out of lurkdom - what can you freeze and best way

We always try to buy organic, but since recently moving to a small town the grocery choices doesn't have as much available as we'd like in the produce and meat areas (though our store still amazes me in that it carries a lot).

We are lucky though that there are several farms in the area where we can get organic produce, meat, poultry and eggs.

The question I have though since a lot of produce is seasonal would be what can I freeze and what is the best way to freeze meat and produce so we can stock up?

I'm sure I can freeze peas, broccoli, blackberries, pecans, corn, and meat, but what is the best way to keep it good in the freezer and how long do they last.

Can I freeze onions, asparagus, shallots, celery, peppers? Any greens? If so how?

What are other things that can be frozen that I might not think could be?
