Pumpernickel Bread Recipe

Kathleen over in the What's For Dinner thread asked if I'd post this, so I thought I'd do it here so it didn't get buried in the thread.

This is a fabulous dark bread, moist and tender. Perfect for sandwiches, spread with herb butter or to cut in wedges to accompany a bowl of soup.

As usual with a bread machine recipe, be around during the first kneading to check if you need more water or flour. Depending on the weather and if my flours are straight from the freezer, sometimes I've had it too dry and others too moist, so peek in after a few minutes of kneading.

Black Forest Pumpernickel

-recipe from Bread Machine Magic Book of Helpful Hints

1 1/4 cups water

1 1/2 T oil

1/3 cup molasses

1 1/2 t salt

1 1/2 c flour (I use KA regular unbleached)

1 cup rye flour

1 cup whole wheat flour

2-3 T vital gluten, optional (I usually use it and/or some potato flour)

3 T cocoa powder (I use Double Dutch Dark from King Arthur)

1 T caraway seeds

2 t yeast (I use instant active SAF)

Place all ingredients in bread machine and press dough. When cycle ends, shape into either one large or two small rounds or whatever shape you fancy and let rise, covered for an hour or more (or less).... do you get the feeling that this recipe isn't very picky?

When I'm feeling fancy, I'll top with some seeds or oat flakes. Slash a few cuts before baking.

Bake at 350 until done and allow to cool at least an hour before slicing.

Enjoy!

Grace
