How many Polocks does it take to make saurkraut balls? In our house, two! DH on the left, DS on the right, with the cheesy grin! This was about 10pm Friday! Most were made as per DMIL's recipe, but the last few had home made horseraddish added.

Saurkraut Balls

8 slices backo

1/2 c. finely chopped onion

1 clove of garlic, minced (not in my house!)

1 can (16 oz) saurkraut, drained

1/2 c. mashed potatoes

1 T. parsley

1 1/2 c. finely crushed corn flakes

2 eggs beaten

Oil

Fry bacon in large skillet crisp, drain & crumble. Pour off all but 2 T. fat. Add onions & garlic to fat in skillet. Cook & stir until onion is tender. Remove from heat, stir in bacon, sauerkraut, mashed potatoes & parsley.

Drop by rounded teaspoonfuls onto waxed paper lined baking sheet. Gently form ball shapes. Cover with waxed paper or plastic wrap, refrigerate until firm or overnite.

Dip sauerkraut balls in eggs. Roll in cereal. Heat oil to 375°, fry until golden brown about 1/2 min. Drain on paper toweling. Serve hot. Can be fried 24 hrs. in advance and reheat in 400° oven about 10 min.

Note: dredge in bread crumbs, dip in egg, dredge in cornflakes works best for us.

Note: These freeze nicely. Reheat in oven as above, or deep fry again.
