I can't think of a casserole right now, maybe someone else has a good one.

You don't need a recipe for a casserole.

It's basically a cooked starch (rice, pasta, potatoes)

A sauce (cheese sauce, tomato, cream sauce such as creamed dried beef)

And a topping--grated cheese, bread crumbs or crumbled crackers or potato chips

For casseroles, you just put together foods you like, and if you want to add in some vegetables, so much the better. A few suggestions:

Cubed cooked potatoes, with creamed dried beef, topped with buttered panko.

Your favorite pasta shapes, sauted onion and peppers, quartered meatballs, spaghetti sauce, topped with lots of mozzarella cheese.

Wagon wheel pasta, mixed with purchased BBQ (beef, chicken or pork), some grated carrots, topped with caramelized onion and grated sharp cheddar.

Rice, sauce of stir-fry vegetables, chicken and teriyaki, topped with crushed chinese noodles.

You can make a casserole pretty much out of anything you like, or anything you have on hand. They're not 'recipe' dishes. They're like soup--a way to make a meal out of a little of this, a bit of that. Just put together foods you like, that you eat together, and figure a good topping. Since you usually use all cooked foods to make them, they just need to be baked (350 or so) until heated through. If you want a nice browned, crisp topping, bake uncovered. If you don't want the top to dry out, then add a lid or piece of foil.

I made a pizza casserole last week that was just delicious. I added extra cheese and extra pepperoni to a recipe I found online. Here's the link to the recipe.

Oh, I do agree with azzalea too! I don't need a recipe. I really can make a casserole (or most other dishes) out of anything, and without a recipe. But, sometimes I use a recipe and that pizza casserole one was a good one :-)

Swiss Chicken Ham Bake

1/2 C chopped onion
2 T. butter
3 T. flour
1/2 tsp. salt
1/4 tsp. pepper
1 3 oz. can sliced mushrooms (I like to saute fresh)
1 C light cream
2 T. dry sherry (do not use cooking sherry)
2 C cubed cooked chicken or turkey
1 C cubed cooked ham
1 5 oz. can water chestnuts, drained and sliced
1/2 C shredded Swiss cheese
1 1/2 C soft bread crumbs
3 T butter, melted

Cook onion in the 2 T. butter until tender but not brown. Blend in flour salt and pepper. Add undrained mushrooms, cream and sherry. Cook and stir until thickened. Add chicken, ham and water chestnuts. Pour in.to 1 1/2 qt. casserole, top with cheese. Mix crumbs and melted butter and sprinkle around casserole. Bake in hot oven (400) until lightly browned about 25 minutes. Can put together the day before and refrigerated or make ahead and freeze. Serves 6 It's a really good recipe! I've made it many times for luncheons.

That pizza casserole looks good. It looks like it makes a lot. I make try that for supper.

Here is a really easy casserole. (See link.) It is a glorified mac 'n cheese dish. It is yummy and my kids sometimes make this for supper when they are in a cooking mood. If you put cheez-its or some other crushed cracker on top, it is extra good. Also, I vary the cheese based on whatever I have on hand. I particularly like a swiss/sharp cheddar combo.

This is always at our potluck luncheons:

Jiff cornbread casserole

15oz. can cream style corn
11oz. can whole kernel corn (drained) (1.5 cups of fresh corn from the cob makes it taste
phenomenal)
2 eggs
1 cup sour cream
8.5 oz. package Jiffy corn muffin mix (can use other muffin mix)
1/2 cup butter, melted
1 cup shredded cheddar cheese
Instructions

1. Preheat oven to 350 degrees. Grease an 8�~13 inchglass casserole dish.
2. In a mixing bowl, combine cream corn, whole kernel corn, eggs, sour cream, muffin mix, and butter. Pour into prepared casserole dish. Bake in a preheated oven for 30 minutes or until lightly brown.
3. Remove from the oven and sprinkle cheese over the top.
4. Return to the oven for 15 minutes or until the center is firm.
**Option: If you like a southwestern flavor, add one small can of drained, chopped chilis.

**Option: If you like a more gourmet slant, keep out the cheddar cheese and change it up with about half a cup (no more) of crumbled bleu cheese over the top.

I'm another "no recipe needed" for casserole gal. I throw noodles and whatever veggies I have left over into the pot. Last night I took the leftover pot roast & gravy and tossed with carrots (precooked them) and some peas and chopped up some fresh spinach that was getting "soggy" and waa-laaa...it was like a beef pot pie casserole. My dh LOVED it. That is how I got my kids to eat veggies when they were little; disguised them in a casserole...or hot dish as you call them. :)

I make one similar to the Swiss chicken one above but only use the chicken breasts w/ a slice of Swiss cheese on top, a can of cream of chicken soup mixed with 1/4 c. milk, and the Pepperridge Farm stuffing on top. Very simple and very good. Now that I've read her recipe I might add the mushrooms, but I don't think the ham sounds good w/ it. I made this for my step GD this week and they loved it.

Actually, the ham is great with it.

Here's the one we learned when living in MN:

make mac n cheese
Brown ground beef and drain fat. season with black pepper. Add salt if you aren't using boxed mac n cheese.

Mix beef and mac together. Mix in a few "glugs" of barbecue sauce.

Voila! A meal!

Georgysmom, thanks for the recipe. Perfect timing as I have some leftover ham and just bought a rotisserie chicken. Sounds delish!

I like one of the following:

*Ham & Potato Casserole: sllced ham, white sauce, cooked sliced potatoes, onions. Layer while ladeling white sauce on each layer.

*Chicken encliladas: basically make a white sauce, add sour cream & diced green chilies to it. Then roll diced cooked chicken in corn tortillas ladeling sauce in each. Place in rows in a casserole dish. Top the whole thing in cheddar cheese.

*Chile Rellenos casserole: line a casserole dish with cooked & seeded mild whole green chilies. In a pan cook 1 lb sausage, 1 lb ground beef & a diced onion. Place the meat filling on top of chiles. In a bowl whip 6 eggs, 1/4cup hot sauce, 1 tsp seasoning salt, 1 TBL. flour & 1/2 cup milk. Pour the liquid over the meat filling. Bake at 350 for 45 minutes till done.

You can't beat a creamy tuna noodle casserole in my humble opinion!

I have made a Dorito Casserole (or you can use Fritos or just tortilla chips) that was populer with teenagers and adults.

You layer chilli (canned is fine) and shredded cheese with Doritoes. End with a layer of chili and cheese on top. Bake until the cheese is melted and it is all bubbly. Top with shredded lettuce, dollops of sour cream, diced tomatoes, and sliced green onions. Or you can serve the toppings on their own so people can add what they like. I found we even liked it at room temp later.

Baked ziti is also good. I find it is a nice change from lasagne or just pasta with meat sauce. I layer cooked ziti with a red sauce made with bulk italian sausage (both hot and sweet mixed) rather than ground beef. Dollop each layer with ricotta cheese and sprinkle on mozarella. End with sauce and mozarella. Bake until bubbly and cheese is melted, even a little bit browned on the edges.

Cordon Bleu casserole. Brown cubes of chicken, add cubes of ham. Mix into a white sauce or alfredo sauce. Mix cooked shel pasta with the sauce mixture. Place about half in the dish, add a layer of cheese (swiss is traditional, I like a mix of montery jack and cheddar), add the rest of the pasta, and end with a layer of cheese. Once again, bake until bubbly and even a bit browned on top.

People also like variations on baked beans, and meatballs in gravy or sweet and sour sauce.

here are a few I have made for years that always disappear quickly.

Cheeseburger Pie
1lb. ground beef
1cup chopped onion
2cups chopped fresh mushrooms(optional)
1sm can sliced black olives drained(optional)
1/2tsp salt
1/2tsp pepper
1tsp.cajun seasoning
1cup shredded Cheddar cheese(or cheddar jack)
1cup milk
1/2cup Bisquick baking mix
2 eggs
Preheat oven to 400
cook ground beef and onion and mushrooms in a skillet, drain.
stir in seasonings. Spread meat mixture in large 9inch greased(pam)pie plate, sprinkle cheese on top.
Stir together the milk, eggs , and bisquick in a bowl, whisking till well blended. Pour evenly over the pie.
Bake 25 min or until knife inserted in center comes out clean, and pie is golden brown.
this is great served with fresh tomato slices on top, and sour cream.
the meat can be changed to cooked chicken pieces or ham.

Chicken Enchilada Casserole

3 T. vegetable oil
1 medium onion, chopped
1 green bell pepper, chopped (or use small can of green chilis)
1 lb. chicken breast meat, cut into bite-size pieces
1 clove garlic, minced
1 pkg. taco seasoning mix
10 corn tortillas, torn into fourths
2 c. shredded Cheddar cheese or Mexican cheeses divided
Enchilada Sauce (1 can )
Preheat oven to 350� F.

Heat oil in large skillet. Cook onion, bell pepper, chicken and garlic, stirring occasionally, until tender. Remove from heat.
Stir in taco seasoning mix and mix until chicken pieces are well coated.

Spread a thin layer of enchilada sauce in the bottom of a 9x13-inch baking pan. Layer half of tortillas, chicken mixture, enchilada sauce, and cheese. Repeat another layer, ending with cheese.

Bake, uncovered, for 20 minutes or until heated through and cheese is melted.

Serves: 6

One of our all time faves

MEXICAN CASSEROLE
2 lbs. ground round
1 small onion, chopped
1 bell pepper, chopped OR use 1 small can chopped green chilis if you wish
1 can stewed tomatoes
1 can cream of mushroom soup
1 envelope Taco seasoning OR use mexican seasonings such as cumin, red pepper, chili powder to make your own mexican seasoning
1 clove garlic, minced
6-8 corn tortillas(I used more like 10 or 11 white corn tortillas)
1 lb. cheddar cheese, grated
*I added sliced black olives on the top layer
In a large skillet, brown ground meat with onions, peppers and garlic; drain. If using chopped green chilis, don't add them while browning meat. Add cream of mushroom soup, green chilis(if using them), stewed tomatoes and taco seasoning to meat and mix well; heat just to get mixture hot. In an oblong baking pan,(8x11.5 2qt) tear up enough tortillas to cover bottom of pan. Top with a layer of the meat mixture, a layer of cheese, and repeat to layer again. Top with grated cheese and bake at 350� for 35-45 minutes. Can serve with dollups of sour cream and salsa. Serves 6
