Help, quick! How do I bake these pizzas?

Hi, friends -- I haven't been around much, but I need your help today.

Okay so this afternoon is our last performance of "Fiddler on the Roof." My husband and I play Tevye and Golde - it's been a blast - so we offered to host a cast party at our home. The Jewish Community Center generously offered to supply pizzas, and they sent them home with us after last night's show. But no instructions. We sent an email but they might not see it in time.

They are unbaked but not frozen. Very large. Seem to be "regular" crust. No toppings besides sauce and cheez.

At what temperature and for how long should we bake them? Right on the oven rack, right? I don't have pans that big, although I have a couple of cookie sheets almost big enough. I suppose I can use them as peels to get the things out of the oven. Any tips for that greatly appreciated, too.

Hi Gellchom. Good to see my swap partner. Congrats on your run of Fiddler.

Okay, get the ovens as hot as you can. Yes, sounds like right on the rack is what you'll need for them. Depending on the oven they can take anywhere from ten minutes to twenty. With no toppings and if the oven gets good and hot they shouldn't take long. Go ahead and keep an eye on them and pull them when the top looks brown and bubbly. With them on the rack you shouldn't have a problem with the crust getting done.

I agree, good and hot, I'd go for 450, probably, if I had to choose a number.

I never have luck cooking fresh pizza on the rack, the crust kind of droops down between the racks and the toppings "leak" onto the bottom of the oven.

I have taken half sheet pans, turned them upside down and put pizzas on them to bake that way, if you're a total klutz like me and can't manage to bake a pizza on the rack without making a huge mess...

congrats on the successful theater run and, as Coconut reminded me, Happy Passover.

I know about improvement but was in no shape to mix all that stuff in myself. Was lucky to get someone to rototill it for me. We ground up all the grass and everything, the grass was healthy. Then it took several months to settle down to level as it was mounded for months (and bare). I have all that stuff you mentioned, but it is too late to do the whole works. My idea of gardening is dig, chop it up as fine as possible, plant, then use Miracle Gro (not on my new roses). I just had 12 roses planted spaced out there, the horticultural student who did that for me thought the soil was ok and drained well. Thanks for the advice, will read the link tomorrow. I'll worry about the other seeds later, but you did give me an idea. Baby's breath grows in a huge mound if you are lucky, don't need a whole row of the stuff, so I can scoop the soil out a few places and replace with potting soil. BB you cover 1/8 inch which is a little better than surface sow. My peat I found gets crusty when dry even mixed with the potting soil, probably mixed in too much the last batch. Maybe if I throw in some more pearlite that will help. The potting soil holds moisture better than anything yet I've worked with, and then I can mist like you said, although if it heats up again, it will be like four times a day and not every other day because the surrounding dry soil will grab the water before I put the hose away so I'll water that, too. Thanks a lot for the help. Maybe I can get it a little better, not sure how now, don't have a composter but can dress it with something at some point. Just can't work it in, it will have to leach down and let the plants do the work, maybe throw leaves on there in the fall, plenty of those. I wish I could do everything exactly the right way, but I have to do most of it by myself and do well to get anything done. I think I'm having more rototilling done, and this time I'll throw that stuff on there during the process and let it get worked in that way. I didn't know any better before. Sorry I'm so long-winded.

It was a hit! barely any left. It had been in the oven about 40 minutes and all the liquid was gone, so I fluffed it, tasted to check for doneness, pretty close...took it out, covered it foil and let it set on top of the stove. I served it with a Refried Bean Bake, grilled ribeyes and chicken thighs, Baked Potato Salad and Asian inspired red slaw.

Judy: I do like the others, since I had the Pizzeria years ago. I put the dough in an oiled pan and stretch it every few minutes, resting in between, until the dough reaches the edge and up for a crust. Then it is docked ( pinched with a fork )let it rise a few minutes and baked in a 400 deg. oven, until it is firm ( small tan spots will show) Take it out onto a rack to cool fast and into a plastic bag to freeze. If you happen to overbake it slightly, it can be dampened, when it is baked for Pizza. I always spoon on the sauce and bake it for a few minutes, before I add the toppings and cheese. That way the cheese doesn't burn. I'll sacrifice myself and test one for you. LOU

Thank you all.

It was a real mess! The dough was SO soft, not only was there no question of trying to cook it right on the racks, I didn't know what to do. I had thought of using a cookie sheet as a peel to get it onto the rack, and then when I saw how soft the dough was, I thought about just cooking them pizzas on the pans -- but it was too mushy even to do that. The Fiddler and the spotlight guy came to my rescue and helped me scoop the soggy stuff onto the cookie sheets -- not even close to round anymore, but we didn't care. We also baked some of them right on the cardboard circles they were sent on. We couldn't bake them quite enough, and they stuck to everything, but it was fine in the end, because I knew ...

That's kind of the way the pizzas from Papa Murphy's come. They are on very thin coated cardboard "pans" that you're supposed to bake the pizzas on. They are quite floppy, but taste pretty good for store bought pizza. They have you bake at 425 degrees.
