? Expectations for Hardwood Installation

We are in the process of having hardwood floors installed by professionals. Our house is 105 years old and the demolition consisted of ripping up carpeting, tile, plywood and old thin hardwood. The subfloor is good but there is quite alot of sloping.

The installers spent days "leveling" the floor before beginning installation. Still, there are obvious differences in the height that I can feel merely by walking across the rooms. I probably would not have expected it to be even if they hadn't put such an effort into leveling the floor.

So... should I expect this to be even? Or should I accept the fact that my old house is going to be quirky?

I need advice before installation is complete if I'm going to say anything.
