More on Yogurt

I finally got my yogurt maker and made the first batch overnight last night.

This time I added 1/4 cup of powdered fat free milk to the quart of 1% milk that I used. It came out great, however it's still a little too watery. Also, it was WAY tangy!! Mouthpuckering, eye-opening tangy!! I let it process for 8 hours. The instructions say for less tang, process it for 4-6 hours, more tang, 8-10 hours.

When I made it just using a hot water bath, I always let it go for 8-10 hours so that's what I did this time. I made up another batch before I left for work this morning and instructed my son to turn it off after 5 hours. I'll see if this batch is less tangy.

Would the addition of the powdered milk be responsible for the tanginess or is it the length of time? As I said, when I made it on my own, without the yogurt maker and without the powdered milk I did it 8-10 hours and it was no where near this tangy. I like a little tang, but not this much!

I'm very happy tho. Saving roughly $10 a week on yogurt is great! Once I get my recipe perfected I'm sure it'll be fine. And I still can't believe I'm making my own yogurt!!

Oh yes - one more question. Does anyone buy powdered starter instead of just using some of the old to start a new batch? The instructions with the maker said eventually using the old stuff won't work anymore as it will eventually become to weak to start a new culture. I was wondering if it was worth searching out the powdered culture. Thanks!
