Kathleen, your table kooks so cute and the treats you made are sure to please. Dinner looks real good too.

    Ann, Chateaubriand...yum.

Here's the recipe for the Crispy Orange Beef aka Spicy Orange Beef. I must have been half asleep...

    Spicy Orange Beef

    Allrecipes

    2 tablespoons vegetable oil
1 pound round steak, cut into
    thin strips on the diagonal
1/4 cup orange peel, cut into
    slivers
    1 clove garlic, minced
    1/2 teaspoon ground ginger
    2 tablespoons cornstarch
    1 cup beef broth
    1/4 cup soy sauce
    1/4 cup sherry
    1/4 cup orange marmalade
    1/2 teaspoon crushed red
    pepper flakes

    1. In a wok or skillet, heat oil over medium-high heat. Add beef strips 1/3 at a time. Stir-fry for 3 minutes or until browned, removing the done pieces to a plate lined with paper towels.
    2. Return all the beef to the wok. Stir in orange peel, garlic, and ginger; stir-fry 1 minute.
    3. In a medium bowl, combine cornstarch, broth, soy sauce, sherry, marmalade, and red pepper. Pour this mixture into the beef, stirring constantly. Bring to a boil over medium heat and cook for 1 minute. Serve hot.

I use fresh grated ginger and be careful on the red pepper flakes if you don't like hot. The marmalade doesn't really make this sweet, it just mellows the heat and intensifies the orange flavor.

Ann - I love bearnaise sauce. I could just eat it by itself with a spoon.

    Lovely pictures by everyone.

Here's my bunny cake for my daughter for tomorrow. I had to fight her to keep her from cutting it today!

the 200 series IMO are decent machines, not up to the 300 series for sure, but still good. The price is right thats for sure. I would only put a new engine in it if the rest is mint. You might be able to free it off. Take the head off and apply oil to the cylinder. Gently tap on the top of the piston with a block of wood and see if it moves. If the bore is scored up its a goner. If it doesnt move with taps from the wood, its probably a goner. Best idea would be to drop in a good used engine.

I have a Bernina Artista 180 and use the cardboard style for all my Embroidery projects. I found a great deal on a gross, the price was only 22.84 and 7.00 shipping. I have never tried the sideless or the plastic ones since I only got this machine about a month ago from my FIL it was my MIL's who passed away in Dec. She had already given me her old Bernina Deco 500 machine but this is so far above that one that I am having a ball embroidering everything in site! Here is a link that might be useful: Embsupplies

Questions about memory card for SE270D

    Q

Yes Mary, you are reading right. There are several softwares that allow you to download free or purchased designs from the internet to your computer. Then you transfer from computer to the 'cardwriting box/card' for using in your machine. The most popular is the Brother PED Basic that I mentioned above. It only writes .pes format, which is what the 270 uses, and can be bought...sometimes used, from ebay. Normally, you can find new there, as well as Walmart on line, Allbrands.com, and other sites. You may pay from $50to $100+. Then you can download a free software to change other design formats to .pes for your machine to use. There are many many free designs available and a good place to start is to join Sewforum.com. It is a forum for embroiderers, where you can ask questions, request someone create a design for you free or for fee. It is not very active now as the site is also on Facebook, but still, there are thousands of free designs still there. I hope I have explained-helped you. Good luck!

Which Card Reader and Software for Brother SE270D

    Q

    Comments (1)
You really need to talk with the Brother dealer...there are so many choices and you need to make sure you get the right one. As far as creating your own designs (digitizing) the Brother software - PE Design - is pretty expensive; also, you can't just import a picture from Photoshop and stitch it out on fabric. It's much more complex than that to get good results, and photo type designs are extremely dense and stiff when stitched out. There are other digitizing programs that are not as expensive as PE Design - Embird is one. I'd recommend an Internet search for home embroidery software and do some research on your own, but you really do need to talk to the Brother dealer so you get the right box, as they aren't cheap either! Pranjal, I was thinking about you the day you posted. So nice to see you back with such a good looking dinner.

We finished dinner at 9:00, a little less than two hours ago but I wish I had a lot of the food here, well not all at once.

After looking at Pranjal's biryani, Marigene's shrimp marinated in red curry, Ann's Mexican dinner and Nancy's orange beef, I realize that what I want is spice - lots of spice. That won't happen with Easter dinner but something spicy will be on the menu next week.

Tonight I made a grilled pizza, inside, it's snowing outside, and that was dinner. Just a pizza quickly eaten so we could get back to Easter eggs. It was good, lots of red pepper flakes over a little tomato sauce, lots of Italian sausage and mushrooms and some mozzarella. It wasn't the kind of spicy I'm craving though.

Nancy your hot cross buns look the best I've seen in years, and with mixed peel and raisins....just as I like them!

Kathleen you do such lovely festive tables! And those choco eggs look great.

Ann that's a lovely Chateaubriand dinner....and homemade sauce mmmm.

Pat what a great bunny cake! And aren't Marigene's cookies pretty.

Saturday we were out for lunch.....mine was a light half portion from the seniors' menu as I wasn't very hungry. It came with a really small bit of salad...that was okay, together with a mini pork schnitzel in mushroom cream sauce & rice; Wolf had leberkaese (a sort of a German meatloaf) with really good looking bratkartoffeln (potatoes similar to hashbrown) and egg.

Today was Easter Sunday and I spent part of the morning downtown to see a rather disappointing procession from the main church. There was no drama, statues or floats being carried.....that happened on Good Friday and I missed it. But there was a small procession which circled the plaza and the main streets downtown.

I've never seen so many tourists out though.....the streets were packed with older women carrying point & shoot-cameras and large men with heavy digital reflex cameras. I took my smallest point & shoot. The swimming pools (all six of them) at the Lido seafront were packed with bathers. One group of kayakers at San Telmo beach were putting on wet suits. I spent some time in the plaza and then came home and made baked duck thighs in orange-brandy-butter sauce with roasted veggies.

So that was Easter Sunday here in Tenerife. It was another sunny and warm day.

    Have a good week!

Monique, you know that you are welcome to snag any of my recipes. They are also in my cook book.

Sharon, your duck dinner looks very tasty. Orange Brandy. Yum Yum. And I love the look of your pork schnitzel with all that wonderful mushroom gravy.

Marigene, your cookies are beautifully decorated.

Pat your bunny cake is so cute. I can see why your daughter didn't want to wait until today to cut into it.

Sharon, thank you for reminding me, through your pictures, that the entire earth is NOT just one big frozen tundra. I see empty chairs by one of the pools, think I'll be there someday? The duck dinner looks good to me. Not something that I see often in the store but I do see many live ones in the lake.

Marigene, I love the way you decorated your cookies, very pretty colors.

I'm sure many are sick of looking at ham today but since I snapped a picture I'll go ahead and post it.

Ham, roasted asparagus and German potato salad.

We also had a salad and there were fresh strawberries for dessert.

    Nancy, I'll trade you.
    Marigene and Kathleen, pretty treats.
Pat, we made the Bunny last year. Looks good!

We had Roast Leg of Lamb with Garlic and Rosemary. Andrew loves it so I hold my nose once or twice a year - usually in the summer when he can cook it outside - LOL! The sides were good! Roast red potatoes, Asparagus with Vin Santo Vinaigrette (Giada), and my favorite Cucumber Salad. Carrot Cake for dessert (the second I baked since the first I used baking powder instead of soda). Oh, and we had Spinach and Artichoke Dip and Stuffed mushrooms for lunch - LOL. The pea soup and rolls were forgotten.

I know...when you saw the cake you were thinking...where's the Memories in Baking tag? LOL

Happy Easter everyone! There are so many wonderful meals and photos here to comment on---Darling Easter bunnies chocolate and coconut, luscious looking reubens that I'd love to devour, yummy hot cross buns and more!

I know I've been MIA for awhile, bear with me, life is very "full" right now between work, family commitments and social life. Cooking has been taking a back seat here, it's catch as i can and nothing worth posting about--it was so bad that Friday night DH came home to the empty house and noshed on hard salami and jarlsberg cheese! LOL However today I actually decided to do a nice breakfast while DH snoozed. I had thought to make a german apple pancake, but the apples were shriveled and old! So I made a more traditional pancake, some no nitrate bacon from WH which was really good and coffee/tea. I felt inspired to set the table in a Spring-like manner and made DH put the Sunday paper aside until after we ate! It was a good breakfast. I've been really remiss in making anything different for a Sunday breakfast w/o guests. I suppose half of it is my cranky tummy limitations and the other is a caloric or health restriction...sigh, it sucks getting older!

Dinner tonight was just going to be poof'd from both freezers but after returning home from a nice walk around the neighborhood I found that my freezers held one huge turkey, some ground meat, a bag of sweet & sour shrimp from TJ's, 6 frozen prawns and 1/2 lb of baby scallops. Nothing either of us really wanted to eat LOL
Dh liked the idea of scallops so I dropped into Gelson's and bought a lb of the large bay ones. I made the Bon Appetit recipe Coriander Seared Scallops with a hoisin sauce. It's a winning recipe and the scallops turned out perfectly. No real dessert, just a pack of Cadbury hard shelled chocolate eggs for me and some Amaretti cookies for DH.
I'm waiting to get caught up on some shows we Tivo'd but DH is insisting on watching some crummy movies on TBS. Ugh!

OK, so it's an odd combination but I'd like Ann T's Chateaubriand, Nancy's german potato salad, SharonCBs brussels sprouts and one of Marigene's cookies. LOL Oh, and some of Maggie's cake. Well, half a piece and then some of Pat's bunny cake too, LOL.

Supper? I was too darned full after dinner. In fact, it's the day after Easter dinner and I'm still not hungry, but I'd manage to force myself if I could have one of each of the above....

Yours looks cute, and I bet the little guy loved it!
Ann delicious looking Easter dinner...wish I had some leftovers today as we went to family.
Pat, that cakes brings back memories. Mine wouldn't eat coconut, so it had to be a choc bunny..

Marigene, your cookies are works of art! Love the colors..
Sharon, how beautiful the ceremonies look, as well as the food..

Annie, I wish I was still full from yesterday, unfortunately, we ate again tonight..Roast pork loin on the grill, baked potatoes and veggies..boring...

I agree with Shaun that the pictures look great (as usual). We have been eating leftovers and reusing leftovers to make other meals so nothing exciting to show (cleaned out the frig. for Easter dinner). Still busy on the reovations at my Mom's house. Easter dinner was wonderful with ham, seafood and all the fixings so had them for dinner tonight.

All the lamb and ham dinners look wonderful. We went to a big family dinner on Easter, roast lamb, roast pork, Italian sausage, Italian Easter bread, salads, asparagus, wild and brown rice and lemon meringue pies. I know I'm leaving something out. It was all good and there was lots of food. But 16 of us left very few leftovers. We had a lovely time. As usual Max did an egg for everyone, with names on the back. Here are a few.

We had ham last night, the one thing it seems we didn't have on Easter. I was solo tonight and just ate leftovers at my desk while I worked on tax prep. Max had a city council meeting.

I'm going to need inspiration for a quick dinner tomorrow.

Oh yum, everything looks so good. I just had au gratin potatoes on Easter but Stacy, your scalloped ones look really delicious, nice and creamy.

    Lee, Max's eggs are beautiful.

RR, I love sweet potatoes, is that what is there on the side of those chicken cakes, which also look delicious?

Ah well, here it was the last of the corned beef hash with an over easy egg. Not picture worthy even if I had thought to take one, but it was just what I wanted for dinner.

Stacy, can you post your recipe for scalloped potatoes? thanks! What's the difference betweeen scalloped and au gratin? Scallop has no cheese?

Everything looks so good! The eggs came out great, Lee, Max is very talented!

I love the chicken cakes, Marigene!

I'm too late to catch up, but all the ham dishes has given me a really big craving!

    last modified: 11 years ago

Carol, I'm not sure - lol. Maybe they were a little au gratin - as I added cheese curd??? :-)

I just peeled and thinly sliced about 3 or 3 1/2 lbs of potatoes and put in my new le creuset - added a bunch of chopped (well, pulled apart with my fingers because I didn't want "cubes") ham and half a large sweet onion - chopped in half and sliced thin. Sprinkled with S & P.

Separately, I melted 1/2 cup of butter and added about 1/2 (maybe a bit more) cup of flour til it was thick and bubbly - and added some whole milk and cream til I had almost filled my 2 qt saucepan. (I like them real creamy and not dry)

Cooked it til thick and mixed in with the potatoes. It just about covered them.

I baked them uncovered (stirring occasionally) for quite awhile at 350 (over an hour?) and then added some cheese curds and fresh chives and turned the heat up to 425 to brown. Just kept checking the potatoes with a fork to make sure they were done - and when they were, I turned it to broil to get the top nice and browned.

    They were excellent!

while not the most beautiful photo, this at least will give you an idea of how they looked coming out of the oven in the 5 1/2 qt oven.

Where to begin??? Meatloaf, Ravioli, Fish, Au Gratin and Scalloped potatoes, Bunny Cakes, Reubens, Cookies, hot Cross Buns.... Good Lord, it's no wonder I can't lose any weight! LOL

After the ham dinner for Easter we've just been grazing the past several nights. I think I am in a rut and REALLY, REALLY need for spring to get here and summer foods to become available!

Made a new recipe tonight, Lobster Bistreaux. I hada bag of frozen squat lobster in the freezer, so used it. All in all it was okay, not great. I think the texture of squat lobster was just not quite right for this recipe which is basically, lobster meat, garlic, roasted red peppers, spinach and white wine served over angel hair. I'll try it again but with regular lobster of shrimp and maybe a bit more garlic and seasoning. It was good, but needed something.

Hoping to grill something this weekend if Sunday's weather is nice.

Marigene your chicken patties look delicious, and so do your scalloped potatoes Stacy. That's one of my favourite way to do potatoes.

Those eggs of Max's are so pretty Lee! Reminds me that I haven't coloured Easter eggs since my kids were small.
It was always so much fun!

Yesterday we were out for dinner as I was too busy to cook. I had a salad followed by Cevapcici....those meat patties served with bratkartoffeln potatoes, and Wolf had pork goulash with red cabbage and boiled potatoes.
Weather had turned cold so we were wearing sweaters and feeling hungry.

Today I was again busy in the town and did a lot of walking around in a chilly wind by the sea to get to where I had to go after I'd parked the car. So I picked up a salmon fillet, frozen stirfry rice & veg, fresh broadbeans and squash and made a quick dinner when I arrived home.

I dredged the salmon in ground almond and sauteed it in a frypan. Dinner was ready in about 20 minutes. Then it rained the rest of the day. We're getting some of the cold air dropping down from Europe. But we sure needed the rain as it's been very dry.

Dessert much later was an orange juice-based 7-fruit smoothie shared in front of the TV.

Thank you all for the nice words about Max's eggs - I'll let him know you liked them

Sharon, your dinner looks delicious, I am now craving salmon with an almond coating.

Our dinner was done in about 20 minutes too. Ground beef and Italian sausage browned with some in onion in the PC. Then a little red wine, a layer of uncooked rotelle, some water and canned tomatoes in puree. Five minutes under pressure and the pasta was cooked perfectly and the flavors blended in the sauce. A little seasoning correction, some red pepper flakes and Italian herbs added. Individual servings put in little bakers, topped with parm and moz and browned under the broiler in the toaster oven. A side serving of petite peas and dinner was served.

I'm hoping to finish most of my tax prep by early next week and then have more time to spend in the kitchen.

Stacy, your scalloped ham/potatoes look so good. I haven't had that in such a long time.

Linda, the lobster dish sounds yummy....what not to like there!

Sharon, wish I could get my salmon so carmelized looking without burning it. And your vegetables always look so good. Do you steam them?

Lee, your pasta dinner sounds wonderful. I tried doing pasta in the pc once, and it turned to mush!

Deborah, I love vichyssoise, maybe that will be on the menu this weekend, haven't had it in forever.

Dinner last night was Tuscan garlic chicken; there was a breast left from the spicy chicken patties, so I sliced it into fourths. It is still my favorite chicken dish! For dessert I made tiramisu adding chocolate/hazelnut to half of the mixture and using Amarula to dip the ladyfingers instead of coffee. It came out pretty darned good...

Deborah your vichyssoise looks really good and that's a lovely photo too. I have the same problem with my DH....if it's called a soup then he thinks it should be hot lol. He will eat a cold gazpacho though. I tell him to think of it as a refreshing vegetable drink.

Marigene I bet the garlic chicken was good with the pasta and asparagus.

I forget who mentioned the other day that a family member made a delicious salad dressing from mashed avocado and blue cheese. It stayed in my mind and today I got both elements together and made that as a dressing with olive oil and vinegar over a mixed salad.
It was rich and delicious and we'll be having it again tomorrow, using a little more blue cheese than today.
Main dish was baked spicy chicken wing drumettes in a homemade sauce, with paprika oven chips. I put together a sauce with plenty of garlic, tabasco, soy sauce, honey, tomato sauce and pepper. It was good but still needed more kick, so I'll be looking for more ideas on how to prepare wings next time without using commercial BBQ sauces which I don't get here. I'll just have to experiment, but would love any suggestions.

It was cold and windy yesterday. Today there was bright sun all day but again we had strong winds.
Can't believe it's another Friday tomorrow. Have a good weekend everyone!

Sharon, I'd be happy with your wings and fries. I don't think I've ever seen you make wings before.

Lee, Max's eggs are works of art.

We had homemade Italian sausage with penne on Tuesday night. Last night was Beef Stew with Dumplings and tonight was Tex-Mex. Before leaving for work this morning I stuffed a pork tenderloin with roasted poblano Peppers, Monterey Jack Cheese, and rubbed the roast with fresh garlic and chipotle pepper. When I got in from work, I put rice on to cook, and while the meat was grilling, I made homemade corn tortillas. Heated up a can of black beans and seasoned them with garlic and cumin and made a fresh salad with tomatoes, onions, garlic, minced jalapeno pepper and cilantro. Dinner was on the table in less than an hour.

1/3 Teaspoon of Garlic Powder, Onion Powder
A pinch of Cloves , Basil and Oregano
    Black Pepper - to taste.
2 tablespoons of Brown Sugar and Maple or Pancake Syrup
2 Heaping tablespoons of Grape Jelly and Strawberry Jam
Smooth out the Jelly and Jam with a fork and mix well.

This may sound like overpowering sweetness but it is not.

I use a 9x 13 SS pan and lay some Sauce on the bottom.

Then I lay in the simmered Spare Ribs and spoon the Sauce on them.
If there is some sauce left over , save it for basting when the ribs are almost done.
I cook them in an electric range Broiler, set on Low,
Placed on a shelf about 8 inches below the burner.
They will cook in about 25 minutes. Test after 20 minutes
    Ummmmmmmeemm Gooooooooood !!!!!!!!

Dinners the last couple of nights haven't been very exciting, one night was bacon, eggs, home fries and last night was clean out the fridge...but I did bake some blueberry/coconut muffins.

That stuffed tenderloin looks wonderful Ann! And so does your chicken, Dixie.
I'll have one each of Terri's funnel cakes and Marigene's muffins with my coffee please.

Thanks Lou for your sauce recipe! I'll let you know how we like it if I can find those ingredients.

Yes Ann, I haven't made chicken wings before because they have just started appearing in one of our supermarkets. They're still more or less unknown here. For years chickens were sold only whole or in halves and not in trays of individual parts. It's only recently that we could even find trays of thighs or drumsticks. But this is the first time I've seen wings for sale.
Not much cooking going on here as we've finished up some leftovers and had bacon & eggs with fried tomatoes another day.

Saturday we were out at the Austrian restaurant and had: Wolf....chose Suelze, a cold sliced jellied pork. I felt like some salad so took chicken breasts on salad with a side of chips. Afterward we made a drive with the car for a recycle drop and then to a supermarket for some small shopping. We had coffee at home.

It's been raining a bit again at night.....we sure need it, and the garden is looking happy, as are the birds and the bees.

Included some macros from the garden taken over the past couple of days:
Rain on rosebud, jade plant bud, bee on osteospermum and brunsfelsia bud.

    Have a good weekend!

I made Stacy's scalloped potatoes last night, didn't have ham, cream or cheese curds on hand, but followed everything else and used evaporated skim milk and parmesan. Came out really tasting great but without the cream it wasn't saucy. The potatoes sucked up all the canned milk. Still tasted great. This I guess is sort of like a review at Epicurious, you know, I changed everything but loved the recipe! Thanks, Stacy, I'll make it again! The kids loved it, too!

Had it with grilled lamb chops with Ann T's Greek marinade for ribs, and some sauteed spinach! dessert was ices, it must be Spring, the Italian ice's guy is back open!

Trying something new for tonight, from Cooking Light this month, Mediterranean Fish Stew, if I can find halibut. Kids won't touch fish. Trying to change that and maybe in a soup they'll give it a try.

We had a nice day today. My sister and her husband came over and I made lunch for us.

We had Lima Bean Soup, Chicken Noodle Soup, Shrimp Caesar Salad and fresh Cuban Bread with roasted garlic. AND I remembered to take pictures!!

    Here's the bread and garlic

    Lima Bean Soup

    Chicken Noodle Soup

    Shrimp Caesar Salad

close up of the roasted garlic

I know you can't save garlic/oil. But how long can I safely save it?

Shaun, sounds like a great afternoon with your family! Food looks great! Love the board!

Found halibut, got the big kid to have some, he liked it, little kid wouldn't even taste. Larry didn't love it, he'd rather have fish in a pill, I liked it but would lots of red pepper flakes and more herbs to it next time. Served it with a fresh baguette from the bakery to sop up the soup. Nice lunch. Ordered in Gyro's and Falafel for dinner!

    Hi all --

    So many yummy looking photos!

Tonight I made half a turkey -- first time I had done that and it turned out great. Served with baked potato, gravy, and roasted green beans... A side benefit was that it made the house smell so good I was ready to chew my arm off about an hour before the turkey was even ready!

Shaun, your soups and salads look like they would be great and the salad very yummy. I love roasted garlic and I don't see any reason that your leftover garlic wouldn't last a week in the fridge.

Dishes, I'd gladly try some of your halibut soup! And some scalloped potatoes too!

Emily I can only imagine how wonderful the turkey made the house smell.
