Linda (lyndaluu), thanks for "seconding" Malna's advice. It sounds like the cottage cheese will work and taste OK. LindaC, I'll save that list; it explains why I can handle butter but not the other stuff. Lars, I appreciate your advice. I've read your posts in the past about lactose intolerance, and I think you're right that we can handle some cheeses (especially the hard, aged types) better than milk per se. But, unlike you, I've found that I can't handle cream, either (maybe it's really the milk mixed with the cream, but I don't want to experiment!). It's not a problem at home, of course, but I've sometimes been in great "distress" immediately after a restaurant meal if I wasn't aware of milk in a brown gravy or thought I could disregard the small amount of cream in a sauce or the shredded parmesan topping on a salad. After you suffer the consequences a few times, you learn to be very cautious (I carry Lactaid tablets in my purse). I'm going to try SoyaKaas mozzarella-style substitute in my lasagna. I keep watching for other new products. There are so many lactose-intolerant people, you'd think there would be a huge market for these products, but so far, they mainly sell soy yogurt and lactose-free milk, cottage cheese, american cheese, and ice cream. I'm grateful that I can have grilled cheese and ice cream again, after years of abstaining, but I'd like to see many more types of cheeses and other products. Sue

Another recipe for mayonnaise to make tuna sandwiches with: All-Tofu Mayonnaise From: This Can't Be Tofu! by Deborah Madison (Bantam Doubleday Dell; April 2000; ISBN: 0767904192; Paperback) Cookbook Heaven @ Kitchenlink.com Here's an all-tofu mayonnaise, but your family may never suspect, especially if you add a tablespoon or more of prepared mayonnaise a good idea if you're nervous about it. (Although this option is not for you, Kitty.) This will keep, refrigerated, for up to five days. Makes: about 1 cup 6 ounces soft tofu, well drained, or 1/2 box silken tofu 2 tablespoons prepared mayonnaise (optional) 1/3 cup olive oil 1 small garlic clove 2 teaspoons Dijon mustard 2 1/2 teaspoons fresh lemon juice or vinegar (red or white wine) Salt and freshly ground white pepper 1.Put the tofu in a food processor with the mayonnaise, if using, and oil. Puree until smooth. Scrape down the sides. 2.Add the garlic, mustard, lemon juice, and 1/4 teaspoon salt, and puree until smooth. Taste for salt and season with a little pepper. Scrape into a bowl and refrigerate until ready to use. Variations: Mustard Mayonnaise: Increase the mustard to 4 to 5 teaspoons, or to taste. Garlic Mayonnaise: Coarsely chop 4 to 6 cloves unblemished garlic. Pound in a mortar with 1/2 teaspoon salt until the garlic breaks down to a smooth puree, then stir it into the mayonnaise. Saffron Mayonnaise: In a small mortar, grind 2 pinches saffron then cover with 1 tablespoon boiling water. Let steep several then stir it into the mayonnaise. Pepper Mayonnaise: Puree 1/2 cup roasted peppers until smooth with 1 garlic clove and a pinch of cayenne and add it to the mayonnaise. Mayonnaise with Capers and Fines Herbes: Stir into the mayonnaise 2 tablespoons rinsed capers, 1/4 cup chopped parsley, 2 tablespoons each chopped tarragon and snipped chives. Chlpotle Mayonnaise: Add 1 teaspoon pureed chipotle in adobo sauce into the mayonnaise. Taste and add more if you prefer it hotter. In place of lemon in the mayonnaise, use fresh lime juice.

My little boy is nine years old. He has been diagnosed with acid reflux as well. He throws up far too often for my liking. However, when he does this, he has often eaten and then become active. At school he has breakfast and then P.E. where they have to run and exercise and all and he gets sick, throws up. He is average height and size for his ageÂpossibly just a little under weight, but if so really not much. He is active, and plays soccer and video games. He is really smart and knows that he would not get away with faking something this serious. When I read this initial post it was so similar to what we are going through that I almost felt relieved myself. He has never been diagnosed with asthma, even tough I do have it. He was on acid reflux meds a few years back and it seemed to go away. He grew some more and all the sudden it is back? He is back on the meds just recently and they seem to help some, but he still throws up easily if he laughs too hard, or gets hot, or he said even sometimes if he yawns, that it just happens. I am at the point of wondering should be get him tested and then I found your post. They seem so similar that I canÂt help but wonder if this is just something that happens? He is a picky eater. Anyway I know my story may not help you with a solution, but reading your story helped me feel a bit less apprehensive. Life is so different from when I was growing up, there are more chemicals and there is more stress on children than there used to be. Pillog, that kugel sounds great! I will be saving this for another occasion... Anyhow, I'm still working up the food for the upcoming weekend, which is THIS coming weekend. Below, the food for Friday night, Saturday morning and lunch, and Sunday morning is set. In the following post I'll put what I have for apps and dinner but I still need help for dessert, and to decide between a couple vegetarian options: ****** FRIDAY PM (One lactose-free, one no-cooked seafood person, but fish sauce okay if it doesn’t overtly announce itself in the food… He LOVES raw fish, but won’t be doing that!) -- 5-6 people, the sixth if she makes it that night would be gluten-free. I am tree-nut free, excepting coconut. (I MISS pistachios and pine nuts… the rest I never cared about!) Appetizers: Veggie platter with choice of dips (chive cheese spread – from a local dairy; hummus, baba ganoush – from an excellent Lebanese grocery). Pick up items Thursday afternoon. Quality gluten-free chips (TJ’s) with peach salsa. Dinner: Hot and Sour Soup: Adapted from Russ Crandall’s “Paleo Takeout: Restaurant Favorites without the Junk.” Will use homemade poultry soup base (made a couple months ago), gluten free. Recipe uses arrowroot to thicken. However will add some tofu cubes, not Paleo. To make early Friday, add egg just prior to serving. Veggie & beef stir fry. Visit local Asian market Thursday for Asian-specific veggies (CHINESE broccoli instead of western…. Etc.) California sushi rice, in rice cooker. Dessert: Keeping simple. Thinking fresh strawberries with option of cream, coconut cream or a dash of sugar on top – or, nothing on top! Some dark chocolate nibbles for those who do have sweet tooths – nothing fancy. (Maybe chocolate dustings available for those berries!) SATURDAY BREAKFAST – same crowd as previous night: Omelets to order – plain, cheese, veggie. (A local guy sells eggs 2.50 per dozen, can’t beat that!) Home made pork sausages patties (local ground pork; I’ll form the patties Friday, cook in the morning). Available if wanted: Rolled oats for oatmeal; cold Kashi brand cinnamon oat cereal. Grapes and other fresh fruit. SATURDAY LUNCH – make your own sandwiches/lettuce wraps. A variety of cold cuts, lettuce suitable for making wraps, condiments (mustard, mayo that sort of thing), peanut butter. I’ll make a vegan potato salad Friday (roasted mixed potato, red onion, cabbage, apple, seasonings, no mayo). Bread from local bakery on way to house. Other people will trickle in during the afternoon. And will include at least one vegetarian – who does eat dairy and limited eggs. A no-legume, absolutely no seafood serious allergy person. No vegans. One no rice. HOUSE BLESSING: White wine or peach juice, GF oatmeal cookies made with banana. (make Friday) SATURDAY DINNER - see next post! SUNDAY BREAKFAST: Uttapam pancakes (these are savory vegan with lentils and rice, seasoned with onion, tomato, and curry leaves – pick up curry leaves Thursday pm!!! Will supply optional butter/ghee; or real maple syrup, for those who must have sweet…) Soak Friday, grind Saturday and make batter. Scrambled eggs, not to order. Available if wanted: Rolled oats for oatmeal; cold Kashi brand cinnamon oat cereal. Grapes and other fresh fruit. Supplying: coffee, tea, sugar & Splenda for coffee/tea, whole milk, coconut milk, (if I find it) Lactaid milk – my friend can use this in his coffee. SodaStream for seltzer. Wine, champagne, rum. A couple of juices as mixers or whatever.
