Cathy, eggplants do well in the heat, I gave one of my neighbors an eggplant seedling a couple of years ago and is still producing.

Thanks Cathy. There is restaurant on Avenue des Champs-ÃÂlysées which mostly serves mussels in all kinds of recipes. I went there to taste the many ways mussel could be enjoyed.

Silvia, thanks. Eggplants and mussels pairing is not new. There are many recipes around.

Thanks Bellsmom. Clams, mussels, crabs all seem to come pre-seasoned. They are delicious just boiled. I microwaved the mussels. I find that a very good and quick way to cook mussels. I use the juice from the mussels and added some garlic, ginger, scallions, white wine, EVOO, chopped ü of a mid-size onion, pepper, ü Meyer lemon with the rind, shiitaki mushrooms, everything simmered and blended into a sauce. The eggplants were roasted with EVOO.

I was excited (well as excited as one gets over eggplant) that my Publix had a large selection of eggplants including the minis, which they have never had before. I am eager to roast some tonight along with multicolored mini-peppers.

Cathy, If you stuff a mini eggplant into a mini pepper, then the pepper into a stuffing tomato (yes, you can grow stuffing tomatoes), you will have a vegetarian version of Turduken, LOL!

All three Nightshade families into one. A great side dish to serve with Turducken. !
