My friend Belinda gave me this recipe......the only banana bread that I make now!

Hawaiian Banana Bread

Cook Time: 1 hour, 30 minutes
Total Time: 1 hour, 30 minutes

* 3 cups plain flour
* 2 cups sugar
* 1 tsp. baking soda
* 1 tsp. cinnamon
* 1 cup chopped nuts (walnuts, pecans or macadamia)
* 2 tsp. vanilla
* 3 eggs, beaten
* 1 1/4 cups vegetable oil
* 2 cups mashed bananas
* 1 (8 oz.) can of crushed pineapple (well drained)

In a large bowl combine flour, sugar, baking soda, and cinnamon; stir in nuts. Set aside.

Combine remaining ingredients in another mixing bowl; blend well. Pour wet ingredients into dry ingredients and stir until just moist. Pour into 2 greased and floured loaf pans. Bake at 350ð for approximately 1 hour 30 minutes. Check center of loaf with toothpick and if it comes out clean, its done. Cool 10 minutes before removing from the pan.

I'm pretty sure the recipe was from Teresa NC.I made it and think it's the best ever.I've made it several times.I believe she mentioned that she sold it at a farmer's market.

Not that recipe....less oil and only made 1 loaf so it was much frutier...as I recall.
It was a recipe that started out with 3 bananas....and the author subbed a can of pineapple for the one banana.
And if could be I am remembering from somewhere else....
As I said...it's hell to get old...but consider the alternative...as John said.

LindaC, I feel your pain. My pantry has a number of things in it that I bought for specific recipes, now I don't even remember what the recipes were or where I saw them. Hoisin sauce I bought recently, for instance..."was it a recipe that Jessy posted,... what was the thread"? It sits on my countertop waiting for the light bulb in my head to go off.

I've joined the club, too. Jude, I also bought a jar of hoisin sauce--just 2 weeks ago!--and I don't have the foggiest notion of what I planned to use it for. Probably some chicken dish--but what?

Here's an idea, though: if you regularly copy and paste "recipes to try" into a Word file, go to the appropriate folder and click on "Date modified." You can then see the most recently copied files, and maybe recognize the recipe you're looking for. In my case, however, that didn't work because I never copied/pasted the recipe.

Jude: I searched "hoisin sauce" and found two likely threads: the one about simple side veggies and the one on meatloaf--bread crumbs vs. slices. Maybe one or both of them appealed to you, too.

Here is a recipe I have for banana bread using oatmeal. Do not know where the recipe came from, my sister I think. Could not find one using both oatmeal and pineapple. Since so many of the ingredidents are listed as optional, I would think you could add a can of crushed pineapple and a bit more flour.

Oatmeal Banana Bread

1/2 stick butter, softened
2 eggs
3 or 4 very ripe bananas (very ripe is key. if they aren't, this won't taste like bananas)
2/3 cup sugar (sometimes I do half white sugar, half brown sugar)
1 1/3 cup flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1 cup oatmeal (optional)
1 teaspoon cinnamon (optional)
1 teaspoon nutmeg (optional)
1 teaspoon cloves (optional)
1 dash of ginger (optional)
1/2 cup chopped pecans or walnuts (optional)
1/2 cup chocolate chips

Preheat oven to 350*.

Combine butter, eggs, bananas and sugar in your mixer.
When combined, add the flour, salt, baking soda, baking powder, oatmeal and spices. Continue until well mixed, and add in the pecans.

Pour into a well-greased bread pan or 8 or 9 inch round cake pan. (or... a pie pan, like me, because i ran out of clean, appropriate pans)

Bake for 45 minutes, or until the center is done. (You can poke it with a toothpick to check)

Linda, my mother made a sampler years ago that said, Old Age Ain't for Sissies." It took me years to be able to understand it; now I do only too well. LOL.

Hoisin sauce, soy sauce, garlic, ginger, black pepper.
Marinate pork ribs. Broil pork ribs. While brushing w/ marinade. Until crusty.

How about this recipe....

ALL-SEASON BREAD

3 cups all-purpose flour
2 tsp. soda
1 tsp. salt
1/2 tsp. baking powder
1 1/2 tsp. cinnamon
3/4 cup finely chopped walnuts or pecans
3 eggs
2 cups sugar
3/4 cup vegetable oil
2 tsp. vanilla
1 (8 ounce) can crushed pineapple
2 cups prepared fruit or vegetable (instructions follow)

Combine flour, soda, salt, baking powder, cinnamon and nuts; set aside

Beat eggs lightly in a large mixing bowl; add sugar, oil and vanilla. Beat until creamy.

Drain pineapple, reserving juice if called for in instructions for specific fruit or vegetable.

Stir in pineapple and prepared fruit or veg.

Add dry ingred.,stirring only until dry ingred. are moistened.

Spoon batter into 2 well-greased and floured 9 x 5 x 3 inch loaf pans.

Bake at 350 degrees for 1 hour or until wooden pick inserted into center comes out clean.

Cool 10 min. before removing from pans; turn out on rack and cool completely.
Yield: 2 loaves

Apple Bread: Peel, core and shred 2 med. apples to make 2 cups total.

Banana Bread: Mash 3 bananas to make 2 cups total.

Carrot Bread: Peel and shred 2 medium carrots to make 2 cups total.
Stir in 1 tablespoon reserved pineapple juice.

Sweet Potato Bread: Peel and shred 1 medium sweet potato to make
2 cups total. Stir in 1 tablespoon reserved juice.

Zucchini Bread: Shred 2 medium zucchini to make 2 cups total.

I've used this recipe many times ...... especially for zucchini bread.

Lindac - I brought this zuke bread to a Chicago Garden Web Get-together (Blackberry Farm, Aurora, IL) back in 1999 or 2000. I think you were there too.

Oh my!! I certainly was there....but sorry to say I don't remember the zucchini bread....however I will never forget Ruth Kalamirides' baclava!
The banana bread was unmemorable...the flavor needs a bottom...can't explain it but something's missing and I think it's maybe molasses.
I used half brown and half white, butter instead of oil, 2 bananas and a can of pineapple and a teaspoon of cinnamon and half a cup of oatmeal subbed for 1/2 cup of the flour....
Maybe some grated lemon peel would help...
