Baking Eggs, Quiche, and Potato Crust ?

I'd like to bring a nice quiche type dish up to my vet's office tomorrow or Monday.

So, can you do a crustless quiche in one of those cheap aluminum pans that come with the clear plastic lids? Like a turkey pan but smaller. Is the bottom too thin for that? They are pretty flimsy.

I was also thinking about shredding some potatoes and frying them into large latkes, then placing in the pan overlapping and top with eggs. In that case I would use less milk than a typical quiche recipe calls for. Have you ever made a potato crust for anything? Just wanted your input before trying a tiny one.
