Chocolate dipped macaroons

There is a store in Arlington, VA called Mother's macarrons that has delicious macaroons dipped in chocolate. Have you tried making macaroons - any recipes please?

I made these once a long time ago, and they were DELICIOUS! They fell flat and spread everywhere, but I think that was due to my lack of experience whipping and folding the egg whites. Come to think of it, it may be time to give them another shot. I'm sure you could easily dip them in any melted chocolate. Might be pretty if you dipped the bottoms only so that the coconut mounds still poked through the top.

I've made them before. They're one of my very favorite cookies! To dip them in chocolate, I melt about 1 cup of chopped semi-sweet chocolate with a teaspoon of shortening, and dip the bottoms of the cookies in the melted chocolate.

Coconut Macaroons

14 ounces sweetened coconut
14-ounce can sweetened condensed milk
1 teaspoon vanilla extract
2 large egg whites
1/4 teaspoon salt

Preheat oven to 325Â°F. Line 2 baking sheets with parchment paper.

Combine flaked coconut, sweetened condensed milk and vanilla extract in large bowl. Using electric mixer, beat egg whites and salt in medium bowl to medium-firm peaks. Fold 1/3 of egg whites into coconut mixture to lighten, then fold in remaining egg whites. Drop half of coconut mixture by level tablespoonfuls onto prepared baking sheets, spacing 2 inches apart. Top each with a second level tablespoonful coconut mixture. (I used a 2-tablespoon disher, using one scoop per cookie.)

Bake until golden, about 25 to 30 minutes. Cool macaroons on parchment paper. Slide metal spatula under macaroons to remove. (Macaroons can be prepared 1 day ahead. Store in single layer in airtight container at room temperature.)

Yield: about 22 cookies

I'm not sure that "taking over the garden" is exactly how I'd describe it but it certainly can be a pest popping up all over the place......and not all that easy to remove as it has a bit of taproot, similar to dandelions. I also agree that there are so many other, less troublesome, more attractive plants to focus on or include in one's garden :-) And if not specified by species, the hieraciums are listed as Class A (least offensive) noxious weeds, with only a few species listed as Class B or C, requiring more stringent control measures. They don't call them hawkweeds for nothing!! LOL!

Chocolate wont melt for dipping!

Like Jo, I find that white chocolate doesn't really melt very well, even with a little bit of vegetable oil. It stays too thick to dip, it's better for drizzling. I've done a couple of batches in the microwave and they've turned to stone, very nearly. Dark chocolate I have better luck with, I'm using Trader Joe's Pound Plus and it's worked well. I haven't found a white "chocolate" that I'm happy with, not even the wilton type melts or the white bark for melting. It just doesn't melt very thinly. I also agree that the new microwaves will heat too hot too quickly. I melted stuff in my old microwave without incident, but my new one is just too hot. Add the pyrex bowl and there's a recipe for disaster, ask me. Sigh. Readinglady was kind enough to send me her Farberware double boiler, I don't think I've ever owned one. I use it for white chocolate, because it's so finicky, and it works as well as anything. So, Linnea, you are definitely not alone with this. Annie

I wouldn't use chips unless they are a fancy brand, say Ghiardellis ( say it because for sure I can't spell it!) I would toast the almonds first, put them on some of that quick release foil and melt some of that 60$ cacoa chocolate and drizzle over the warm almonds....then put the whole mess into a 200 oven and stir until all is coated....cool and break up. But....what do I know, I have never done that.... When a 3 year old has been bugging me, I usually cave and make decorated cutout cookies....and spend the next 3 days cleaning up! Linda c

C9pilot, what else would you call it? Hands polluted by chicken borne nasties are chicken hands, right? It's only chicken and eggs that make me turn on the auto-soap. It dispenses way more liquid than I need on its smallest setting, and if I don't turn it off, it likes to make puddles on the counter. I think it's actually trying to soap up a sunbeam, but sunbeams are notoriously insubstantial. I seem to be able to wash my hands without contaminating the whole kitchen after touching just about anything else germy, other than the danged chickens! I forgot above that I have some actual decor! It wasn't obtained as decor. They were gifts. I keep thinking I'll figure out somewhere to put them away, but they stay out in the window. I think there's a feeling that if I have to give them cupboard space that means that I like them and want to keep them, so even though I'm not all that fond of them, they remain. There's a decorative bottle of oil with stuff suspended in it, a shaped bottle with pasta, a mason jar with pink lentils and a set of copper and tin measuring cups which are cute, but never seem clean enough to actually use. Oh, and my spoon rest which my best friend gave me for my birthday when I was 10 or 11. I didn't know it was a spoon rest. I'm sure she just thought it was a cute dish. The grown ups wondered why she gave me a spoon rest though, and I've kept it by the stove since I've had my own stove, so I don't "see" it anymore, unless I have a spoon to set down. It's a great place to put the magnetic knob that operates my Gaggenau induction cooktop while I'm cleaning, too. (Hm... That reads funny. I clean the spoon rest too. Just don't notice it, because it's always there.) There are also usually pot holders and tea towels out, and in use.

It's the exact same recipe! How funny! Well, at least it gives me more confidence in the recipe and confirms that my first failure was all user error!
