Moving Dark inlay in Old Oak Floors - Maybe Replace

I am doing a 203k rehab of a row home in Baltimore, and the first floor has oak flooring with a dark inlay around the perimeter. I plan to change the layout slightly, and was wondering if its worth moving the inlay.

The floor is somewhat wavy, and installed parallel to the subfloor, and has lots of holes from old radiator pipes.

If i replaced it, would i put plywood subfloor over old subfloor, or rip that out too?
