Stretching lobster

BF and I both thought we might like lobster for a Valentine's dinner since neither of us has had it in about 30+ years. But we really can't afford (don't want to) spend a whole lot to get a lot of lobster to serve it as I love, which is steamed lobster tails with butter. But that's just out. But is there any way we could use it in a stuffing for some other type of fish? I'm wondering like lobster stuffed sole or something like that. Or maybe some type of mix of lobster, scallops and crab? Any ideas of how to make some type of dish with chopped up lobster as a flavor ingredients instead of as the main course flesh? I've had lobster Newburg and don't really like it, too rich for both our tastes. That's the other caveat, we are not into super rich foods (lots of butter, cheese and cream and such) but can adjust/lighten to our taste. We don't do pork or beef for the most part.

Ideas welcome, along with other sustainable seafood options. Thanks for the help!
