Carrier opinion, 1 or 2-stage, furnace efficiency?

--2100 sqft single-family home, in Central Texas heat (Northeast side is rock, Southwest side is wood; tile roof).
Have two HVACs, one for each of two floors (about 1,000 sqft each). Both units *were* about 16-25 years old (a Lennox, and Day & Night).

Replaced the ground floor unit Dec. 2011, when the furnace died. Now, the top floor A/C coil has iced over much of the past year and a couple of opinions have said the coil is shot or (being it's quite old) replace the whole thing.

I'm looking at two Carrier quotes for a (single-stage) 2.5-ton replacement:

I guess my main questions are:
--I got a two-stage compressor for the previous (ground floor) replacement, but this tech is saying a second-floor unit will probably be on high stage most of the summer (100-plus degrees), so not worth it? These here are single-stage.
--Is there any reason for me to seek a more efficient furnace? (only runs for a couple of months)
