Heavy Cream - out of date

Hello all,

I have used out of date heavy cream in corn bread and in pancakes in place of buttermilk. I always smell to determine if it has gone rancid before using. I wonder if anyone has another use for out of date heavy cream. Should I just whip it until it turns to butter??

I make scones, very very easy. For 1 cup of cream use about 3 cups of self rising flour, or 3 cups of all purpose flour with 3 teaspoons of baking powder mixed in. Add 1 cup of water, soda water or seven up to the cream and mix into the flour until you have a soft not too sticky dough. Handle as little as possible. Pat out to about 1" thick on a floured board and cut into circles, place the circles close to each other on a non-greased but floured baking tray and bake in a hot (400F) oven until well risen and cooked through, about 15 minutes. Serve split with butter or jam and whipped cream. You can also add a couple of tablespoons of sugar to the flour and a good heaping hand full of white raisins to the dough for fruit scones.

I don't go by the date. If it smells ok, I use it for anything. The date only means "best quality if used by" not "it's not good anymore." I have used it a month past its date with no ill effects.
however, some people are uncomfortable with that. So, it would be good to make biscuits.

If I need something creamy for a sauce....I sometimes put skim milk (which always is in my refrig) with some cream cheese....another thing that is always in my refrigerator. It's amazing how little cream cheese it takes to make skim milk "cream-like'...or perhaps sour cream like. And I never use the reduced fat stuff, I also think it tastes strange. When I am trying to reduce the fat in a recipe I will just use milk....and if I am looking for some thickness, I will whirr in the blender with a little cooked rice. I always have evaporated milk but that's only for certain things where that "boiled" taste is necessary...like Grandma's rice pudding and her pumpkin pie. Linda C

Things feel dated when they were done by everybody without regard to their space, just because everyone was doing them. If you love creams, always loved creams, and the house you build will look great with them, given its location, style, your concept, light it gets, etc-no, won't look dated. Colors by themselves can't be "dated". They're too independent of us:) Only our impressions of combinations of them, our perceptions etc, that are usually very personal, can make them feel dated. So, to summarize.. No:) Use whatever you love and whatever your house will like most.

These are all very good thoughts! I’ve been looking on Facebook Market and Craigslist for used vanities or floor sample sale items, and I’ll continue to do that. We’ve been by a couple of warehouses that have items from demolition, but nothing has quite worked yet. Habitat for Humanity May be a good place to look though - we haven’t been there! For removing the shower door, I didn’t think of that for a full shower. Can that be done? I figured doors were necessary, and my husband didn’t like the idea of just covering the doors with a shower curtain. Getting rid of it could be good.. I think changing out the mirror, light and paint could be the first step to take sooner than later. Complication to white is that this tile is cream colored. See this pic to see the difference... still neutral at least! I think I can move forward with navy and gold accents, right?

I only use the date as a guideline. If the cream tastes like it has turned, then I'll throw it out.

Scones are definately on the horizon -but- has anyone used out of date heavy cream for making butter?

I think the butter would taste sour. Use it for baking.

Give it a try. Just put the heavy cream in a jar, and shake until you have butter. Strain out the buttermilk, then "rinse" the butter with cold water until the water runs clear, and then work the butter with a spoon to squeeze out all the water. Butterfat doesn't go rancid right away, but keep in the fridge to be safe.

Like Sherry, I use outdated cream as long as it smells OK and tastes OK. Those dates are for quality, it doesn't mean it spoils the instant the calendar reaches that date.

If you really want to make butter from it, just pour it into a blender and turn it on high. When you see chunks of butter floating, it's ready, strain it out, rinse it well, salt it if you like, and refrigerate. Outdated won't make a difference as long as it isn't sour.

If it is "suspect", maybe just a little sour, go for the scones!
