Yes, It is going to be a challenge. He was checked for 60 common foods, and he has moderate intolerance to 11 and severe intolerance to 10. For the next two weeks he is supposed to eat only from his tolerant food group so he can detox his body. It is no wonder he hasnt been feeling well and getting worse for a long time now, as most of the foods on his intolerant list are foods that he consumed everyday. Some thinking it was doing his body good like salmon, apples, egg whites, tuna, broccoli, cherries, peanut butter, bananas, pork, strawberries, cheese. After 3-4 months he can re introduce one at a time foods from the moderate list and 6-12 months foods from his severe list. Some foods he can give up easily but others have been a staple in our household for years.

I find the Bob's awful...gross, nasty.. to much bean flour... I've not worked with the Kinni-Kwik but on Mennonite Girls Can Cook blog..they have a recipe that looks good, and uses the bread mix with other typical GF things to make a crust. Yes, he's a cute little guy, and an absolute terror in the pasture, LOL. He's also fuzzy and makes you just want to grab him. Fortunately, they're a lot less cute when they become 1000 pounds of bull, and start pushing everything and everyone around! I love my animals, my cows are treated just like my horses, I love 'em all. I pet them and play with them and feed them treats and they follow me around. Even when it's time for them to become beef they don't go into a trailer and spend time in a stock yard, away from their herd in a strange place. I have Dallas come to the farm to slaughter and so they are born here, spend their lives here and only leave here after their death, which is as quick and painless as I can arrange. If I had to eat commercial beef, I'd give it up too. They way they are raised and fed and treated offends me, it's a cruel industry and not a good life for those animals. So, I raise my own. It seems contra-indicative, but I raise my own beef because I DO love my animals, and I believe that everyone should remember where that meat comes from and the animals that produced it, and make their lives safe, happy and contented and their final demise as quick and painless as possible. rgreen, I like a good veggie burger too. I actually eat meat about 3 or 4 times a week, not even every day. I've even kind of lost my taste for bacon and ham, although I know that's heresy, LOL. And yes, I raise my own pigs and chickens too. Now, back to those burgers. olychick, Grandma used to tell me to mix ice chips into the meat and that they would produce steam as the ice melted and keep the meat moister, so it's not a new concept at all. As for size, a quarter pounder is a bit more even than I want, maybe 5 burgers per pound or even 6, although mine don't shrink appreciably and some fattier meat might. I don't want it really crunchy on the outside, but I do want a bit of browned "crust", and warm in the middle, not cold. Annie

When I still had girls at home, one of their favorites was Shepherd's Pie. Mine was made with leftover mashed potatoes over a filling of ground beef and vegetables. They also liked beef stew with biscuits, I made the stew in a dutch oven and just added unbaked biscuits to the top after the stew was cooked and baked just long enough to bake the biscuits. Meatloaf was a big favorite and has already been mentioned. Calzones made with homemade bread dough and stuffed with everything from pizza toppings to ham and cheese to leftover broccoli with cheese sauce. Those can also be made using frozen commercial bread dough. Macaroni and cheese was a favorite and although I sometimes made chicken and dumplings we more often had chicken over biscuits. We often had breakfast for supper, pancakes, waffles, eggs, "breakfast burritos" with scrambled eggs, cheese and salsa, English Muffins with ham and eggs and a side of fruit salad. My girls both loved rice so we'd have Spanish Rice or fried rice or chicken and rice soup, or they just ate cold rice for breakfast with milk and sugar, like breakfast cereal. Having something they could pick up and eat on the way to some school function or sporting event was handy, so sometimes we'd have sloppy joes or hamburgers, pulled pork sandwiches or cheesesteak sandwiches with the meat cooked in the crock pot. I actually used the crock pot quite a bit, preparing the food the night before then just taking the prepped food out of the refrigerator in the morning and turning the crockpot on. Pot roast, corned beef, brisket, ham, bean or split pea soup, scalloped potatoes, pork roast, even desserts can be done in the crock pot. I know how you feel, I used to just dread the "duty cooking". As a single mother with a full time job it was a chore to find something that I could make after I got out of work that didn't cost very much and that everyone would eat and I could make in half an hour. When the girls got older I made them do the weekly menus. They would sit at the kitchen table with cookbooks and make the "menu" for the next week, then I'd go shopping for ingredients. Sunday was my day to choose, the girls chose 3 days each. I got to cook something new sometimes and they couldn't complain much about meals they had chosen themselves. Good luck! Annie
