Prep: 20 minutes plus rising Bake: 20 minutes Makes 2 loaves, 12 slices each 1/4 cup warm water (105 to 115 degrees F) 1 package active dry yeast 3 teaspoons granulated sugar about 3 1/2 cups all-purpose flour 1/3 cup unsweetened Dutch-process cocoa 1/3 cup packed brown sugar 1 3/4 teaspoons salt 1 cup freshly brewed coffee, cooled until warm (105 to 115 degrees F) * 4 tablespoons butter or margarine,softened 1 large egg, separated 3/4 cup dried tart cherries * 3 squares (3 ounces) bittersweet chocolate, coarsely chopped * 1 teaspoon water In cup, combine warm water, yeast, and 1 teaspoon granulated sugar; stir to dissolve. Let stand until foamy, about 5 minutes. Meanwhile, in large bowl, combine 3 cups flour, cocoa, brown sugar, and salt. With wooden spoon, stir warm coffee, butter, egg yolk (cover egg white and set aside in refrigerator), and yeast mixture into flour mixture. In bowl, with floured hands, knead several times to combine well. Turn dough onto lightly floured surface and knead until smooth and elastic, about 10 minutes, working in enough of remaining 1/2 cup flour just to keep dough from sticking. Knead in cherries and chocolate. Shape dough into ball; place in greased large bowl, turning dough to grease top. Cover bowl with plastic wrap and let rise in warm place (80 to 85 degrees F) until doubled in volume, about 1 hour 30 minutes. Punch down dough.Turn dough onto lightly floured surface and cut in half; cover dough and let rest 15 minutes for easier shaping. Shape each dough half into 5-inch ball. Using the sides of your hands, tuck sides of dough under to meet in center. Rotate and repeat to form taut ball. Place balls, 3-inches apart, in opposite corners of ungreased large cookie sheet. Cover and let rise in warm place until doubled, about 1 hour. Preheat oven to 400 degrees F. In cup, beat reserved egg white with water; use to brush tops of loaves. Sprinkle loaves with remaining 2 teaspoons granulated sugar. With serrated knife or single-edge razor blade, cut shallow X in top of each loaf. Bake until loaves are crusty, about 20 minutes. Transfer to wire racks to cool.

Great site Mooquack. Worst soup. Dad made a big pot of soup, poured it into a container and put it in the fridge. Filled the pot with hot water and left it to soak. Mum came along soon after and thought ah, soup's ready, still warm, I'll just bring it back to the boil and we can have some for lunch. A few minutes later we were summoned to the table. At first my complaints about the taste were met with the suggestion that it just needed more salt. Luckily Dad finally agreed that it was a little bland and went to the kitchen to investigate, at which time the source of our "soup" was discovered.

It's like my friend's mac and cheese. The best I've ever tasted, but so rich you can only eat a spoonful (which is good because you should only eat a spoonful). I love custards, and make bread pudding with 2% fat milk, eggs, no butter and only a little sugar. :) It's really good! So, Fawnridge, is this your declaration against going non-dairy? Boyohboy, don't I agree on the American Processed Food thing, read that ingredient list and some of it can't even be pronounced and probably shouldn't be consumed! I have, however, eaten horse. Back in 1973, there was a PBB poisoning of cattle in Michigan. Several thousand pounds of fire retardant was accidentally added to livestock food. After a lot of cover ups, finger pointing and denial, it was determined that the feed was contaminated. The government said there were only two disposal sites, but later investigation turned up many more throughout the state. All health departments in the state were contacted and only two responded. In the burial pits; 33,000 cattle, 1.5 million chickens 1,470 sheep, 5,920 hogs, 865 tons of feed, 17,900 pounds of cheese, 2,630 pounds of butter, 34,000 pounds of dry milk and 5 million eggs were buried.These events were portrayed in the 1981 in the documentary "Cattlegate" by Jeff Jackson, the true-fiction film Bitter Harvest starring Ron Howard, and in the book "The Poisoning of Michigan" by Joyce Egginton. At first the deaths of the animals were blamed on the farmer's lack of care or skill. Yeah. After a year, the animals were culled. Most of Michigan still has PBB in their system and the USDA says that most of Michigan's farms are so contaminated that every product produced is contaminated with some level of PBB. Anyway, as farmers were bulldozing their livestock and livelihoods into pits, everyone was afraid to eat beef. Horse meat became very common. We were lucky, because we raised out own livestock feed and purchased none of the contaminated stuff. I remember some guy from Chicago stopping at the farm and telling Dad he'd give him 17 cents a pound for the whole herd. Dad told him that for 17 cents a pound he'd eat every damned one of them himself. So, anyway, nearly everyone in Michigan during that time has eaten horse meat. Annie
