Comments (20)Asaf, I find that learning when to harvest any variety of eggplant comes with a little experience, and watching the fruit for appearance. Once the fruit begins to grow, the skin will become glossy. Glossy, shiny fruit tastes best. As it matures and reaches full size, the skin will loose that glossy, shiny appearance, and will begin to dull. The dullness is a sign that the seeds are developing, and the taste will not usually be as good as those with a shiny skin. If left on the plant, it will begin to develop a yellowish, brownish color (color changes vary by variety.) The color change is a sign that the seeds are developing and the taste will become bitter. So, by keeping watch on the fruits as they grow, you'll notice that one day they will still be shiny/glossy, and the next day they will begin to become dull. I like to harvest while the fruit is still shiny, but it's just beginning to become dull. When you get experience with a certain variety, you will know when a fruit has reached it's optimum size, but the skin still has that shininess. Overall, as said in comments above, regardless of variety, it's not size that tells the grower when to pick. It's the shine. One fruit on a single plant could be 3", another could be 8". Eggplant has an average size depending on the seed and variety type, but fruit size is very variable... even on the same plant. I hope that helps....See Morehow do you know when eggplant are ready?
Comments (2)As Dave stated, eggplant are used as immature fruit. They can used at anytime up till they lose their sheen. As they ripen, they get pithy and seedy. You need to know the cultivar, they range in size from golfball to football size. Comments (2)Well actually, I don't usually do the salt water with home-grown eggplants as I find they do not have the bitterness at all. Much better that way than store bought. Comments (2)Well I went out and pulled off the dark brown/black ones that have dried out. Cracking open the shell was a lot like cracking open some peanuts. Anyways, the beans that came out were perfect. I still have the original batch of soybeans from the asian market. My grown ones look almost exactly the same. The only difference is that mine are just not quite as fat. Also I'm growing some mung beans. Same deal there, I pulled off a dry pod and cracked it open. The beans look the same as the bag of mung beans I grew them from. I'm still amazed I got any beans at all from these plants. I mean I truly treated them like crap. They were not at the edge of my balcony but close to my door. So they only got direct sunlight for about 5 hours a day. The stuff at the edge get 8 or 9 hours. I grew them in crappy $4 for 40 pound "organic" potting soil. No fertilizers added or anything. I really haven't been very diligent with watering them either. These bean plants never had any good looking leaves. They've all been full of brown spots and frayed edges. I've built one of those earthbox type self watering containers and have a tomato plant and basil plant in it. They've grown so quick and look so healthy. I'm going to build some more and I want to try a soybean plant in there to see how it does when it's treated nice....See Morelindac
