Oh my! My DH grilled ribeye steaks last night & they were out of this world. We acted like two teenagers in lust. I have never had such good steak. It melted in our mouths. I hardly chewed. They were only $5.99/lbs.

I've been cooking cheaper stuff...beans, cornbread, pastas. I don't know if it's because we hadn't had good steak in months, or if it was just perfect meat. Anyway, love COSTCO's Ribeye. Treat yourself if your close to Costco.

P.S. I also bought cheese imported from France. Double the cost of the Ribeye, but horrible tasting. It smelled & tasted like bad feet.

Misti, we just joined Sams Club and bought their beef tenderloin fillets, they were 6.99/lb. After reading your post I can't wait to grill them tonight! And I rarely eat beef! Gina

Misti I have always been pretty happy with Costco meat. I'm glad that you enjoyed your meal so much. Nothing better then a Ribeye on the grill and Ribeye is my favorite cut.

As a side note, if you have Safeway's in your area they sell Rancher's Reserve Meat and when their Ribeyes, NY Strip or Porterhouse's go on sale, I stock up. I can get them for $4.99 lb. and it is very good quality meat.

There is a form of high heat searing known as "Blackening" (not bronzing...which is a similar technique done at a somewhat lower temperature). The blackening technique was invented by a local Cajun chef....Paul Prudhomme. Properly blackened red fish is to die for. It is so good that Redfish actually became an over-fished species due to the country's high demand for this dish. Very restrictive fishing regulations had to be adopted to save this fish. Blackened rib eye steaks too are absolutely fantastic. You really have to put the heat to the pan to get a real blackened effect. Stainless steel pans will not work for true blackening of steaks. Only cast iron can take the heat that is necessary to do this properly. Cast iron blackens the steak while stainless steel pans "burn" the steak. Blackened is wonderful.....burnt is garbage. Some stainless steels when heated too hot also will develop a blue/gray stain on the pan bottom than cannot be removed from the pan. You sometimes see this type stain develop when a stainless pan is heated too long at a high temperature when nothing is in the pan. I have seen some instructions in the past that cautioned against heating an empty pan too long. I do not recall the manufacturer who had this caution in their instructions. Stainless steel surfaces also can act to catalyse the polymerization of certain oils. It is the composition of the metals contained in stainless steel that makes this happen. Ever put Pam cooking spray on one of your stainless steel pans only to have that pan develop an extremely difficult to remove stain?? Stainless steel turns PAM into polymers and is why you shouldn't use it on stainless. This is not to say that stainless steel pans aren't good. But from my considerable experience, when it comes to the high heat searing of steaks......cast iron is simply better suited. Dan

I don't eat steak much these days but I never buy sirloin to serve as steak I do buy it to make in a gravy with long slow cooking almost like a roast. For a good steak I go for a bone in ribeye, boneless ribeye, true porterhouse not tbone, or filet. I do not care for NY strip they are so hit and miss. I have found what they call chuck eye steaks in some stores and they are pretty decent they are from the same area as the ribeye but a lesser cut and not as expensive. I like to squeeze a lemon on the meat and let it set for a little while marinating in it, helps to tenderize it. The amount of marbling is really the key a steak with little or no marbling is not going to be as good or tender as one with it. Angus beef is one type that is known to have good marbling and is one of the reasons it is popular. Marbling improves flavor, tenderness, and keeps meat moist while cooking. Highest marbling = Prime beef. I don't pay the extra cost for something labeled Angus however. A lot of cattle has some Angus mixed in them. I look for good marbling and the feel and texture of the meat. Method of cooking makes a lot of difference!

WOW what a bargain! 12 lb imported Wagyu rib eye roast, 1/2 of 12 lbs is fat, the other half bones, 12 lbs for 3 lbs of beef meat. $999 for 3 lbs of beef! Let me run out quick and get some before everyone else does. :-) dcarch

Oh, sorry Lars for the confusion. I started an on-line shopping file back in mid March. NYTimes, Eater, Food&Wine, etc, all posted link-lists. Even Chowhound, eGullet, forums posting favorites. I decided to only post on-line ordering I was familiar with. Like Elmer, we could not get any delivery by mid March. I had one egg and half a stick of butter. 2 pounds of flour. Did not panic with a somewhat full freezer. Not having many choices did feel a bit sad but felt fortunate we had so much more than most. I did post back then we could keep healthy through next Thanksgiving. That was true but not what we found out to be mentally sane, 😂. NY became the global hot spot and 10 miles away from us was a USA hot spot. Organized our freezer awaiting a FreshDirect order of over 600, but only less than 200 arrived. Bummer. Then a fancy NYC wholesaler opened up to home delivery. Banked it, then they got backed up. Who has freezer room for 12 8pound pork butts. Or 20 pounds of ginger, 😂. (they have fixed that now somewhat). I can order one pound of blue cheese, many varieties, instead of a 12 pound wheel. There is a y-tube guy that visits stores like Aldi and Joes, WholeFoods, Costco, etc. He is in Chicago. Keto, but that covers meats. Annoyingly enthusiastic but good viral shopping by weekly store shopping. (Bobby, FlavCity). Kim, handle 'Wads' is adorable shopping Costco and Ikea. She did a hilarious video shopping all through Ikea last week. That is how I know my Aldi is not what it should be. My Costco was a mess but found out it was the flagship store and finally remodeled 4-5 years ago. (it was a mess). TJ's was a disaster but they doubled their square footage in a re-model a couple years ago. The moral story of this covid insanity, ?. We have more than ever in stock. Crisper drawer is beyond stuffed. Nothing goes bad. I check and sift through it daily. Eating better than ever and much cheaper than ever. Breakfast, lunch snack, is YOYO. Only dinner is talked about and planned. Even that often covers two days. Not at all leftovers. Makes a different meal day two. Or easy freezer meals forward.

I'll keep my eyes open as we have a SafeWay here. Ribeye is my favorite, but I have never tried Porterhouse.

Dang it. I've got a whole chicken and a huge corned beef brisket on the menu for the next four or five days, and you guys have me craving a big ol' ribeye! *shame on you*

Misti, I don't know if you saw my thread from about a month ago on Costco Beef. I've never had a bad piece of meat from Costco.

If you buy the whole loin/strip you can cut your own roasts and steaks and the price should be even better.

I LOVE their ground beef -- makes the best hamburgers in the world.

But, they cut their steaks (and pork chops) WAYYYY to thick. We got strip steaks from their at News Years and it was like eating a pot roast. Makes it difficult to grill.

At Sams they will custom cut your meat if you like, but not at Costco.

Yup yup we buy their rib eyes too. The best! I'll have to try their ground beef, that's one thing I've never bought from them.

We like to buy the whole loin/strip in the bag. My DH is good at cutting,wrapping and packaging them for the freezer. Just last week he came home from Winco with 2 big bags of ribeye @$2.99/lb. We cut and packaged them up and put them in the freezer except enough for dinner. DH put them on the grill and they were just heavenly. What could be better then a nice grilled steak, a salad, corn and homemade rolls?

Stir fryi, I don't think that they cut them thick enough. That is why I like to buy the whole loin and cut my own. For the grill we like our steaks at least 1 1/2 inches thick. Two inches is even better.

Caavonldy, I agree , nothing could be better. Unfortunately it will be 5 months before we will be able to get fresh corn around here.

Ann t, it never occurred to us that we could cut it from a roast. These steaks were about 1 1/2" thick. FABULOUSA! I'm going to start giving the meats a second look.

Caavonldy, corn on the cob sounds wonderful to me too. This past summer we put tin foiled corn on cob on the grill w/ Italian drsg, peppers, & onions & it was really good.

Stirfry-I'll get their hamburger from now on. I'll have to commit to separating it though. It comes in big packages.

Sorry, we didn't have corn on the cob, just regular frozen corn.Sigh...corn on the cob would be so good. Last year, we froze some of our corn on the cob, it was so good in the middle of winter. This last summer we didn't have much really good corn.
