Tricia, about jumbo muffin pan meals...

Did you ever get a chance to try out freezing meal-sized portions in large muffin tins? I'm interested in your experience with pasta dishes. Last week my kids and grandkids were over for Sunday lunch, and I made a gigantic casserole of baked ziti. It was so good that my husband & I ate the few leftovers that night for dinner too. I could cut the recipe in half, but it still would make a lot. I know I could portion it out for freezing after baking. But I wondered if the jumbo muffin idea would work well with a pasta dish.

Do you just spray the muffins tins with Pam? Or a smear of shortening? Have you ever used cupcake liners sprayed with Pam? I guess I'm wondering how hard it is to remove the pasta once it's frozen.

Anyhow, any tips would be helpful. Thanks!
