Celery root recipes please

Dad saw some celery root at the produce market and said Mom used to make it. He thought she peeled the beast, sliced it and steamed it, them tossed it in a vinegarette. I have no recollection of her making them.

Now I have one in the fridge. Help!

I like it sliced in a thin julienne and combined with carrots or cabbage in a slaw. It's also nice added in to a veggie stir fry. Paper thin slices, VERY quickly blanched and chilled tossed in with salad greens and a favorite dressing.

If anyone is looking for another celery use, I stumbled across this recipe last night and made it to have for lunch today. It is quite good! Chinese Celery Salad Try serving this simple Asian-inspired salad with cold sesame noodles or stir-fried chicken with peanuts. From the book "Mad Hungry," by Lucinda Scala Quinn (Artisan Books). Mad Hungry, October 2010 http://www.marthastewart.com/349639/chinese-celery-salad 0Rated(0) Yield Serves 4 to 6 Ingredients 1 bunch of celery, top and bottom removed, stalks separated and cut in half lengthwise 1 tablespoon rice vinegar or white vinegar 1 teaspoon toasted sesame oil 4 tablespoons soy sauce 2 dashes Chinese chili oil or hot sauce (optional) 1/2 teaspoon sugar 2 tablespoons chopped fresh cilantro (optional) Directions 1.Bring a large pot of water to a boil. Add the celery and blanch for 2 minutes. Remove, rinse, and cool. Peel off the fibrous strings. Cut the celery into bite-sized pieces. 2.In a bowl, whisk together the vinegar, sesame oil, soy sauce, chili oil, if using, sugar, and cilantro, if using. Toss in the celery. Cover and refrigerate to cool before serving.

Cooking2day, I'd love to send you spare change, except I put all mine into pig feed, so I can make sausage. (grin) I get casings from Butcher-Packer, based on Detroit and price depends on size. I can get about that amount (the site says it will stuff between 45 and 60 pounds) in 20 mm sheep casings for $35.50, 22 mm sheep casings are $40.50, 24 mm sheep casings are $44.67, but the 24 mm sheep Vienna sausage casings are $60.50. The hog casings are anywhere from $3.50 for enough to stuff 25 pounds, all the way up to $25 or so for larger sausage. I'll attach a link. malna, that's funny, Elery just found that site this morning and emailed it to me, since he uses an iPod and I do better with the desktop and the BIG screen, LOL. I'm old and set in my ways, plus I can print from mine! I still need to try sleevendog's sausage recipe that I saved from the past thread, the one for boudin. Here I'm lucky. I have some sandy soil and some red clay but largely I have a nice loam, a mix of everything. Every fall I add a nice layer of cow manure and stuff from the chicken coop, along with whatever kitchen compost has been mixed in. I mulch plants with old hay, straw, chopped leaves, etc. The manure layer sits on top and gets worked in every spring before planting. I don't use any chemical fertilizers/ etc and the only problems I really encounter is potato bugs, not much wilt or other plant problems. Well, unless you count purslane and lambs quarter as problems, but I react by eating those! Annie

Yes to about all your questions. Here's one recipe & at the link below you'll find lots more. CELERY KNOB PARMIGIANA (serves 6) 4 celery knobs 1 TBL lemon juice 2 tsp salt 6 TBL butter,melted 1/2 cup grated Parmesan 2 TBL chopped parsley Preheat oven to 425Â°. Peel the celery knobs & cut them into thin little sticks about 2"long. Drop the pieces into boiling water to cover with the lemon juice & salt added. Cook about 10 minutes or until just tender. Do not overcook. Drain. butter a baking dish large enough to hold the celery knobs. Arrange a layer of the drained pieces & sprinkle w/some of the melted butter & some of the cheese. Continue to fill the dish with drained pieces, butter & cheese. Continue to fill the dish with drained pieces, butter & cheese. If desired, each layer may be sprinkled with a little black pepper & paprika. Bake 15 minutes or until the cheese is golden brown. "Celery" is what you used to get when you ordered hostas by mail in late Summer. Easier to ship. You haven't lost much by cutting off the tops this late in the year, as the big root growth takes place mid-summer. In September they are winding down to dormancy and in your neck of the woods, I imagine a first frost isn't far away. Relax. -Babka

Over here it is made into a salad with apples. Cook the root whole because it is then easier to peel. Dice the root and apples. The dressing is made of just mayo, salt and pepper. We use a lot of this at work in the summer on the salad bar.
Use the same amount of apples as the root is big.

My introduction to celery root was via Oeufs Norvegiennes, an artichoke heart topped with a poached egg, further crowned with a dollop of celery root remoulade and then all wrapped up in a thin turban of sliced smoked salmon. (swoon!) I discovered the celery root remoulade was very good for the digestive tract of someone eating too well in France, IYKWIM!

I first tried the Julia Child recipe for CRR with a homemade mayonaise-style dressing, but have since found Ina Garten's version using Hellmann's to be almost as good with much less work.

I also like Ina's recipe for apple and celery root puree. It is pretty amazing stuff, though as with many of her recipes, I think it would be just fine with less butter.

Lisa, thats the one. It was my Grandmother who made it and she called it Waldorf salad. Now I have to go and buy some apples.
