I'm on the pumpernickel bandwagon, somewhat against my will. Lars you have a [insert adjective] effect on me or there must be something in the air compelling me to put up a batch. I used my bread machine's recipe, printed below (same machine as Annie's IIRC) but I think it would have done better with half the amount; it was struggling to knead and after I bit I took it out to adminster a 'hand job' (go on have fun with that). I was also worried about the small amount of yeast but it rose quite well. I would have liked to have given it more time but that wasn't on my schedule.
Baked in two regular glass loaf pans...I didn't wait for them to cool, as you can tell by the slightly doughy look on the cut one.
My folks are visiting and they declared it very very good. I'll see what DH says, he is my discerning taster. The kids like it....I don't! What can I say.
Zojurishi Pumpernickel Bread
1 2/3 cup water (actually I made an espresso and topped off with water)
2 1/3 cup bread flour
1 cup whole wheat
1 cup rye (whole rye)
3 Tbsp molasses
1.5 tsp salt
2 Tbsp oil
1/4 cup cornmeal
calls for 2 tsp instant coffee but I left that out with the espresso
2 Tbsp unsweetened cocoa
5 Tbsp vital wheat gluten
2 rounded tsp active dry yeast
I added two drops of Boyajian orange oil heh heh
Toss in the bread machine and hit 'play'
At the beep, tossed in an eyeballed 1/2 Tbsp caraway seeds
