Sure Deborah but it is NOT low fat by any means but it is good!
Strawberry Bread  Makes 2 loaves
3 cups flour 1 tsp. baking soda 1 tsp. salt 1 TBS. ground cinnamon 2 cups sugar 4 eggs, beaten 1 1/4 cup vegetable oil 2 10-ounce packages frozen strawberries, thawed (I use fresh after I come back from picking)
Mix all ingredients and pour into greased & floured loaf pans and bake for 55-60 mins. at 350.
NOTE: Excellent for freezing (I wrap in tin foil and then put in ziplog freezer bags).
And...since I was looking at my bread file - this is one of my favorites for when I pick apples.
Praline-Apple Bread (Source: BHG)
2 cups all-purpose flour 2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 cup sugar 1 8 oz. carton sour cream 2 eggs 2 teaspoons vanilla 1 1/4 cups chopped, peeled apples (I normally use fresh picked Granny smith or sometimes a combination of what apples I pick) 1 cup chopped pecans 1/4 cup butter 1/4 cup packed brown sugar
Preheat oven to 350º F. Grease the bottom and 1/2-inch up the sides of a 9x5x3-inch aluminum loaf pan (donÂt use glass, it will not set up right). Set aside. In a bowl stir together flour, baking powder, baking soda and salt.
In a large mixing bowl beat together sugar, sour cream, eggs and vanilla with an electric mixer on low speed until combined. Beat on medium speed for 2 minutes. Add flour mixture to sour cream mixture, beating on low speed until combined. Stir in apples and 1/2 cup of the pecans by hand. Spread batter in the prepared loaf pan. Sprinkle with the remaining pecans; press lightly into batter.
Bake for 55 to 60 minutes or until a toothpick inserted near the center comes out clean. If necessary, cover bread loosely with foil the last 10 minutes of baking to prevent overbrowning. Cool in pan on a wire rack for 10 minutes. Remove bread from pan.
Meanwhile in a small saucepan combine the butter and brown sugar; cook and stir until mixture begins to boil. Reduce heat and boil gently for 1 minute. Drizzle brown sugar mixture over top of bread; cool.
Yield: "1 loaf"
NOTE: This bread also tastes very good without the pecans if you so choose (but then technically it would only be Apple Bread).
wizard I use them plain (unsweetened). The strawberries I pick are sweet enough on their own plus the 2 cups of sugar that is going into the recipe. I don't like too sweet (but my husband...well Mr. Sugar tooth can't get enough). LOL!
