture will suffer. It won't be a slicing cheese any more. It will be good for any use you want cheese crumbles for, such as cooking or melting, or eating squished on a cracker (but that won't look very elegant).

I have not done exactly that kind of cheese using vacuum, but I cut 40 lbs of Swiss in 1 lb chunks and froze them in zip lock bags, same thing with 20 lbs of mozzarella and 20 lbs of Colby. The texture of the cheeses was a lot crumblier after freezing, but they were very good for any of the cooked cheese recipes, including pizza.

The two things so grand fresh are mozzarella and warm bread. Both freeze ok for cooking and toasting when thawed. Fetta has good shelf life in herbs and olive oil and very pretty. I made flatbread crackers a few years ago for gifting. A few varieties using herbs, cheeses, pink sea salts. Different seeds, chia etc. Very festive looking. I stumbled upon a cheese forum a while back looking at fetta recipes and molding. (can't find the link) but they would know with a google search. A spreadable cheese like a goat/chevre will freeze ok. Not for gifts but to take to parties i lined a martini glass with saran, then some olive oil, then a paper thin slice of provalone. The olive oil makes it almost transparent. Any sprigs of herb, leaves, thin slices of olives, black sesame seeds will show through giving hint to the flavors inside...then pack the glass or cute shaped teacup with soft cheese mixture. Pesto, nuts, etc. Very cute little cone shapes. Might freeze just fine but i would test it first. I think of homemade food gifts not needing to be large. Just pretty and thoughtful. Thinking of trying fetta myself since it needs some weeks to set i could make it around thanksgiving for the christmas gifting. Here is a link that might be useful: freezing chevre

I've done this before. It worked well for me and I just microwaved it when I wanted to eat it. I froze it in individual servings sizes. (I did white sauce, not cheese sauce).

Here is the recipe I buy Velveeta for: Cheese Broccoli Soup 1 qt. water 1 c. chopped onion 1 c. chopped celery 2 cans cream of chicken soup (I have sub. cream of potato, celery, brocc/cheese etc.) 2 1/2 c. cubed potatoes 1 pkg. frozen broccoli (that is how the recipe reads-I usually use a 16-20oz. bag rather than a 10(?) oz. box) Cook the above together until veggies are tender. Add 1 pound Velveeta, cubed, and continue cooking until cheese is melted. Soup sticks easily after adding cheese. This is a very forgiving recipe-throw in California mix veggies instead of just broccoli, add more onion, celery, potato if you like them. My DH dilutes with extra water when he takes it hunting then leaves it in the crockpot so they come back to warm soup waiting for them. The guys all love it so I have to make this every year. HTH!

If they're aged cheeses, they should last pretty long in the refrigerator. Store them wrapped well and in the lower portion of the fridge. Hard cheeses such as cheddar and parmesan freeze better than soft cheeses such as brie. You might also want to share them with someone. Last year my daughter received a large gift package of cheese which was too plentiful for just two people so we benefited by it, too.

I have used my Foodsaver and kept cheese in the refrigerator for as long as almost 3 months. Tasted/looked like when I first bought it and no problems with crumbling when slicing.

An Italian friend told me to add a smidge of ground black pepper to grated Parmesan or Romano to preserve it from mold a little longer in the fridge.

I keep a couple of bags od shredded cheese always in the freezer for add ins to some dishes no problem but it is shredded. I served a cheese platter at Christmas I learned you have to let the cheese get to room temp before slicing, maybe if the frozen cheese gets to room temp it would be easier to slice also???

I freeze a lot of our cheese...When it's on sale, I buy more and divide and freeze.....Most of the time, I have sliced American in the freezer and so far I haven't had any crumble.......

I freeze the shredded cheese from the store with no problems.
I don't know how a block of cheese would do.

Thanks, all....DD brought over her FoodSaver and we sealed it all. According to her manual, cheese will keep in the refrigerator for a number of months if well wrapped. So that is where it is.

While I'd freeze shredded for short term storage, I wouldn't freeze block. In that case, I'd give it away so it could be used and enjoyed while it's at its best. Refrigerating is the best option and the vacuum sealing will help. Plan Atkins for a while Phyllis!
