Retro Recipes Redux (Another Chicken Marbella Reference)

Interesting. There are three Chicken Marbella threads going on at once.

Not bad for a dish that had its 15 minutes of fame 30 years ago. Must be something in the air, or is this retro recipe making a comeback, like Vuarnet sunglasses, high waisted Calvins, and Remington Steele?

Are there other retro recipes you are seeing make comebacks lately? Any you want to see make comebacks? I'm thinking flambes are the next big thing.

(No disrespect to Chicken Marbella. I've made it 2X in the past month. Yummy and easy.)

Flambes were the next big thing three minutes ago. :) No, wait! It was flaming shishkebob that had a brief renewal in the sun. But speaking of, Crepes Suzette, Baked Alaska, and even Rumaki have been resurrected from the top of the 1960's swoon list and aren't quite over yet. :) Not that Rumaki is served flambe, but it could be. :) Or did you already discuss those?

Not sure if this qualifies as "retro"

In reading about Thomas Jefferson and his recipes and cooking, I came across this interesting video of stuffed cabbage.

Interesting because it is the same concept as a stuffed cabbage which I came up with some time ago and had posted here on the CF.

My method was less clumsy because I used my sous vide cooker to cook the cabbage without having to dip in boiling water again and again.

There is also the recipe for Jefferson's stuffed cabbage.

cooksnsews, although Canada has guidelines for canning and they are different in some instances than ours here in the states, they just don't seem to have the "oh my G*d, you're going to die if you do that" reaction to some old canning methods that we do here in the United States. For instance, I didn't water bath Chase's dill pickles when I made them for Dad Pickles get soft and mushy if they are BWB. I told Dad it wasn't recommended by the government agencies and he told me he was over 70 and would eat the blasted pickles the way he liked them, LOL. The reaction I got from my Canadian family members when Dad brought out homecanned dill pickles was something like "eh, you know they say you shouldn't do that any more". Here, even if I tell people how I canned them and what the ramifications could be, I will be chastised about poisoning my family and ebe told how those pickles should only be disposed of while wearing a haz-mat suit for fear of contamination. I think everyone should know the risks they are taking and then decide whether they want to take them. Being poisoned by jam is pretty low on the risk factor scale. As for water bathing jam, I've done it for years, Grandma even did it because she hated paraffin and found that lids were just so much more consistent. LindaC is the only person I know that still uses the stuff but I would eat her jam without a second thought, it's just not that big a danger. I don't usually log my oil used in food prep, when counting calories. I figure a teaspoon of oil is only about 40 calories, and it would be rare for one person's meal to contain more than that. I might use a tablespoon of oil when stir-frying a couple of dishes, but those dishes will serve multiple people and stretch to leftovers too. I do tend to use my cast iron pan for searing and frying, as it doesnt need as much oil as my stainless pans, and I don't own a non-stick pan. When consuming something like salad dressing, I do count the oil. Like dcarch, I've wondered about deep frying. One of these days I'll do an expirment and measure it. I sometimes wish I had a grill on the range. Grilling and broiling are two ways to get food browned without oil, but my gas grill isn't hot enough at the grates to do a fast sear, and it's often raining out there anyway.

Ann, try saving it to your Clippings. Look to the right of your last post (just above this). You will see the word Clippings in green letters. Under that it will say Clip This Post. For each recipe or comment you want to save, click on Clip This Post. Another way to do it is to highlight the entire thread, or the parts you want, right click with your mouse and then click on Copy. Start a new document in Word and paste the thread into that document, then save it to your computer. If you want me to do that for you and then email it to you, let me know.

What's for Dinner, Christmas Eve?

Sirley, it's very simple. We always had it Christmas eve so I could spend Christmas Eve day preparing Christmas breakfast and dinner. Come Christmas day, we just had a long drawn out day of opening presents. First the stocking stuffers, then a break for breakfast which was a strata and fresh fruit salad. Then we would open Santa's presents and our presents for the kids. Then we would take another break. After dinner, we went into the living room and lit lots of candles, sat and relaxed and then we would open all the gifts the kids bought for everyone. So, a nice relaxing Christmas chowder and some biscuits and cookies was most welcomed Christmas Eve. At first, I would make a potato soup base several weeks ahead of time and freeze it but after awhile I began to cheat. I take a package of Bear Creek potato soup and a package of Knorr's Leek soup mix and mix them both together according to directions on the package. I sautÃÂ© some celery and onions and throw them in along with some dry sherry to taste. Then I add whatever I feel like. Those lobster claws Raven was showing would be great along with some scallops, some crab meat and some shrimp. It's really quite goodÃ¢ÂÂ¦..the more sherry the better. LOL When it's not Christmas, I will sometimes take the Bear Creek potato soup, sautÃÂ© some onions and celery and throw in some butter and clams for a New England type clam chowder. Easy and good.

Pretty! Dcarch, that's a gorgeous dish! It would be easier in the steam oven, I think, but it would be magnificent on a buffet. Rich, though. And I think cutting down the fat would make it crumble.

I've been making Rumaki in my 1949 stove for a few years now and it's always a huge hit -- especially when pulled piping hot out of the Grillevator. I grew up with my mom making them in the 60's on -- wait for it! -- her hibachi grill, but there are a whole heap of younger folks to whom retro is brand new.

Went to a formal dinner a few months ago and they pulled out Marbella, which caused an audible stir.

We've also been using our electric Raclette grill for dinners lately, especially when kids are involved; more sanitary than fondue but still has that '70s eat-in/love-in vibe.

Paraphrasing Bertolt Brecht: there is nothing new under the broiler.

Hibachi, haha. That was my first grill. The box was a cheap smoosh of cardboard. Had to be assembled. Stunk of motor oil, smeared all over to prevent rusting...haha

We were just talking of the first dishes we made for each other. DH made TroutAlmandine, NewOrleans style using catfish. I made BeefBurgundy. I also made shish ka-bob that, looking back, was awful. I marinated waaay to long thinking that would be better but it was very strong and so much acid and red wine that it cooked everything before grilling like ceviche. yuck. lol
