Mayonaise! This recipe is going in my "Favorite Recipes" binder! It will one of the ones that I will use again. I immediately made a sandwich using it, even though it wasn't cold yet. It was really good. I am going to some of it tomorrow for deviled eggs.

I got the recipe from Bon Appetit magazine. Here is the recipe:

1 large egg yolk

1 1/2 teaspoons fresh lemon juice

1 teaspoon white wine vinegar (I used citrus champagne vinegar)

1/4 teaspoon Dijon mustard

1/2 teaspoon salt (I will use less next time)

3/4 cup canola oil (I used canola/olive oil)

Combine the egg yolk, lemon juice, vinegar, mustard and salt. Whisk until blended and bright yellow, about 30 seconds.

Continue whisking, while adding 1/4 of the oil a few drops at a time. This should take about 4 minutes. (I made DH add the oil, while I whisked.) Gradually add the remaining 1/2 cup oil in a thin stream, while continuing to whisk constantly, until mayonaise is thick...this will take 6-8 minutes. The mayo will be lighter in color. Cover and chill. Can be made up to 2 days ahead and keep chilled.

(Remember, raw egg is not recommended for infants, the elderly, women who are pregnant and people with weakened immune systems. You can use pasteurized egg yolk instead, if you are concerned about salmonella.)
