If you broadened your scope to include muffins and other savory quick breads you would have a larger variety to offer; corn muffins with your homegrown corn (even if frozen) and thyme, Mexican corn muffins with homegrown onions and peppers, and I think there is a recipe for Spinach Brownies on this forum if you do a search.

Carrots can be included in things like spice cake without it seeming too "earthy"....and as Teresa says you might consider branching out into muffins and breads.
I am thinking of dried tomato and onion in a muffin, and certainly herbs could be included as well.
I would suggest that any recipe that includes apple sauce could have zucchini substituted.
Good luck....get your imagination going and I'm sure you will be baking and selling lots and lots.

It would help to know what you grow!

The number one thing I grow in my backyard to include in baking is red raspberries. I never get enough at one time to make jam or freeze, but I make chocolate raspberry muffins, (and you can make coffee cake too) and I'll bet that would be a good seller.

There are also some types of herbal cookies and shortbreads you could sell. I think the big herbs for that are corriander, cinnamon basil, some of the flavored thymes and mints, fragrant geraniums, lavendar, lemon verbena, anise, chamomile and calendula. I have seen recipes for baked goods containing most of those.

Could you subcontract your veggies from another home grower or certified organic farm? I'd look into that before I'd try to adapt a recipe to fit the requirement for vendors.

Or do you have a lemon tree?

Or does it qualify, if you make your "own" vanilla?? LOL

Lavendar and Lemon muffins/cupcakes are very popular around here. And definately lemon thyme in something.

weed, are you looking to comply with the law and asking if you could include a smidge of something in every recipe? Or are you looking for recipes for home grown produce?

Does the law that covers your license say what percentage of the ingredients have to be home grown?

How about garnishing/decorating your cupcakes with organically grown edible flowers?

We love using our lavender in shortbread.

For something different, I've got a great recipe for a butter cookie that uses dried chilis. It's not over-the-top hot but does have a bit of a kick. If you grow/dry your own chilis...that should work. Let me know if you're interested in the recipe.

I don't know your USDA zone but if you can grow berries...don't forget about things like crushed strawberries, raspberries, blackberries in the frosting.

You can also easily substitute mashed butternut squash for pumpkin & make either cupcakes or muffins in the fall season.

I make a quick bread we enjoy that would meet your criteria...regular orange/date bread but add 1-2 whole diced jalapenos (you can grow the jalapenos).

I wonder if this book might help? It seems like neutral flavored veggies like potatoes, squash, and sweet potatoes would be easy to hide in cupcakes. (Maybe a sweet potato pie cupcake??) If you could manage to grow one traditionally sweet ingredient (how hard is it to grow a mini lemon tree under lights?? or sugar cane? Maybe you could grow ground cherries-- I hear those aren't too hard, can be treated like tomatoes) that might help too.

I'd be delighted! This recipe is from a woman I used to teach with who was from Bosnia. She had a huge family and would get up a 4:30 in the morning to bake for the day before work. I remember her telling me that her kids loved this muffins so much that they referred to (and thought they were) cupcakes.
Healthy Muffins
1 1/2 cups unbleached flour
3/4 cup oat bran
3/4 cup flax meal (seed meal)
1 cup brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
Mix together and add:
1 1/2 cups finely grated carrots
2 peeled and shredded apples
1 cups chopped pecans or walnuts
(I used to reduced the nuts but at least half and soak then add about 1/2 - 3/4 cups raisans... pretty much because I love raisans in baked goods and nuts... not so much)

Separately mix and then blend in:
2 beaten eggs
3/4 cups milk
2 teaspoons vanilla
1/2 cup olive oil

Don't overmix. Bake at 350 for 18-22 minutes.
