I found a Rick Bayless recipe that I want to make - Impossible Cake. It's a chocolate cake with a flan layer on top, topped with cajeta. Most of the (seemingly)authentic recipes I found call for cajeta, which I have never tasted. I have a real aversion to all things goat; to me chevre tastes like goats smell - not a good thing.
So is there a big difference between cajeta and dulce de leche? Is the cajeta tangier or less sweet or would you consider them interchangeable?
