Lazypup is not the only one to experiment in the kitchen!

We had a Porketta roast last week. I'd never heard of Porketta before moving here, but it's quite popular here and all the grocery stores have it pre-seasoned and ready to go in the pot (either roast or slow cook). Anyway it's a boneless pork roast covered with a spicy dry rub of seasoned mix. Each grocery seems to have their own recipe and they vary somewhat.

Anyway, we bought one last week that must have either been a butcher experimenting with a new recipe, OR he accidentally dropped in the whole container of something EXTREMELY HOT! I cooked it in the slow cooker and we had it for supper. It was so hot that even my husband, who loves HOT more than anyone I've ever seen, said this is HOTTTT!!!!! It was 'burn the skin on your lips' hot!

So I was pretty sure we were never going to eat up the leftovers and it was a big roast. So, like Jan, (but since I don't have Lazypup to ask), I asked myself 'what can we make with this?'.

I decided since it was already hot, that some sort of thick chili to server over rice might be really good. I shredded the Porketta. Then I put it in a pot with plain diced tomatoes (didn't want to add anything more spicy to the mix until I saw what I was going to end up with). I added three kinds of beans (red beans, black beans, and dark red kidney beans). I also threw in some onions and a can of whole kernel corn. I simmered this for an hour. It was spicy enough for most people at that point, but it wasn't chili type spice. So, I added about 4 tablespoons of Chili Powder and simmered some more. Typically, when I make Chili, I put in a lot of Chili Powder (maybe 4-6 Tablespoons) plus I add a number of other seasonings. This time, since I had the Porketta seasoning in the mix, I just added the Chili.

I cooked up a pot of rice and we served the Porketta Chili over the rice, and topped with grated cheese and a dollop of fat free sour cream. It was delicious! It was actually so good, that a couple of days later, when I ate the very last serving of it, I thought to myself 'I wish we had more of this....'. Not a frequent thought when finishing up leftovers! I think I might buy Porketta just to make this new creation in the future.

BTW, Porketta is normally very good cooked as a pot roast with potatoes, carrots, onions, rutabega...

So... what's your latest creative leftover invention?
