scalloped potatoes....

might be one of my top ten favorite foods. I was happy to see heavy cream in my fridge after I got back from spending the weekend with my daughter and grandson. That means--scalloped potatoes for dinner tonight. Probably ribeyes, too. And a veggie or two.

Leland and I are dieting soooo I'll just have to dream about the lovely dinner you will have. By the way I've lost 6 lbs so far. Yeah!!!!

Scalloped potatoes sound good to me too, I love 'em. I don't make them very often, though, I'd better do that soon!

Well, Jasdip I'm glad you were successful with the muffin tin potatoes. I made them yesterday, and they tasted great, but....although I cooked them as long as they were supposed to, only the tops were crispy and even though they were tender they had a good bit of moisture in the cups. Took them to DD#3's for dinner and had I stayed at home I would have paid more attention to the "crustiness". Glad they tasted good because I sure didn't want to waste that good Gruyere cheese. Annie, ignore my semi-failure because they are really good and I may cut the recipe in half and try again. jude

My take is on the pototoes...milk will curdle when boiled...that's all that happened..if using milk instead of the "Fuller" fat...I make a white sauce with flour and butter/oil on the stove top..using milk as a thickener..and bring and there is no need to "boil" it to thicken..if your roux was properly cooked through...the "sauce" will thicken just as you start pouring in the liquid... And the brownies..here's my never fail recipe.. I use butter instead of oil now..and cut the sugar to 1.5 cups..with no ill effects. Brownies 2 1/4 c white sugar 2/3 c cocoa 1/2 c chopped nuts or chips or both (optional) 1 1/4 c flour 1 t baking powder 1 t salt 1/2 c oil 4 eggs 1 t of vanilla or other flavoring In a large bowl beat oil and sugar, add eggs and vanilla. In a seperate bowl mix dry ingredients, add to wet. Mix until completely blended. Fold in nuts and/or chips. Bake in lightly greased 9x13 pan at 350F for about 30 minutes, until set all the way through. Mix dry ingredients thoroughly. Add 1/2 c oil and 4 slightly beaten eggs. Mix until completely blended. Spread batter in lightly greased 9x13 pan. Bake at 350F for 30 minutes or until set. Cool in pan.

My grandmother kept her family alive by running a boarding house for boys in a university town during the Depression. She made scalloped potatoes in a frying pan -- par boiling the sliced potatoes in water, then pouring off the water before adding the milk, flour and seasoning, bringing it all to a near boil and simmering until done. My mother used to make this. It was less 'starchy' due to draining the water off. If we had ham or cheese, it went into the mix -- reducing the need for salt. I can't remember when the onions went in, and I don't remember them being diced, just thinly sliced.

Yes, we put the pork right into the liner. I usually use the rack, Elery doesn't, it works both ways but his way has the pork sitting in the fat. We also roast whole chickens on the rack, and I use it for bean soup, I just toss everything in there and set it to about 350F, let it cook til it's done because it's faster than the crockpot (which I only use if I'm going to be out all day). it makes a fine pot roast, a glazed ham, just about anything I can do in the oven. I use the big Nesco to make stock, I toss all the backs/necks/feet/bones/etc into the Nesco with a couple of carrots, quartered onions, stalks of celery, salt, pepper, bay leaf. When that all gets nicely browned and roasted, I add the water and let it simmer 18 hours or so. Strain it out, give the carrots and chicken bits to the dogs, toss out the bones and other stuff, refrigerate until the fat rises to the top and skim that off. Then can or freeze the stock. Your small Nesco could do the same thing on a smaller batch/basis. But then comes the question as to what I should do with 2 pints of chicken fat in the fridge, besides fry potatoes? Annie

I love them too and now have a craving!

This weekend I'm doing a ham for Easter, I think scalloped potatoes will be the perfect side although mac and cheese has been requested...what the heck no such thing as too much starch, I'll do both!

Scalloped potatoes rank right up near the top for me too. Especially when made with cream. Enjoy!

Sometimes you just have a craving and all the ingredients to satisfy it. If you ignore it, the cravings get stronger. lol

I haven't even begun to decide about Easter dinner. Yikes. I have made lamb a couple of times and that might be the main course. Hmmmmm

Love scalloped potatoes. So many good variations out there. The basic recipe (the way mom made them) is always satisfying. I served this recipe for T'day day a few years ago and it was hit.

I love potatoes any old way. That is except baked. And adding cream to anything kicks it up to the top notch!

I just noticed this version of scalloped potatoes on the Homesick Texan blog. Haven't made them (yet) but they do sound interesting. I'm not a fan of blue cheese although a few small crumbles can amp up a cheesy dish. But the 4 oz called for in this recipe would be enough to last me most of a lifetime!

Lisa, I'd just love to! I'm sure my family would understand that I didn't make Easter dinner, as long as I brought back lobsters and scalloped potatoes, LOL.
