Slab Bacon Ideas

Hi All!

Went for a quick trip to Arthur Avenue in the Bronx to get some items for my sister's birthday dinner dinner. The smoked bacon at Biancardi's butcher shop caught my eye, so we picked up an 9-inch slab.

I've gotten some ideas to candy slices, thought it might be good in Pasta e'faglioli, pea soup, and other obvious uses, but am looking for some other ways to use the bacon. Any ideas/recipes?

I was thinking candied on a stick as a appitzer or a deconstructed BLT on a stick with a mayo type dipping sauce.. So jelous love Arthur Avenue!!!...but I mainly wanted to say HELLO SUE!!!!!!!!!!!!

Sory about my lack of knowledge here. Looks like I need to come up the learning curve on HVAC systems. I am looking to install an electric heat system with a heat pump and central air. I am asking how to run the vents, specifically in the first floor. Placement of unit, run of vents, etc. Since it is on a slab you cannot come up from under the floor. Also, this will most likely not be a permanant structure. I plan to rebuild within 3-5 years. The new house will be about 3000 square feet. I would like to salvage the units if possible. I understand this will be a challenge though. Thanks

Marble slab backsplash- Good or Bad Idea?

Thanks for the info! Enzaenza, we plan on doing the MSI arctic white quartz which looks like pure white from caesarstone as our countertops. We're either going to do the porcelain slab in statuario for the backsplash or white subway. I am one of those people who's still not sick of the white subway look but I don't think it's a great match with the Arctic white quartz. I think i'd need a more patterned counter for that like one of the faux marble quartzes.

Any ideas on removing set bacon grease out of Berber carpet?

I would dilute some dawn....about 4 parts water one of dawn...soak the grease...let it sit for a few minutes and then, blot the wet up with paper towels until no more moisture is on the paper when you press on the spot. saturate again with water and again blot up the wet until it is dry.. Another idea is a wet dry vacuum and Dawn...soak with a Dawn solution, and suck up with the vacuum....add water to rinse and repeat....then blot with paper towel. You just have to get that grease into solution and get it out of the carpet....my guess is it is deep into the padding and keeps coming again to the surface....keep trying and eventually you will get it all out.

That looks just beautiful! I'm so envious.

Some ideas - pasta carbonara, squash salad (see below), lentil salad - cooked bacon tossed with Puy lentils in a mustardy vinaigrette made with the bacon fat.

The squash salad is from Suzanne Goin's Sunday Suppers at Lucques. I've made this many times, gradually adapting it to my tastes.

1lb squash - kabocha is perfect, butternut also good
1/2 tsp thyme
1 Tbs olive oil

8 oz bacon, cut into thick lardons, more if you like a LOT of bacon
1/2 cup dried sour cherries or dried cranberries, soaked in a little warm water or sherry until plump
1/2 walnuts or pecans, toasted and chopped
1-2 Tbs mustard
3-4 Tbs sherry vinegar
4-6 cups salad greens - dandelion greens, arugula, escarole - something assertive
1/2 cup grated roncal cheese (I use Parmesan)

If using butternut, peel and cut into cubes, about 1/2 to 1" on a side. Kabocha doesn't have to be peeled. I cut into wedge-shaped slices, then cut slices into pieces about 1/2 -1" big. Toss with the olive oil and thyme and put into 400F oven for about 20 minutes, turning once or twice. The squash should show a little caramelization and be tender when done. Put into large salad bowl.

Cut the bacon into lardons, about 1/3" thick. Cook over medium heat in a skillet until some of the fat has rendered. The lardons should still be flexible, NOT crispy. Remove lardons, adding to cooked squash.

Pour off all but 2 -3 Tbs of warm bacon fat. Add mustard, vinegar. Whisk until emulsified. Pour over squash and lardons, add greens, cherries, walnuts and cheese and toss.

I make this as a dinner salad , not often because it's loaded with fat. Good bacon makes this wonderful.

Hot potato salad, carbonara, quiche, fried/cottage/homestyle potatoes, lardons for salads or stews, bean and bacon soup, beef rouladen, and now I want some bacon!

Hi, Sue, it's nice to see you again.

The bacon? I'd just slice it, fry it and eat it, first, then make something else, I love bacon, although bacon sprinkled with brown sugar is even better. Pig Candy, yum.

Carbonara also immediately came to mind and I love Peppi's idea of hot potato salad too.

Very nice looking slab of bacon, it wouldn't last long here!
