I'd like A Good Recipe for Zucchini in a Casserole

I'm looking for a good recipe using zucchini. I use one using smoked sausage, zucchini, cheddar, croutons and I think spaghetti sauce and it is pretty good. Do you have a favorite you would like to share?

I like to layer it with a layer of browned hamburger and onion, and a layer of mozzarella cheese, then pour spaghetti sauce on it. (not necessarily in that order).
I bake it for about 30 minutes at 350, it is fabulous!

Love this one. It's easy to increase this to make more.

1 lb lean ground beef
1 can cream of mushroom soup
1/2 cup sour cream
3 cups chunked zucchini (I make pretty big chunks)
3 cups barely cooked chunked potatoes
1 cup monterey jack cheese
Brown the hamburger. Season with salt, pepper, garlic powder and any other seasoning you like.
Drain and add to zucchini and potatoes.
Mix mushroom soup and sour cream together.
Mix all together in a bowl and add salt and pepper.
Pour in baking pan and top with more cheese.
Bake 375 for about 30 mins or until bubbling and cheese is a little browned.
( I boil the potatoes till almost done. Careful not to get them to done or they will fall apart. They will finish cooking in the oven)

As simple as this seems, it is absolutely delicious!! IF there is any leftover, it freezes well. ZUCCHINI CASSEROLE 6 Cups Sliced Zucchini 1 1/2 Pounds Ground Beef 1 Onion, diced 1 3/4 Cup Instant Rice 1 Teaspoon Garlic Salt 2 Tablespoons Italian Seasoning 1 lb 8oz carton Small Curd Cottage Cheese 2 Cans Cream of Mushroom Soup 1 Cup Grated Cheddar / Mozzarella Cheese, more to taste Cook sliced Zucchini in a small amount of Water until tender. Be careful not to overcook, crisp is better. Drain and cool, set aside. Fry Ground Beef and Onion until browned. Add Garlic Salt and Italian Seasonings and Rice. Layer half the Zucchini in the bottom of a 9 x 13 pan. Spread the Meat / Rice Mixture of the top. Spread the Cottage Cheese on top of the Meat / Rice Mixture. Layer with the rest of the Zucchini. Thin the Mushroom Soup with 1 can of Milk and pour over all. Sprinkle the top with the Cheese. Bake uncovered in a preheated 350 degree oven for 1.5 Ã¯Â¿Â½ 2 hours.

here are a few I have made for years that always disappear quickly. Cheeseburger Pie 1lb. ground beef 1cup chopped onion 2cups chopped fresh mushrooms(optional) 1sm can sliced black olives drained(optional) 1/2tsp salt 1/2tsp pepper 1tsp.cajun seasoning 1cup shredded Cheddar cheese(or cheddar jack) 1cup milk 1/2cup Bisquick baking mix 2 eggs Preheat oven to 400 cook ground beef and onion and mushrooms in a skillet, drain. stir in seasonings. Spread meat mixture in large 9inch greased(pam)pie plate, sprinkle cheese on top. Stir together the milk, eggs , and bisquick in a bowl, whisking till well blended. Pour evenly over the pie. Bake 25 min or until knife inserted in center comes out clean, and pie is golden brown. this is great served with fresh tomato slices on top, and sour cream. the meat can be changed to cooked chicken pieces or ham. Chicken Enchilada Casserole 3 T. vegetable oil 1 medium onion, chopped 1 green bell pepper, chopped (or use small can of green chilis) 1 lb. chicken breast meat, cut into bite-size pieces 1 clove garlic, minced 1 pkg. taco seasoning mix 10 corn tortillas, torn into fourths 2 c. shredded Cheddar cheese or Mexican cheeses divided Enchilada Sauce (1 can ) Preheat oven to 350Ã¯Â¿Â½ F. Heat oil in large skillet. Cook onion, bell pepper, chicken and garlic, stirring occasionally, until tender. Remove from heat. Stir in taco seasoning mix and mix until chicken pieces are well coated. Spread a thin layer of enchilada sauce in the bottom of a 9x13-inch baking pan. Layer half of tortillas, chicken mixture, enchilada sauce, and cheese. Repeat another layer, ending with cheese. Bake, uncovered, for 20 minutes or until heated through and cheese is melted. Serves: 6 One of our all time faves MEXICAN CASSEROLE 2 lbs. ground round 1 small onion, chopped 1 bell pepper, chopped OR use 1 small can chopped green chilis if you wish 1 can stewed tomatoes 1 can cream of mushroom soup 1 envelope Taco seasoning OR use mexican seasonings such as cumin, red pepper, chili powder to make your own mexican seasoning 1 clove garlic, minced 6-8 corn tortillas(I used more like 10 or 11 white corn tortillas) 1 lb. cheddar cheese, grated *I added sliced black olives on the top layer In a large skillet, brown ground meat with onions, peppers and garlic; drain. If using chopped green chilis, don't add them while browning meat. Add cream of mushroom soup, green chilis(if using them), stewed tomatoes and taco seasoning to meat and mix well; heat just to get mixture hot. In an oblong baking pan,(8x11.5 2qt) tear up enough tortillas to cover bottom of pan. Top with a layer of the meat mixture, a layer of cheese, and repeat to layer again. Top with grated cheese and bake at 350Ã¯Â¿Â½ for 35-45 minutes. Can serve with dollups of sour cream and salsa. Serves 6 Those are all tried and true for sure.

This is a good one-pot dish made on the top of the stove. I add more rice, and cook it, and the chicken at the same time. Otherwise the chicken is cooking for about 45 minutes, which is unnecessary. Chipotle Chicken and Rice (Everyday Food) 2 tablespoons vegetable oil 8 boneless, skinless chicken thighs (about 2 pounds total) Coarse salt and ground pepper 1 medium red onion, thinly sliced lengthwise 3 garlic cloves, coarsely chopped 1/2 teaspoon ground cumin 2 canned chipotle chiles in adobo, minced 2 large tomatoes, diced large 1 cup long-grain white rice Lime wedges, for serving Chopped cilantro leaves, for serving (optional) In a large Dutch oven or heavy pot, heat oil over medium-high. Season chicken on both sides with 1 teaspoon salt and 1/8 teaspoon pepper. Working in batches, brown chicken on both sides, about 6 minutes total; transfer to a plate. Reduce heat to medium. Add onion and saute until soft, about 5 minutes, scraping up any browned bits from bottom of pot (if necessary, add a bit of water to release browned bits). Add garlic, cumin, and chiles; cook until garlic is soft and fragrant, 2 minutes. Add tomatoes and 1 teaspoon salt and cook until tomatoes begin to break down and release their juices, 3 minutes. Stir in 1 cup water and return chicken and any accumulated juices to pot. Cover, reduce to a simmer, and cook 25 minutes. Remove several pieces of chicken and stir in rice, making sure it is completely submerged in liquid. Replace chicken, cover, and cook until rice is tender and liquid has been absorbed, 25 to 30 minutes more. Serve with lime wedges and cilantro if desired

I had to make a different recipe because I did not have the cocoa powder or the raspberries. Going to the store today to get some, along with some other things I need. Meanwhile, here is the recipe I did make, which was also excellent. It is from "Taste of Home" Web site. Orange Zucchini Muffins - (makes 12) Ingredients 1 cup shredded zucchini 1-1/4 cups all-purpose flour 3/4 teaspoon ground nutmeg, divided (I just used 1/4 tsp. in with the batter. Did not do the topping) 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon ground cinnamon 1/4 teaspoon salt 2 eggs 3/4 cup packed brown sugar (I used 2/3 cup) 1/3 cup canola oil 2 tablespoons orange juice 1 teaspoon grated orange peel 1 teaspoon vanilla extract 1/2 cup raisins 1 tablespoon sugar Directions Squeeze zucchini until dry; set aside. In a large bowl, combine the flour, 1/2 teaspoon nutmeg, baking powder, baking soda, cinnamon and salt. In another bowl, whisk the eggs, brown sugar, oil, orange juice, orange peel and vanilla. Stir into dry ingredients just until moistened. Fold in raisins and reserved zucchini. Fill paper-lined muffin cups two-thirds full. Combine sugar and remaining nutmeg; sprinkle over batter. Ohhhhhhh, make zucchini bread - it's delicious! I use a basic banana bread recipe and just use zucchini and cinnamon in place of the bananas - ummmmmmmm!!!

I 2nd the Zucchini bread....And I also add lots of raisins and nuts.....Mouth watering just thinking about it....Might have to bake some today.....

Thanks for posting recipes, I am now getting overwhelmed with zucchini! Yes, I have a good recipe for zucchini cake, it uses 3 cups of zucchini. I look for recipes that use the most zucchini, ha, ha. Keep on posting those recipes!

About the only way I like zucchini is when they are quite small.........sliced and sauteed with onion slices. I do love them that way.

We like them cut in 1/2's or 1/4's lengthwise....then put EVO on them with some spices of your choice,I use oregano,parsley,salt & pepper.Grill with the cut side down for a bit,then turn over,put some parmesan cheese on and grill til done.Yum!

I made this the other day and it was delicious!...

I have no name for this recipe..my DD's friend told her about it and then, DD told me how to make it...

Cut a large zucchini in half and scrape out the seeds.

Brown some Italian sausage, drain, and place in the center of the zucchini pieces.

Pour on top of the sausage..some cocktail sauce.

Bake in oven until zucchini is tender.

Then, melt some cheese on top and serve.

Parmesan Baked Zucchini and Tomatoes

A recipe is merely words on paper; a guideline, a starting point from which to improvise. It cannot pretend to replace the practiced hand and telling glance of a watchful cook. For that reason feel free to stir your own ideas into this dish. When you cook it once, it becomes yours, so personalize it a bit. Add more of an ingredient you like or less of something you don?t like. Try substituting one ingredient for another. Remember words have no flavour, you have to add your own!

Ingredients:

â¢ 8 x plum tomatoes, sliced one-quarter-inch thick
â¢ 5 x onions
â¢ 1 cup grated Parmesan cheese
â¢ Olive oil
â¢ Salt and pepper
â¢ 4 x zucchini, sliced one-quarter-inch thick, on the diagonal
â¢ 1 tbsp dried oregano

Directions:

1. Preheat oven to 375Â°F.

2. Place a large skillet over medium-high heat and pour in oil. When it's hot, add onions and salt and pepper. SautÃ© until the onions are softened and beginning to caramelize. Pour into the bottom of a 9" by 13" baking dish.

3. Begin layering tomato slices along the left side of the pan to form an overlapping row. Overlap zucchini slices along edge of tomato row, and repeat alternating tomatoes and zucchinis, adjusting as necessary until the pan is filled.

4. Sprinkle with salt and pepper, oregano and grated Parmesan and bake for 30 minutes, or until top is golden and juices are bubbling.

This was just in the morning paper and sounds pretty good....

Zucchini Bake
4 small zucchini, diced (about 3 cups)
2 cups (5 1/2 ounces) club cracker crumbs
2 tablespoons butter
3 eggs
1 small onion, grated
1/2 cup 2% reduced fat milk
1 cup shredded Cheddar cheese
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup grated Parmesan cheese

Preheat oven to 350 and grease a 9 inch deep-dish pie pan or baking dish.
Bring 4 cups water to a boil and add zucchini. Reduce heat and simmer, covered until tender...Drain well

Press cracker crumbs on bottom of prepared pan to form a crust. Dot with butter and then spoon zucchini on top.

Whisk eggs until fluffy and stir in onion, milk 2/3 cup Cheddar cheese, salt and pepper. Pour over zucchini and sprinkle with remaining 1/3 cup Cheddar and Parmesan...

Bake, uncovered for 35 minutes or until golden on edges....
Serves 6-8
