Not that I'm aware of-- however Trader Joe's had a delicious uncured ham around Thanksgiving time. It wasn't salty and I'd definitely buy it again!

Thank you! I am aware they carry hams at Thanksgiving but want to order/buy some country ham piece packages for my beans now. Although with Easter coming up I may need to look again.

Chase, you are right... pots are thin. And they get a little thinner each time I scrub them! I wish my waist line (but not hair!) would take a lesson from them! I looked and looked for something called a flame tamer tonight. I went to Target, Publix, Wal-mart, Lowes, and Winn-dixie. None of them have such a thing... I looked in the pots and pans, in the gadgets (potato masher, drip pans, knifes), and in the grill sections. I wonder if this is some cooking forum conspiracy... am I on candid camera looking for something that doesn't exist? OK, I know they exist because I googled them (maybe just not in FL!!). I'll try Linnen's N Things tomorrow. I also had a fleeting thought wondering if the soup could be salvaged. I decided that the answer was no... I started to ask here and then changed my mind. Best to start all over. I'm going to spend my new car fund on peas if this keeps up... I bought a new bag tonight and it was 64 cents! Highway robbery ;-P

Whoa, Suero, that eggplant app sounds amazing! I have to be honest and admit that is something I am more likely to make for lunch instead of a party...more for me :-) I love apples and pears, garyfx! I'm trying to put together a menu that doesn't require a fork... Any recipes involving those fruits to share? I've also thought about using a tart pear paste with the Brie instead of fig. Holly Kay and Bumble---- like the idea of asparagus in phylo. What length of asparagus spear? Any sauce or purÃÂ©e or anything else in the phylo aside from Parmesan? Is it dry? Mtnrdredux: we make champagne cocktails often, usually just making them up as we go along. (When my mother tells me she's bringing a new recipe to try when she comes down to spend the weekend she's almost always referring to a new drink, preferably with champagne or grey goose :-). We have that particular cocktail at holiday parties because it has a festive look from the green lime and red cranberry and a gorgeous color from the pomegranate juice. Also it's easy to make a non alcoholic mock-tail that looks just the same. They can be made one at a time two parts champagne to one part p juice, squeeze of lime and a frozen cherry-- or if I've had time, a couple of them strung on a holiday toothpick. Or you can mix up a batch like punch and drop in the lime and cranberry as the glasses are filled. You can use prosecco for similar results and if we have lots of people I do. But we buy champagne by the case and usually use that.

Is this thread being "wrapped up"? I agree that it has been very enlightening, but I have only just finished my third CD book, "Nicholas Nickleby", and I am about one third of the way into "The Old Curiosity Shop". What started with the proposal of this thread and the subsequent discussion looks to stretch indefinitely into my reading future. I want to thank everyone for sparking my interest - and I especially what to thank whoever it was who had the idea of general, individual readings of Dickens rather than concentrating on just one Dickens book. To supplement Ackroyd's Dickens bio, I also read Tomalin's. friedag, you are right that different biographers have different perspectives. Like carolyn_ky mentioned, it is obvious that Tomalin's big interest is "the affair" between CD and Ellen Ternan and thus Tomalin's biography is about half the length of Ackroyd's. Maybe that shows some of the differences between male and female biographers, because Ackroyd recounts the affair rather perfunctorily but includes much more detail of other aspects of CD's life. It could be, too, that Tomalin is more attuned to what interests female readers of biographies: relationships, factual and rumored. friedag, Charles Palliser's "The Quincunx" is said to be a Dickens pastiche. New Zealander Lloyd Jones wrote "Mister Pip" - the setting is Papua New Guinea and could be right up your alley! I have not read either of those, but I did read Gaynor Arnold's "Girl in a Blue Dress" and Richard Flanagan's "Wanting", both of which were inspired by CD's unhappy marriage to Catherine. All I can say about them is they are intriguing takes, but I found them quite maddening (angry-making, that is, not crazy-making).

Unfortunately there is no such thing as nitrate/nitrite free. Yet another marketing agenda.
It really just comes down to quality and that is so apparent.
They use vegetable processed nitrates...same thing pretty much.

I also bought the TJ ham during the holidays. It was superior all around and small...a treat. About the size of a softball and a 1/2. I don't remember the company that processed it, but i did look up the meaning at the time.

Some of the bigger processors may be using a fast and furious method that is not properly slow cured...why the smaller providers that do it long and slow just tastes better, and less 'salty'. I do soak mine for 24 hrs, and toss the first simmer water, then bake.

There is just no way to cure ham and bacon without salts and nitrites.
Uncured is raw pork.

I'm not at all being alarmist, just info to help choose the best product. Know the source and what is involved. It is just increasingly apparent to research.

And as Ruhlman often says in various forms,
"DonÃ¢ÂÂt let food marketers trick you. Eat natural, minimally processed foods. Eat a balanced diet. Cook it for yourself and the people you care about. Enjoy a little fat. Salt your own fresh food yourself."

Well, I am going to order from them, the awards are alluring anyway and they sell packages of pieces. The pork itself is not organic, however.

My mom says she doesn't like smoked ham, but other than smoking, salting, or sugaring, how DO you cure a ham? Don't say celery - that's still "salting" in my mind.

I bought a Smithfield in a silver package at BJ's last Easter and for Xmas, she liked those, I was pretty sure it was smoked but maybe milder? Their website doesn't show the packaging so I'm not sure. I guess I have to go to BJ's again to see if they're back for Easter. Just looking for a less expensive alternative (most hams are way too salty for us).
