Lars, I made your tahini-lemon sauce for falafel!

My daughter and her partner were visiting this week, and I made a vegetarian dinner that included falafel. Lars, your tahini-lemon sauce was a big hit!

This was the first time that I worked with tahini. I used the Joyva brand, which comes in a can. When I opened it, the paste had separated from the oil, and it was not easy to mix them together (the directions on the can simply say to "stir," but that was impossible). After struggling a bit (and making an oily mess on the kitchen counter), I estimated the amounts needed for the correct proportions of solid and liquid and let my small food processor do the mixing. Is there an easier way, or another brand that would be better to work with?

Anyway, with all the fresh ingredients (lemon juice, green onions, parsley, garlic, yogurt) and spices (cumin, cayenne, paprika), it tasted wonderful!
